- Get a large pan add 3 cups of water, let it come to a boil then pour yellow rice & let it cook for 20mins. While that's cooking, get a large non stick skillet, pour 2 tablespoons of olive oil (medium heat) place the shrimps, ¼ cup of chopped red bell peppers, ¼ cup of bell peppers/onions stir & saute' for 3-5mins.
- Turn stove top off & pour ½ cup of Monterrey Jack Cheese on top & let it melt. After rice is finished cooking rinse it off a couple times. Get another pan & heat one can of Bush's Black Bean Fiesta for 3-5mins.
- Then get a serving dish, tear off foil & put it around the dish. First spread your rice around the bottom of the dish & layer shrimps, red bell peppers, bell pepper/onions on top of it. (Make sure you save the middle space so you can pour the black bean fiesta in it.) Sprinkle a little Monterrey Jack Cheese on top of black bean fiesta. I also cooked 2slices of maple bacon pat grease out & crumbled on top of black bean fiesta as well.

SPICY BLACK BEANS AND YELLOW RICE

- For the beans:
- In a large pot, soak beans overnight covered in water by 2 inches. Drain and set aside.
- In the same pot, heat the olive oil. Add the onion, jalapeno pepper, garlic, and bay leaf and cook until the vegetables begin to soften, about 5 minutes. Add the beans and cover with water by about 1-inch. Bring to a boil, reduce the heat, cover, and simmer for 1 to 1 1/2 hours, or until the beans are tender. Remove the bay leaf and discard. Taste the beans and season with salt and pepper.
- For the rice:
- Put all the ingredients into a heavy-bottomed pot, stir well, and bring to a boil over medium-high heat. Reduce the heat to a simmer, cover, and cook over low heat until the rice has absorbed the water, about 15 to 20 minutes. Remove from the heat and let sit, covered, for 5 minutes. Discard the garlic and bay leaf, fluff with a fork, and serve.
TEX-MEX BLACK BEANS & SAFFRON RICE
After tasting this at a neighbor's Super Bowl party one year, I quickly scribbled down the recipe. This is a fairly simple dish to throw together and is a great accompaniment to Tex-Mex style dishes, although this isn't pretending to be any sort of authentic dish from any one particular region. I have made it many times over the years and this is a great dish for a potluck. Mahatma saffron rice comes in shiny yellow foil tubes in the rice section of your grocery store. I usually follow the microwave instructions for preparing the rice. I serve this as a side dish, but I think a Vegetarian who eats dairy would be able to enjoy this as a meal as well.

- Prepare the saffron rice according to the package directions,using the amount of oil/butter and water as indicated on the package (I usually use olive oil).
- While the rice is cooking, rinse& drain the black beans in a mesh strainer to remove all the sludgey canning liquid and dump them into a small saucepan.
- Pour the entire contents of the diced tomatoes w/chili peppers,liquid and all,into the same pan with the beans and stir to combine.
- Cover the saucepan with lid,turn on the heat to low, and let bean mixture heat while the rice cooks, stirring occasionally- it should be ready when the rice is done.
- When the rice is fully cooked, pour it into a deep, medium sized casserole dish.
- Pour bean mixture into the center of the rice, leaving a border of the yellow rice peeking out arounds the sides.
- Place the sour cream in the center of the bean mixture in a dollop as a garnish (you can use more if you like).
- Sprinkle shredded Cheddar cheese over the top of the sour cream and over the beans.
- Sprinkle with cilantro leaves (optional) if you like and serve immediately.
- NOTE: If you don't have access to canned diced tomatoes with chilis, then you can substitute an equal amount of chunky salsa, if you like.
- You may wish to provide a bowl of additional sour cream as well as a bowl of more cheese for guests to add extra to each serving, but it isn't necessary.
MEXICAN YELLOW RICE AND BLACK BEANS
This recipe is adapted from American Diabetes Association cookbook--Diabetes & Heart Healthy Cookbook. It is a delicious blending of southwestern flavors that is so simple to prepare.

- Bring the vegetable or chicken stock to a boil; stir in the turmeric and brown rice.
- Bring rice to boiling, stir once, lower heat and cook 40 to 45 minutes or until done and liquid has been absorbed, adding more liquid if needed.
- Heat a medium saucepan over medium-high heat, add 1 teaspoon of olive oil, warming slightly.
- To the warmed pan, add the onion, jalapeno, bell peppers, and red pepper flakes; cook for 4 minutes or until beginning to brown on the edges, remove from heat.
- Stir the drained beans and cumin into the mixture adding salt to taste.
- Let stand covered for 5 minutes; stir in the remaining 2 teaspoons of olive oil.
- To serve, divide the rice into 4 equal portions and place on individual plates.
- Top the rice with bean mixture, sprinkle with cheese and snipped cilantro.
- Serve lime wedges on the side to squeeze over all.

- Cook the rice (stove top or rice maker), add the tumeric and salt to the cooking water, the rice will turn a beautiful yellow color. When cooked, let it cool off, can be made ahead.
- Mix the marinade for the tilapia filets: oil, citrus juices and a dash of mexican oregano, marinate fish filets for up to one hour, not more or the fish will "cook" in the juice.
- Lay out 4 12 X 12 squares of heavy duty reynolds wrap, put 3-4 slices of lemons on one side of each and top with the fish filets. Season with salt and lemon pepper and spoon the marinade over. Fold the second half over and crimp the sides tightly, tuck the ends under.
- Lay the packages on a baking sheet and bake @ 375 for 12 - 15 minutes. Let the package rest for a few minutes, then open carefully, watch out for steam escaping.
- In the meantime, heat a tbsp of oil in a heavy skillet and saute the onions until golden. Add the peppers, corn and jalapeno and cook until soft, Add the rice and black beans and heat through. Season with salt and cumin.
- To serve, spoon a portion of rice on each plate, lay the fish on top, spoon the accumulated sauce over the fish and rice, garnish with the lemon slices and sprinkle some chopped cilantro over. Enjoy!

- Mix beans, tomato sauce, Rotel, drained corn and taco seasoning in crock pot. Place 3 boneless chicken breasts (uncooked) on top. Cook on low (6-7 hours) or high (3-4 hours). Take chicken breasts out of stew and shred chicken. Place shredded chicken back into stew and allow to soak in the stew for 30 mins. Serve with sour cream & shredded cheese over white rice or mix with rice and use as a filling for burritos.

- In a soup pot, heat 2 tablespoons olive oil and sauté 2 garlic cloves and the jalapeño pepper for about 5 minutes on low heat.
- Add the beans, chili powder, cumin, 1/2 cup stock and cook, uncovered for approximately 25-30 minutes, increasing heat to low-medium. Add the bell pepper last 5 minutes of cooking. Season to taste with salt.
- In the meantime, heat the remaining tablespoon of olive oil in a sauté pan and sauté the 2 garlic cloves on low heat for about 2 minutes. Add the remaining 2 cups of stock, bring to a boil. Stir in the rice, reduce heat and cook 17 minutes.
- Once rice is cooked, stir in the spices. Season to taste with salt.
- Arrange the black beans on one side of a serving platter. Arrange the rice on the other half.
