My mom gave me an older Bisquick cookbook she had and never used. It is from 1964 and this recipe is what I use for a great peach cobbler. I do use a whole recipe for the shortcake instead of 1/2 for a crustier cobbler. If you have fresh fruit, use 3 cups of sweetened fruit mixed with 3/4 water.

29 ounces fruit, undrained
1 tablespoon cornstarch
2 tablespoons cold water
2 cups Bisquick
1/2 cup milk
1/4 cup butter or 1/4 cup margarine, melted
2 tablespoons sugar, if desired

Steps:

  • Preheat oven to 400 degrees F. In a large saucepan add can of undrained fruit and heat thru. Blend together cornstarch and water in a small bowl, mix until blended. Add mixture to fruit and boil for 1 minute. Pour thickened fruit mixture into a 2 quart baking dish and dot with butter. Set aside.
  • Add Bisquick, milk, melted butter, and sugar if using, into a bowl. Stir with fork until mixture is well combined. Drop by spoonfuls over fruit. Bake for approximately 20 minutes or until shortcake is golden brown.
  • Serve hot or cold.

1/4 cup butter or margarine
2/3 cup milk
1 1/2 cup bisquick baking mix
1 cup sugar
1 can (21 ounce size) favorite flavor pie filling

Steps:

  • Preheat the oven to 400 degrees F. Place the butter in a 11x7 baking pan and place in the oven to melt. When melted, remove the baking pan and place on a heatproof surface. Add the milk, baking mix, and sugar to the pan and mix until smooth. Drop the pie filling by spoonfuls over the batter. Place the pan in the oven and bake at 400 degrees F for 30-35 minutes or until bubbly and the batter is puffed and lightly browned. Remove from the oven and serve warm.

Steps:

  • Heat oven to 425 degrees F.
  • Grease 1.5-quart casserole. Heat pie filling to boiling in 1-quart saucepan.
  • Pour into casserole. Stir remaining ingredients until dough forms.
  • Drop by 6 spoonfuls onto hot pie filling; sprinkle lightly with granulated sugar if desired.
  • Bake about 20 minutes or until biscuits are golden brown.
  • 6 servings.

2 1/3 c bisquick
4 1/2 Tbsp sugar (divided)
3 Tbsp butter or margarine, melted (stick not whipped)
2/3 c evaporated milk or whipping cream
1/3 tsp cinnamon, ground
6 to 8 fresh peaches, apples, plums, or 2 pints of fresh berries or cherries of your choice sweetened with sugar to your taste.

Steps:

  • 1. Melt butter or margarine in microwave and set aside. (Do not use whipped margarine or butter, only sticks)
  • 2. In 2 qt mixing bowl mix Bisquick, 3 1/2 tablespoons of sugar, and cinnamon with a fork or whisk until well blended.
  • 3. Add melted butter and evaporated milk or cream to dry mixture and stir with fork or whisk just until blended. Don't overmix, mixture should be moist and sticky.
  • 4. To make shortcakes, drop by heaping tablespoons on a non stick cookie sheat. (should be about as big around as the top of a regular cupcake) Bake in 400 degree oven for 15 minutes or until golden brown.
  • 5. Sprinkle top of shortcakes with remaining tablespoon of sugar and bake until golden brown. These are best when served warm, just carefully slice in half, put bottom half in serving bowl, cover with fresh berries, peaches or fruit of your choice. Place other half on top and add more fruit and serve with whipped cream or topping.
  • 6. For cobbler, place pie filling or sweetened fruit of your choice in a 1 1/2 to 2 Quart baking dish and carefully spread Bisquick mixture on top, (I use my hands) Don't worry if it doesn't completely cover all the fruit it will spread out and cover when it bakes. Sprinkle top of cobbler with remaining tablespoon of sugar and bake in 400 degree oven for 35 to 40 minutes until golden brown. Serve warm with ice cream or whipped cream or topping of your choice. Delish!!!
