SPICY BEAN AND CORN SALSA SIDE
Our whole family loves this quick and easy side dish. I serve it with tacos, sloppy joes, or picnic meals... Great for potlucks because you serve it cold. Easily adjusted to your individual taste by using your favorite salsa. I often double this for church potlucks or company - it makes a lot to serve as a side and stretch a meal. I usually skip the onions and peppers when making it for guests. I rated this myself for ease and because it is a go-to recipe in my house.

- In a medium skillet, heat oil over medium heat. Add the garlic and sauté for 1 minute.
- Stir in the beans, salsa, brown sugar, Worcestershire sauce, mustard, cumin, and salt.
- Bring to a simmer and cook for 10 minutes.
- Remove from heat and spoon onto buns. Top with cheese and serve.

BLACK BEAN SLOPPY JOES - OAMC
I was looking to add to our freezer selection for the "Non-meat days" Here is one I found in a net search that really is tasty. Serve with sandwich fixings such as lettuce, tomatoes, pickle, mustard on a good bun! (cooking time includes cook & soak for dried beans)

- In large skillet or pan, saute onions and peppers in olive oil, and chili powder and cook until just fragrant.
- Add remaining ingredients, simmer briefly. Freeze in zippered plastic freezer bag.
- To serve, thaw overnight in refrigerator, heat through. Serve on bread or rolls.

This is a wonderful salsa!! It is full of black beans, corn, tomatoes, and onion. I can never make enough when I have a party!! Chill 24 hours before serving if you have time!! Serve with tortilla chips.
