1 tablespoon extra-virgin olive oil
1 medium onion, chopped
2 cloves garlic, minced
3 (4 ounce) links Mexican chorizo sausage, sliced
1 (15 ounce) can black beans, drained
1 (14.5 ounce) can diced tomatoes with oregano and basil
1 (14 ounce) can whole kernel corn, drained
1 (6 ounce) can tomato paste
1 medium bell pepper, chopped
1 pinch chipotle chile powder, or to taste

Steps:

  • Heat oil in a large pot over medium-high heat. Add onion and garlic and saute until translucent, about 5 minutes.
  • Meanwhile, saute chorizo in a large skillet over medium-high heat until browned on all sides, about 5 minutes. Transfer chorizo to the pot with the onions. Add black beans, diced tomatoes, corn, tomato paste, bell pepper, and chile powder; stir to combine and bring to a simmer.
  • Transfer to a slow cooker and cook on Low for 6 hours or High for 3 hours.

This Mexican rice and beans recipe is loaded with spicy chorizo, black beans, and tomatoes, huge on flavor, great as a side dish or main.

2 tablespoons olive oil
1 medium yellow onion (chopped)
2 jalapeno peppers (chopped - Or MORE as desired)
8 ounces Mexican chorizo
4 cloves garlic (chopped)
1-1/2 cups long grain rice
12 ounces diced tomatoes
12 ounces black beans (canned)
2 cups chicken broth ( + more as needed)
½ cup frozen corn (or fresh corn if you can get it!)
1-2 tablespoons chili powder (I used a combination of ancho powder and cayenne powder)
½ teaspoon cumin
1 teaspoon Mexican oregano
Salt and pepper to taste
1-2 tablespoons favorite hot sauce (+ more for serving)
Cilantro and crumbly white cheese for serving

Steps:

  • Heat a large pan to medium heat and add olive oil.
  • Add onion and jalapeno peppers and cook about 5 minutes to soften.
  • Add the chorizo and cook about 5 minutes, stirring, until it is cooked through.
  • Add garlic and cook another minute, until you can smell the yummy garlic.
  • Add the rice and stir. Cook for a couple minutes, stirring, to very lightly brown the rice.
  • Add the black beans, tomato sauce and broth. Stir.
  • Add the corn, chili powder, cumin, oregano, salt and pepper, and hot sauce if using. Stir and bring to a quick boil. NOTE: Feel free to add other seasonings that you LOVE. Flavor it up!
  • Reduce the heat and simmer for about 30 minutes, or until the rice has absorbed all of the liquid and is softened to your liking. If it needs more cooking, add a bit more broth and keep it simmering until you LOVE it.
  • Remove from heat, cool slightly, and fluff with a fork. Top with cilantro for serving. Crumbled white cheese is great, too!

Beans:
1 1/2 cups dried black beans (about 10 ounces)
2 peeled onions; 1 halved, 1 chopped (about 2 cups)
1 bay leaf
1 teaspoon dried oregano (preferably Mexican)
2 tablespoons olive oil
2 links fresh chorizo sausage (6 to 7 ounces casings removed)
2 tablespoons finely chopped fresh cilantro plus additional for garnish
2 garlic cloves, minced
2 teaspoons minced seeded jalape&entilde;o chile
1/2 teaspoon ground cumin
Chipotle cream:
1/2 cup sour cream
1 1/4 teaspoons chipotle-flavored hot pepper sauce
1 teaspoon fresh lime juice

Steps:

  • For beans:
  • Place beans in large saucepan. Add enough water to cover by 2 inches. Let beans soak overnight.
  • Drain beans. Return to saucepan. Add onion halves, bay leaf, and oregano. Add enough cold water to cover by 2 inches. Bring to boil, reduce heat to low, and simmer uncovered until beans are very tender, stirring occasionally, 1 1/2 to 2 hours (depending on age of beans). Drain beans, reserving cooking liquid. Discard onion halves and bay leaf.
  • Heat oil in heavy large deep nonstick skillet over medium heat. Add chorizo and cook until brown, breaking up with back of spoon, 4 to 5 minutes. Using slotted spoon, transfer chorizo to small bowl. Add chopped onion to drippings in skillet. Cook until soft and golden brown, stirring often, about 10 minutes. Add 2 tablespoons cilantro, garlic, jalapeño, and cumin; stir 1 minute. Add beans, 3/4 cup reserved cooking liquid, and chorizo to onion mixture. Stir to distribute evenly. Simmer over medium-low heat until heated through and flavors are blended, 3 to 4 minutes. Season to taste with salt and pepper.DO AHEAD: Can be made 1 day ahead. Chill uncovered until cool, then cover and keep chilled. Rewarm over medium heat before serving.
  • For chipotle cream:
  • Whisk all ingredients in small bowl to blend. Season to taste with salt. DO AHEAD: Can be made 1 day ahead. Cover and chill. Rewhisk before serving.
  • Transfer beans to large bowl. Garnish with chipotle cream and chopped cilantro.

This chili-like stew relies on spicy, fresh green chorizo for its bright, zesty flavor. It only takes half an hour to make your own green chorizo, but you can substitute any kind of fresh (uncured) store-bought sausage, as long as it's got a kick. This was my first introduction to Chorizo sausage. When I make home-made chili, this is the recipe I use. Adapted from a recipe I got from some magazine years ago. Usually buy my chorizo, but have also made my own. I like that you don't have to be so exact when chopping the ingredients, since it's going to be pureed anyway.

1/2 lb chorizo sausage
1 medium onion, chopped
1 bell pepper, chopped
3 garlic cloves, minced
2 -3 chipotle chiles in adobo, chopped

1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon ground pepper
1 (10 ounce) can rotel, undrained
2 (15 ounce) cans black beans (1 drained, 1 undrained)
2 cups chicken broth
1/2 cup frozen corn

Steps:

  • In large skillet, cook chorizo sausage over medium heat until cooked through (5-10 minutes). Remove from the pan.
  • Add vegetable oil and cook peppers & onions until soft. (About 8-10 minutes).
  • Add garlic, chipotle peppers & spices. Stir in rotel (undrained), broth & 1 can black beans (undrained).
  • Increase heat to medium-high and bring to a boil.
  • Reduce to simmer and cook 10 minutes.
  • Puree in blender or food processor in batches until you have blended it all.
  • Return to the skillet. Add the cooked chorizo, the drained can of black beans and the frozen corn.
  • Cook over medium heat until reaches desired consistency. (About 5-10 minutes).

1 pound ground beef
1 teaspoon cumin
1 teaspoon coarse sea salt

1 large onion, (diced)
2 large red bell pepper, (seeded and diced)

2 15-ounce cans diced tomatoes
1 6-ounce can tomato paste

Steps:

  • In a large bowl, add chorizo, ground beef, cumin, salt, oregano and black pepper. Mix together until well combined.
  • In a large pot or Dutch oven (5 quarts or larger) over medium-high heat, add meat and brown until cooked through, about 8-10 minutes. Drain off grease, transfer meat to a large bowl and set aside.
  • In the same pot, add the cooking oil, onions and peppers. Reduce heat to medium-low and cook for 15 minutes, stirring occasionally, until the veggies are soft and the onions have begun to caramelize.
  • Add garlic and red pepper flakes. Cook for 1 to 2 minutes, until garlic is fragrant.

1/2 pound fresh chorizo sausage
1 medium sweet or yellow onion, (chopped)
1/2 red bell pepper, (chopped)

1/2 cup Mexican pale lager
3/4 teaspoon salt
1/2 teaspoon black pepper

  • In a medium nonstick or cast iron pan, cook bacon until crispy. Remove bacon and set aside.
  • Add chorizo to bacon grease in the pan. Cook until partially browned, breaking apart with a wooden spoon.

1 large onion, chopped
2 poblano peppers, finely chopped

3 large sweet potatoes, peeled and cut into 1/2-inch cubes
4 cans (14-1/2 ounces each) fire-roasted diced tomatoes, undrained

My absolute favorite. Every time I serve this I get requests for the recipe. It is spicy, but you can easily adjust the seasoning to your liking. The chorizo adds a nice warm spicy flavor and creamy beans are the perfect mix. It makes a big pot, and has quite a few ingredients, but it is well worth it and it really isn't very hard. Now, I like to simmer it a good hour before serving, so I like to make this when I have a little time, and it is one of those dishes that is even better the next day. Serve this like any chili ... with a side of corn bread and topped with your favorites; avocado, salsa, black olives, sour cream and cheese are my favorites.

4 chorizo sausage links, casing removed and sauteed (Mexican is the soft chorizo, whereas Spanish chorizo is the hard cured chorizo, you want to use Mexi)
3 (15 ounce) cans black beans (2 drained and rinsed, 1 drained and not rinsed)
1 (15 ounce) can cannellini beans (drained and not rinsed)
1.5 (22 ounce) cans diced tomatoes, undrained
1 (15 ounce) can crushed tomatoes
1 cup corn, thawed (frozen works great, but canned is just fine, I love white corn personally, but not necessary)
1 (15 ounce) can chicken broth
1 large sweet onion, chopped (if you like less onion, use a medium onion)
1 red bell pepper, diced
1 green pepper, diced
2 celery ribs, diced (include the leaves, also chopped fine)
1 -2 jalapeno, chopped fine (seeds and ribs removed if you want it a bit milder, leave the ribs and seeds in if you want a bit mo)
1 -2 chipotle chile in adobo, minced fine and chopped, 1 teaspoon of the sauce (optional)
3 tablespoons garlic, minced
1 1/2 tablespoons chili powder
2 tablespoons ground cumin
1 1/2 teaspoons dried oregano
1 1/2 tablespoons fresh cilantro
1 lime (1/2 juiced in the chili, 1/2 cut in wedges for a garnish)

Steps:

  • Chorizo and Vegetables -- In a large pot, add the olive oil and bring to medium high heat. Add the chorizo and saute until golden brown. Reduce the heat to medium and add in the celery, onion, garlic, red and green peppers, jalapenos, chipotles and cook 4-5 minutes until the vegetables begin to soften.
  • Beans and Sauce -- Add the beans, tomatoes, chicken broth, chili powder, cumin, and oregano and mix well. Simmer of medium low to low heat for 1 our. After 30 minutes, check for seasoning (salt and pepper), and if you want a little more heat you could add a little chipotle sauce. But be careful - it is a subtle heat. Don't add too much.
  • Finish -- After an hour, it's time to enjoy. Finish by squeezing in 1/2 of the lime, cilantro and adding the corn. Cook just another couple of minutes to heat up the corn.
  • Serve -- I like the favorites. Served with diced avocado, salsa, cheese (pepper jack), black olives, sour cream and the lime wedges. Corn bread as always with chili - on the side or you can use some tortilla chips. Blue corn chips are great with this. ENJOY!

2 quarts water
1 1/2 cups onions, chopped
1/2 cup green pepper, chopped plus 1/4 cup green pepper, chopped
2 tablespoons chipotle chili pepper
1 tablespoon salt
1 tablespoon black pepper
1 quart chili sauce
1/4 cup red pepper, chopped
1/2 cup tomatoes, diced
3 tablespoons chili powder
1 tablespoon cumin
1 teaspoon lime juice
2 bunches cilantro, chopped
3 cups water or vegetable stock

Steps:

  • Boil the black beans in water with onions, 1/2 cup green peppers, chipotle peppers, salt and pepper. Add additional water if needed. Cook beans until slightly tender, then add the 1/4 cup green pepper and remaining ingredients and simmer approximately 45 minutes to 1 hour. Add water as necessary for consistency.

2 (16 ounce) cans refried black beans
2 (16 ounce) cans black beans, drained,rinsed,drained
1 (6 ounce) can tomato paste
3/4 teaspoon hot sauce, i like cholula or tapatio
3/4 bunch fresh cilantro leaves, chopped
1/2 lb Cotija cheese, crumbled
1/2 cup sharp cheddar cheese, grated
1/2 cup asadero cheese, grated

Steps:

  • Preheat oven to 350°F.
  • Heat a dutch oven over medium high heat.
  • Add oil.
  • Add meat, crumble with a"Z" wire potato masher.
  • Stir and cook'til browned.
  • Remove with a slotted spoon, drain on paper towels.
  • Drain all but 2 TBS of the drippings.
  • Add Onions, Celery, Carrots, and Chilies.
  • Saute (stir fry)'til onions are translucent.
  • Add Garlic, saute another minute.
  • Combine all ingredients but the cheeses.
  • Bake 75 minutes, covered.
  • Top with cheeses, bake uncovered for 6-7 minutes"til cheeses are golden brown.
  • Garnish each serving with Sour Cream, Guacamole, Cilantro, and grated eggs.

Black Bean Ravioli Filling
1 15 oz can of black beans drained
2 oz of habanera cheese or pepper jack
2 teaspoons of cilantro
4 oz of chorizo
1 egg white
Mexican Cream Chili Sauce
1 4 oz can of green chilies drained diced
1 chipolete pepper in adobo sauce diced
4 oz of Mexican cream or queso freso or cream cheese
1 teaspoon of cilantro
A pinch of cumin
A pinch of chili powder
Ravioli Dough
3 Cups flour
1 teaspoon salt
4 eggs
2 tablespoons olive oil
1 yolk for wash
4 tablespoons of water

Steps:

  • Directions For the filling Take casing off of the chorizo and cook slowly until borown. Drain and pat dry with paper towels. Put chorizo in food prossers and puls until it has a fine ground texture Drain can of black beans and place in food processor blend until smooth Mix in the reaming ingredients and set aside makes about 24 raviolis For the Sauce Place all ingredients for the sauce in a small sauce pan on medium heat. Heat until cream has melted and is well blended stirring occasionally. Keep warm until ready to serve For the dough Measure all ingredients in a food processor with a dough hook and mix until it forms a ball. Then knead dough on a floured smooth surface. If dough is too stiff, add small amounts of water until the dough feels like play dough. Cover dough in bowl with a damp cloth and work with small amounts of dough at a time. Roll pasta out using a roller machine, beginning with the widest setting. Fold dough over and roll through again, gradually decreasing the roller setting; dust lightly with flour as needed When pasta is thin enough it is ready to make raviolis. If you don not have a ravioli mold you can place on sheet of dough on a smooth surface cut into 1 ½ to 2 inch squares placing filling into the middle of each square, then cover with another sheet of dough and seal with your fingers or if you have little time you can use store bought won ton wrappers. Bring a large pot of salted water to a boil add ½ the raviolis and cook until ravioli floats. Remove from water and keep warm and then cook the other ½ ravioli. Place warm sauce on raviolis and serve Can be toped with cilantro and crumbled queso fresco if you have any

A fantastic way to celebrate Cinco de Mayo! This was a last minute creation using ingredients found in my fridge. Serve with marinara sauce (add chopped cilantro to the marinara for a bit of Mexican flavor). If you can't find Mexican cheese, try a mix of Monterey Jack and Cheddar.

2 links chorizo sausage, cut into small pieces
½ cup part-skim ricotta cheese
1 cup shredded queso asadero (white Mexican cheese)
½ cup chopped cilantro
1 clove garlic, finely minced
½ teaspoon cumin
1 teaspoon salt
1 (14 ounce) package round wonton wrappers
1 teaspoon olive oil
1 tablespoon salt

Steps:

  • Add chorizo to a hot skillet set over medium heat; cook, stirring, until cooked through. Set aside to cool.
  • In a large bowl, stir together ricotta, queso asadero, cilantro, garlic, cumin, and salt.
  • Place chorizo in a blender or food processor, and pulse until finely ground. Pour combined ingredients into blender, and pulse until well blended.
  • Place a teaspoonful of filling on a wonton wrapper. Dip a finger in water, and wet the top half edge of the wrapper. Fold in half, and pinch the edges to seal. Set aside, and continue filling and sealing the remaining wrappers.
  • Add oil and about 1 tablespoon salt to a pot of boiling water. Gently place raviolis into water, and cook until raviolis float to the top, about 6 minutes. Remove to plates with a slotted spoon, and serve topped with marinara sauce.

1/8 teaspoon ground cinnamon
3 (15 ounce) cans black beans, drained
3 (14 ounce) cans whole canned tomatoes, undrained and chopped
1 (8 1/2 ounce) can no-salt-added corn, drained or 1 (8 1/2 ounce) can frozen corn
1 1/2 ounces semisweet chocolate, chopped
3/4 teaspoon salt
1/2 teaspoon black pepper
3/4 cup nonfat sour cream
baked corn tortilla chips (optional)

Steps:

  • Remove 2 chiles from can; finely chop, reserving remaining chiles and sauce for another use.
  • Heat a large Dutch oven coated with cooking spray over medium-high heat.
  • Add chiles, 1 3/4 cups onion, bell peppers, garlic, and soyrizo; sauté 5 minutes or until tender.
  • Add chili powder and next 7 ingredients (chili powder through corn), stirring to combine.

  • Make the lime crema: In a small bowl, whisk together sour cream and lime zest. Cover and refrigerate until ready to use.
  • Make the pickled onions: In a separate bowl, combine red onion, lime juice, 1 teaspoon salt and ½ teaspoon sugar. Let the onion pickle at room temperature for at least an hour.
  • Meanwhile, toast the chilies for the sauce: Heat a very large skillet (or use a Dutch oven) over medium-high heat until hot. Lay chilies flat in skillet and toast until fragrant and pliable and color darkens, 10 to 15 seconds a side; do not let them burn and turn bitter.
  • Make the bean-chorizo mixture: While chilies soak, heat 2 tablespoons oil in the skillet over medium-high heat. Add chorizo and cook until golden, about five minutes.
  • Stir white onion into skillet and cook until softened, about seven minutes. Finely chop ¼ cup cilantro stems and add to pan, along with cumin. Cook one minute.
  • Return chorizo to pan. Stir in beans, 1 cup stock and ¾ teaspoon salt. Bring to a simmer; reduce heat to medium-low and cook gently 10 minutes. Taste and add more salt if needed.
  • Make the chili sauce: Heat broiler. Place garlic cloves (in skins) on a baking sheet. Broil, turning once, until very tender, five to 10 minutes. Peel garlic when cool enough to handle.
  • Drain chilies and place in a blender or food processor. Add peeled garlic and 2 cups stock. Purée until smooth.
  • Heat 4 tablespoons oil in a large skillet over medium-high heat. Add chili purée and simmer vigorously, stirring often, for five minutes or until sauce has thickened.
  • Assemble the casserole: Heat oven to 350 degrees. Spread a quarter of the chili sauce over bottom of a 9- by 13-inch baking dish. Place a layer of 6 overlapping tortillas on top of the sauce, followed by another layer of sauce, half the bean mixture and half the cheese.
