9 ounces uncooked whole wheat fettuccine
1 tablespoon olive oil
1-3/4 cups sliced baby portobello mushrooms
1 garlic clove, minced
1 can (15 ounces) black beans, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes, undrained
1 teaspoon dried rosemary, crushed
1/2 teaspoon dried oregano
2 cups fresh baby spinach

Steps:

  • Cook fettuccine according to package directions. Meanwhile, in a large skillet, heat oil over medium-high heat. Add mushrooms; cook and stir 4-6 minutes or until tender. Add garlic; cook 1 minute longer., Stir in black beans, tomatoes, rosemary and oregano; heat through. Stir in spinach until wilted. Drain fettuccine; add to bean mixture and toss to combine.

1 (16 ounce) package whole wheat rotini pasta
1 ½ cups vegetable broth
2 ½ cups chopped fresh spinach
½ cup chopped red onion
1 clove garlic, chopped
½ teaspoon cayenne pepper
salt and pepper to taste
1 (15 ounce) can black beans, drained and rinsed
1 cup frozen chopped broccoli
1 cup diced tomatoes
2 ounces freshly grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add rotini, and cook for 8 to 10 minutes, or until al dente; drain.
  • In a large saucepan over medium heat, bring the vegetable broth to a boil. Reduce heat, and mix in spinach, onion, garlic, cayenne pepper, salt, and pepper. Stir in the black beans and broccoli. Continue to cook and stir 5 to 10 minutes.
  • Stir the tomatoes into the saucepan, and continue cooking 10 minutes, or until all vegetables are tender. Serve over the cooked pasta. Garnish with Parmesan cheese.

1 cup finely chopped green pepper
1 medium onion, chopped
2 garlic cloves, minced
1 teaspoon dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon crushed red pepper flakes
2 cups tomato sauce
1 can (15 ounces) black beans, rinsed and drained
1/2 cup shredded reduced-fat cheddar cheese

Steps:

  • Cook pasta according to package directions; drain. Meanwhile, in a large saucepan coated with cooking spray, combine the green pepper, onion, garlic, oregano, cumin and red pepper flakes. 4 ounces fusilli pasta (uncooked)
1 cup whole kernel corn (drained)
1 cup black beans (drained and rinsed)
1 cup cherry tomatoes (quartered)
1/2 cup yellow or red bell pepper (diced)
1/4 cup cilantro (roughly chopped)
1/2 avocado (diced (optional))
1/4 teaspoon red pepper flakes (optional)
1/4 cup mayonnaise
1 tablespoon lime juice
1/2 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon salt

Steps:

  • Cook pasta according to package instructions. Drain; set aside to cool. Once cooled, add the pasta to a large bowl. Add the corn, blackbeans, tomatoes, bell pepper and cilantro. Stir together.
  • In a small bowl, whisk together mayonnaise, lime juice, chili powder, cumin and salt.
  • Add the dressing to the pasta salad. Stir to combine.
  • Refrigerate covered until ready to serve. Add the avocado and red pepper flakes (if desired) just before serving.

2 tablespoons olive oil
1 yellow onion (diced)
1 red pepper (diced)
1 green pepper (diced)
1 yellow pepper (diced)
1 orange pepper (diced)
4 cloves garlic (minced)
2 (1 oz) packets taco seasoning (divided)
1 (16 oz) box rotini (uncooked)
1 (32 oz) carton vegetable broth
2 cups unsweetened almond milk
2 (14.5 oz) cans black beans (drained and rinsed)
1 (15 oz) can corn (drained)
1 (10 oz) can rotel (drained)
2 tablespoons lime juice (plus more to taste)
Salt (to taste (I used 1 1/2 teaspoons))
Cheese, sour cream, salsa, tortilla chips, shredded lettuce, etc. ( for serving, if desired)

Steps:

  • Heat a large stockpot over medium heat.
  • Once hot, add in oil, onion, bell peppers, garlic, and 1 packet of taco seasoning.
  • Cook, stirring often, until the veggies are crisp-tender, about 10 minutes.
  • Stir in pasta, broth, and milk.
  • Bring mixture to a simmer, and simmer for 7-10 minutes, or until pasta is cooked to your liking. Stir OFTEN to prevent sticking.
  • Turn off the heat then stir in the remaining packet of taco seasoning, black beans, corn, rotel, lime juice, and salt.
  • Taste and re-season, if necessary, then serve with optional toppings and enjoy!

3/4 lb elbow macaroni, whole wheat if possible
1/4 cup Private Reserve Greek Extra Virgin Olive Oil
1 small red onion, finely chopped
6 to 8 garlic cloves, minced
1/2 tsp dried oregano
1/2 tsp Aleppo pepper
1/4 tsp crushed red pepper, more if you like spicy
1 lb frozen broccoli florets, thawed (see notes for using fresh broccoli)
1 can Cannellini beans, drained and rinsed
salt and pepper
2 cups chopped fresh parsley leaves
1 1/2 tsp Za'atar spice blend, more for later
1/3 cup grated Parmesan cheese
1/3 cup toasted pine nuts

Steps:

  • Cook pasta in salted boiling water according to package until al dante. I like to add a little olive oil to the cooking water. Before you drain pasta, reserve 1 cup of the pasta cooking water for later.
  • In a large pot, heat the extra virgin olive oil over medium-high heat until shimmering but not smoking. Add chopped onions and cook for 2 minutes, stirring regularly, until translucent. Add garlic, oregano, Aleppo pepper, and crushed pepper flakes. Stir till fragrant.
  • Now add thawed broccoli florets. Cook 4 minutes, tossing regularly. Add cannellini beans. And season with salt and pepper. Cook another 3 minutes or so, tossing regularly.
  • Add the cooked pasta and about 1/3 cup of the reserved cooking water into the pot. Add fresh parsley, za'atar spice, and Parmesan cheese. Toss to combine. If you need to, add a little bit more of the pasta cooking water to help combine everything. Taste and adjust seasoning. Cook until everything is very well warmed through.
  • Transfer to serving bowls. Sprinkle toasted pine nuts, more za'atar spice, and more crushed red pepper flakes on top. Enjoy!

This is from America's Test Kitchen's book all about Pasta. I used Pepper Jack cheese instead of the Monterrey Jack and it was yummy. The meal gets a little heat from the Chipotle pepper so if you're not a fan of heat, use the cheese called for. Chipotle peppers are sold in a can in the Mexican aisle of most grocery stores. You only need one pepper/chile for this recipe so line a cookie sheet with waxed paper and spread out the rest of the peppers on it and freeze them. When they're frozen, put them in a ziploc bag and you'll have a chipotle pepper when you need it.

1 pound (455 g) black beans, cleaned and rinsed
4 cloves garlic, peeled (12 g)
½ of a small white onion, cut in half (50 g), plus ¼ cup chopped white onion (30 g)
Sea salt
1 chile de arból, stem removed
2 dried avocado leaves
2 tablespoons vegetable oil

Steps:

  • In a large stockpot, combine the beans, garlic, and onion quarters. Cover the beans with water and bring to a boil.
  • Cover the pot, lower the heat to a simmer, and cook until the beans are tender. This can take anywhere from 1 to 2 hours, depending on how old the beans are. If the liquid is evaporating too fast and the beans start to show, bring another cup or two of water to a boil and add it to the beans. Once the beans are cooked, salt to taste, stir, and continue cooking for 10 minutes.
  • Once the beans are tender to the bite, remove and discard the garlic cloves and transfer the beans to a blender. Add the chile de arból and avocado leaves and puree until smooth.
  • Heat the oil in a large sauté pan over medium heat. Once hot, add the chopped onion and cook until it starts to soften. Add the black bean puree and fry it for 15 minutes, stirring until the bean mixture has thickened.

Then combine the water, pasta, tomatoes (optional), drained black beans, and salt (optional) in the slow cooker and cook on high for about 2 hours, or until pasta is al dente. If needed, cook longer or until pasta is al dente, checking every 20 minutes after those 2 hours. When pasta has finished cooking, stir in the cheese until melted. Garnish with herbs and serve hot.
  • PRESSURE COOKERTurn on the sauté function and let heat enough to brown the beef (about 5-6 minutes) or until no longer pink. Stir in the chili seasoning and let cook for about 1 minute.   • Transform Beans Into Flour. The first step to making all of those ingredients into your own bean pasta is to choose your desired bean and make flour from it using a grainmill or a good blender.
  • Combine Ingredients and Knead. Take these ingredients, combine them, and knead in a mixer or food processor. You can also knead by hand for five minutes if you wish.
  • Let Mixture Rest. Right after you knead the mixture, you’ll want to cover it right away with a plastic bag to prevent it from drying out. Then, let it rest for 10 to 15 minutes and you will have a ready-to-use dough.
  • Knead Dough Using a Pasta Machine. Divide the dough into balls and put the dough lumps through the pasta machine. Run it through five, seven, ten, or however many times it takes for the dough to become softer.
  • Let Noodles Dry and Then Boil. Let your noodles dry by hanging them somewhere so they don’t stick together. Then, boil the pasta and you’ll have hot, homemade bean noodles!
