Black Bean Mango Salsa image

This delicious salsa adds a new twist to soft tacos and burritos! I got the recipe last year, and it has quickly become a staple in our house! We eat it in burritos with shrimp or chicken, sour cream, and spanish rice and the rest of the regular fixin's. Also surprisingly good on salmon! If you want to give it some kick, chop up a jalapeno pepper and throw it in there!

1 (15 ounce) can black beans, rinsed and drained
1 mango, peeled and diced
1 cup seeded and chopped tomato
1/2 cup chopped red onion
1/4 cup chopped fresh cilantro
1 clove garlic, minced
1 lemon, juice of
1 tablespoon balsamic vinegar

Steps:

  • Combine all of the above ingredients and chill in fridge for 1 hour.
  • Best if served the same day.

2 (15 ounce) cans black beans, rinsed and drained
3/4 cup finely chopped fresh cilantro, divided
3/4 shredded monterey jack cheese
1/4 cup panko breadcrumbs
2 teaspoons ground cumin
1 teaspoon dried oregano
1/2 teaspoon sea salt
1/2 medium jalapeno pepper, finely chopped
2 large egg whites
cooking spray
1 1/4 cups chopped peeled mangoes (about 1 medium)
3 tablespoons chopped shallots
1 1/2 tablespoons fresh lime juice
1 avocado, peeled and chopped
1 garlic clove, minced
6 (2 ounce) whole wheat hamburger buns, lightly toasted
6 green leaf lettuce leaves

Steps:

  • Preheat oven to 350°.
  • Place black beans in a medium bowl; mash with a fork. Stir in 1/2 cup finely chopped cilantro and the next 7 ingredients (through egg whites). Shape bean mixture into 6 (1/2-inch-thick) patties. Arrange patties on a baking sheet coated with cooking spray. Bake at 350° for 20 minutes, carefully turning once.
  • Combine remaining 1/4 cup cilantro, mango, and the next 4 ingredients (through minced garlic) in a medium bowl. Place a patty on bottom half of each hamburger bun; top each with 1 lettuce leaf, 1/3 cup salsa, and top half of bun.

Number Of Ingredients 22

3 oz canned or cooked black beans (drained and rinsed)
1 oz cashews, walnuts, or almond meal
4 oz bell peppers and onions (chopped)
1/2 of a jalapeño pepper (seeds discarded (optional))
1/2 tsp cumin
1/2 tsp smoked paprika
1/2 tsp chili powder
1/2 tsp garlic powder
2 garlic cloves
A dash of salt and pepper
2 oz avocado
1/2 of a lime (juiced (or more to taste))
1 spoonful of your favorite salsa
Half of a clove of garlic (minced)
A big pinch of salt
1 tbsp chopped fresh cilantro (or more to taste)
6 oz mango and/or pineapple (diced)
4 oz red peppers and red onion (for mango salsa, diced)
1/2 of a jalapeño pepper (seeds discarded (optional))
1/2 of a lime (juiced)
Pinch of salt
Handful of chopped cilantro

Steps:

  • In a food processor, process the cashews until they are a coarse nut meal.
  • Add the coarsely chopped onion, garlic, and red pepper and pulse again.
  • Add the drained beans and spices and process until the mixture is combined, but still fairly chunky.
  • Form into desired sized patties and fry them in a little oil in a nonstick skillet over medium-low heat. Let them cook for a while before trying to flip them, at least 10 minutes. Alternatively, to make this meal oil free, bake them at 350°F on a baking sheet lined with parchment paper for 20 minutes or so, or until cooked through and browned to your liking.
  • Serve with the mango salsa, guac, and extra cilantro.
  • While the burgers are cooking, mash the guac ingredients together in a bowl with a fork.
  • Toss the mango salsa ingredients together.

1 can (15 ounces) black beans, rinsed and drained
2/3 cup dry bread crumbs
1 small tomato, seeded and finely chopped
1 jalapeno pepper, seeded and finely chopped
1 large egg
1 teaspoon minced fresh cilantro
1 garlic clove, minced
1 tablespoon olive oil
4 whole wheat hamburger buns, split
Optional: Reduced-fat sour cream and guacamole

Steps:

  • Place beans in a food processor; cover and process until blended. Transfer to a large bowl. Add the bread crumbs, tomato, jalapeno, egg, cilantro and garlic. Mix until combined. Shape into 4 patties., In a large nonstick skillet, cook patties in oil over medium heat until lightly browned, 4-6 minutes on each side. Serve on buns. If desired, top with sour cream and guacamole.

  • 1. In a large nonstick skillet, heat 1 tablespoon of the olive oil over medium heat. When it shimmers, add the onion and cook for about 20 minutes, until tender and slightly caramelized. Transfer the onion to a large bowl; set the skillet aside (no need to wash it).
  • 2. Add the beans, sweet potato, breadcrumbs, sriracha, salt and brown rice to the bowl with the onion. Using a large spoon or your hands, mix to combine. Using your hands, form the bean mixture into patties to match the size of your buns.
  • 3. In the same skillet in which you cooked the onion, heat the remaining tablespoon of oil over medium-high heat. When it shimmers, working in batches, add the patties and cook for about 3 minutes on each side, until lightly browned and crisp. Add more oil between batches as needed. Transfer the patties to paper towels to drain.
