Steps:
- Heat a skillet over medium-low heat, or your griddle to 350°F (175°C) and coat with melted butter or non-stick cooking spray.
- In a medium mixing bowl combine either just the base ingredients for the 'classic' Bisquick pancakes, including Bisquick baking mix, milk, and large eggs.
- If desired, add the optional ingredients for the 'ultimate' Bisquick pancakes, including sugar, baking powder, vegetable oil (or melted butter), and vanilla extract or paste.
- Stir until combined, and lumps in pancake batter are totally OK. Portion out the batter into your heated skillet or onto your griddle in scant 1/4 cup portions.
- Cook on the first side for 30 seconds to a minute, until the surface bubbles have popped and the edges are dry enough to get your spatula under. Flip and cook for an additional 30 seconds.
- Remove from your skillet or griddle when done and repeat as needed.

BISQUICK PANCAKES (AKA SILVER DOLLARS)
I posted this recipe in memory of my Father who would cook Pancakes for us on Sunday mornings. He would make "Silver Dollars" for me saying "How many Silver Dollars do you think you can eat"? Sometimes the simplest pleasures are the best. Rest In Peace Dad.

SWEDISH PANCAKES
Smaller and thinner than their American counterparts, Swedish pancakes are quite tender and comparable in texture to French crepes. If you don't have a Swedish pancake pan, cook the pancakes in a nonstick pan.

Steps:
- In the bowl of a food processor, combine eggs with 1/2 cup milk. Process until completely smooth, 2 to 3 minutes. Stop the food processor and add flour. Process again until smooth and thick, 1 to 2 minutes. Add remaining milk, butter, granulated sugar, vanilla, and salt.
- Heat Swedish pancake pan over medium. Spoon approximately 1 tablespoon of batter into each circle. Cook until the edges turn golden brown, 2 to 3 minutes. Flip with a fork, and continue cooking 1 to 2 minutes more. (To cook pancakes without a Swedish pancake pan, use a buttered nonstick pan and spoon 1 tablespoon batter per pancake. Pancakes will be less regular in shape.)
- Serve with confectioners' sugar, fresh fruit, and jam as desired.
AUTHENTIC SWEDISH PANCAKES
This is an authentic Swedish pancake recipe that was taught to my father by his mother, who was born in Sweden. My father then passed it to me. Kids love them. Never any leftovers when I make them. To serve, you can spoon melted butter over pancakes and sprinkle with sugar, or serve with lingonberry sauce. You can also use the batter to make crepes.

PANCAKES, BEST EVER, BISQUICK
I came up with this variation of basic Bisquick pancakes, which I think are the best. At least, I've never tasted any better, except perhaps for some awesome sourdough pancakes I had in San Simeon, CA., on the Hearst Property.
