MAKE-AHEAD PEACH BREAKFAST BAKE



Make-Ahead Peach Breakfast Bake image

Bake up a fruit-filled breakfast the whole family will love. Top with whipped cream and powdered sugar to make it even more irresistible.

2 tablespoons butter
2 peaches, peeled, sliced
2 tablespoons packed brown sugar
2 teaspoons vanilla
1 1/2 cups Original Bisquick™ mix
2/3 cup heavy whipping cream
4 eggs
1 cup heavy whipping cream
2 tablespoons powdered sugar
1 teaspoon vanilla
2 peaches, peeled, sliced
Real maple syrup

Steps:

  • Heat 10- to 12-inch ovenproof skillet over medium heat; add 1 tablespoon of the butter. Add 2 sliced peaches, and sprinkle with brown sugar. Cook 3 minutes; stir peaches, and cook another 2 to 3 minutes or until caramelized and soft. Remove from the heat; add 1 teaspoon of the vanilla. Toss well, then remove and slide the peaches onto a plate. Rub remaining 1 tablespoon butter in warm skillet. Let skillet cool.
  • In medium bowl, add Bisquick mix, 2/3 cup whipping cream, eggs and 1 teaspoon vanilla. Mix to combine, being careful not to overmix. Fold in caramelized peaches.
  • Pour batter into buttered skillet (you can use a greased 13x9-inch pan, if you prefer). At this point, cover the skillet and place in the fridge overnight, or go on to baking step.
  • The next morning (or whenever you are ready to go on to the baking step), heat oven to 450°F.
  • Bake at 450°F for 10 minutes, then reduce oven temperature to 350°F, and continue baking 10 to 15 minutes or until lightly golden on top.
  • Meanwhile, beat 1 cup whipping cream with electric mixer on high speed until soft peaks form. Add powdered sugar and 1 teaspoon vanilla, and whip until combined.
  • Cut into wedges, and serve hot with sliced peaches, a dollop of whipped cream and a drizzle of maple syrup.

1 egg
1 egg white
2 teaspoons vanilla extract
1/3 cup honey
1/2 cup milk of choice
½ cup nonfat greek yogurt
2 cup oat flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon ground ginger
¾ cup chopped apples
¾ cup chopped peaches + extra for decoration on top if wanted

Steps:

  • Preheat oven to 350 and prepare a greased 9x5 baking loaf
  • In a large bowl mix together flour, baking powder, baking soda, cinnamon and ginger.
  • Add in liquid ingredients (coconut oil, egg, egg white, vanilla extract, honey, yogurt, milk)
  • Whisk batter together until smooth.
  • Fold in chopped apples + peaches until mixed throughout the batter
  • Garnish with a few peach or apple slices on top if you'd like (not necessary, but looks super pretty!)
  • Bake for 40-45 minutes until golden brown on the edges or a cake tester comes out clean when inserted in the middle of the bread.

3 cups sliced peeled Golden Delicious apples (about 3 medium)
2 cups sliced peeled fresh peaches (about 3 medium)
1/4 cup granulated sugar
1/2 cup old-fashioned oats
1/2 cup packed brown sugar
1/4 cup Gold Medal™ all-purpose flour
1/2 teaspoon ground cinnamon
1/4 cup cold butter or margarine
1/4 cup chopped walnuts

Steps:

  • Heat oven to 375°F. Grease 11x7-inch (2-quart) glass baking dish with shortening or cooking spray.
  • In large bowl, toss apples, peaches and granulated sugar. Pour into baking dish. In same bowl, mix oats, brown sugar, flour and cinnamon. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture is crumbly. Stir in walnuts. Sprinkle over fruit.
  • Bake 30 minutes or until topping is golden and fruit is tender. Cool 15 minutes. Serve warm.

Steps:

  • Preheat the oven to 400°F.

2 cups fresh or frozen sliced peeled peaches
4 teaspoons sugar
1 teaspoon lemon juice
3 large eggs, room temperature
1/2 cup all-purpose flour
1/2 cup 2% milk
1/2 teaspoon salt
2 tablespoons butter
Ground nutmeg
Sour cream, optional

Steps:

  • In a small bowl, combine peaches, sugar and lemon juice; set aside. In a large bowl, beat eggs until fluffy. Add the flour, milk and salt; beat until smooth. , Place butter in a 10-in. ovenproof skillet in a 400° oven for 3-5 minutes or until melted. Immediately pour batter into hot skillet.
