BLACK BEANS WITH BACON



Black Beans with Bacon image

The Brazilian answer to baked beans!!! It is delicious when served as a sidedish with meat, but you can also make it a main dish and hand some rice with it!

Number Of Ingredients 10

1 (8 ounce) package dry black beans
2 ½ quarts water
3 tablespoons olive oil
3 cloves garlic, peeled and minced
1 large onion, chopped
1 tomato, cubed
1 carrot, cubed
½ pound bacon strips, diced
1 tablespoon chopped fresh parsley
salt and pepper to taste

Steps:

  • Place beans in a pressure cooker with enough water to cover, and soak 12 hours, or overnight.
  • Add 2 1/2 quarts water to the beans, or enough to fill pressure cooker about 2/3 full. Cover, and cook 30 minutes at 10 pounds pressure. Remove from heat, and set aside.
  • Heat the oil in a medium saucepan over medium heat, and saute the garlic and onion until tender. Stir in the tomato and carrot. Cook about 5 minutes, and mix in the bacon. Cook and stir until bacon is crisp and evenly browned.
  • Mix the vegetable and bacon mixture into the pressure cooker with the black beans. Cover, and continue cooking approximately 10 minutes at 10 pounds pressure. Garnish with parsley, and season with salt and pepper to serve.

1 cup full grated sharp cheddar cheese, to taste
8 ounces sour cream
1/2 packet taco seasoning mix

Steps:

  • Heat all ingredients together over medium heat till cheese is melted.
  • Serve warm with Frito corn chips for dipping.
  • YUM!

1 cup fresh cilantro leaves, divided
1/2 cup KRAFT Zesty Italian Dressing
1 canned chipotle chile pepper in adobo sauce
3 cloves garlic
2 cans (15 oz. each) black beans, drained
4 slices cooked OSCAR MAYER Bacon, crumbled

Steps:

  • Reserve 2 Tbsp. cilantro. Process remaining cilantro in food processor with dressing, chipotle pepper and garlic until blended. Add beans; process until well blended.
  • Spread onto bottom of pie plate; top with bacon.
  • Chop reserved cilantro; sprinkle over dip.

1 tablespoon extra-virgin olive oil, 1 turn of the pan
3 slices bacon, chopped
1 onion, finely chopped
2 cloves garlic, chopped
1 jalapeno, seeded and chopped
2 cans black beans, drained
Salt and pepper
1 tablespoon ground cumin
1 to 2 teaspoons hot sauce
2 to 3 tablespoons chopped cilantro leaves or scallions, optional garnish
Sour cream, optional garnish

Steps:

  • Heat a medium skillet over medium high heat. Add extra-virgin olive oil and bacon. Render fat 2 minutes then add onion and garlic, cook 5 minutes. Add 1 can of beans to the pan and season them with salt, pepper and cumin then smash them with a potato masher, combining them with bacon and onions. When they are combined, add remaining can of beans and combine with smashed beans. Add hot sauce to your taste and serve. Chopped cilantro or scallions and sour cream are optional garnishes to this smash.

2 cloves garlic, minced
1/4 cup onion, chopped
1/2 lb bacon, chopped
2 (16 ounce) cans black beans, drained with 1/2 cup juice reserved
1 tablespoon vinegar
1 can white corn, drained
1/2 lb jalapeno jack cheese, shredded

Steps:

  • Preheat oven to 325 degrees.
  • Saute together the garlic, onions and bacon until cooked.
  • Lightly mash drained beans and add 1 (or 2) tbsp vinegar (which I am told"degasses" the beans).
  • Add back 1/2 cup of black bean juice.
  • Mix in bacon mixture.
  • Spread in pie dish.
  • Spread corn over the top of the bean mixture.
  • Top that with shredded Jalapeno Jack cheese.
  • Bake for 15 minutes or until bubbly.

4 strips bacon, cooked and crumbled
1 teaspoon Tabasco sauce
1 tablespoon Worcestershire sauce
1/2 cup onion
2 cloves garlic, smashed
1/4 sour cream
1 tablespoon sugar

Steps:

  • Blend beans in a blender until creamy.
  • Saute onion and garlic in bacon fat until brown.
  • Add all ingredients except bacon and sour cream.
  • Cook over medium heat until boiling, stir occasionally to avoid sticking.
  • Remove from heat at least 10 minutes before serving to allow thickening.
  • Top with sour cream and bacon.
