BLACK BEAN MANGO SALSA
This delicious salsa adds a new twist to soft tacos and burritos! I got the recipe last year, and it has quickly become a staple in our house! We eat it in burritos with shrimp or chicken, sour cream, and spanish rice and the rest of the regular fixin's. Also surprisingly good on salmon! If you want to give it some kick, chop up a jalapeno pepper and throw it in there!

Steps:
- Preheat oven to 350°.
- Place black beans in a medium bowl; mash with a fork. Stir in 1/2 cup finely chopped cilantro and the next 7 ingredients (through egg whites). Shape bean mixture into 6 (1/2-inch-thick) patties. Arrange patties on a baking sheet coated with cooking spray. Bake at 350° for 20 minutes, carefully turning once.
- Combine remaining 1/4 cup cilantro, mango, and the next 4 ingredients (through minced garlic) in a medium bowl. Place a patty on bottom half of each hamburger bun; top each with 1 lettuce leaf, 1/3 cup salsa, and top half of bun.

BLACK BEAN BURGERS W/ MANGO SALSA & GUACAMOLE

Steps:
- In a food processor, process the cashews until they are a coarse nut meal.
- Add the coarsely chopped onion, garlic, and red pepper and pulse again.
- Add the drained beans and spices and process until the mixture is combined, but still fairly chunky.
- Form into desired sized patties and fry them in a little oil in a nonstick skillet over medium-low heat. Let them cook for a while before trying to flip them, at least 10 minutes. Alternatively, to make this meal oil free, bake them at 350°F on a baking sheet lined with parchment paper for 20 minutes or so, or until cooked through and browned to your liking.
- Serve with the mango salsa, guac, and extra cilantro.
- While the burgers are cooking, mash the guac ingredients together in a bowl with a fork.
- Toss the mango salsa ingredients together.

- 1. In a large nonstick skillet, heat 1 tablespoon of the olive oil over medium heat. When it shimmers, add the onion and cook for about 20 minutes, until tender and slightly caramelized. Transfer the onion to a large bowl; set the skillet aside (no need to wash it).
- 2. Add the beans, sweet potato, breadcrumbs, sriracha, salt and brown rice to the bowl with the onion. Using a large spoon or your hands, mix to combine. Using your hands, form the bean mixture into patties to match the size of your buns.
- 3. In the same skillet in which you cooked the onion, heat the remaining tablespoon of oil over medium-high heat.
