2 cups huckleberries
1/3 cup granulated sugar
2 tablespoons lemon juice
2 tablespoons cornstarch
1 1/2 teaspoons water

Steps:

  • In a saucepan over medium heat, add huckleberries, granulated sugar and lemon juice. Bring to a boil reduce heat and simmer for 5 to 8 minutes.
  • In a small bowl, combine the cornstarch and water. Slowly stir into the huckleberry sauce and heat until thoroughly combined and thickened.

4 ounces veal demi-glace
1 cup huckleberries, fresh if in season
1 teaspoon bitter chocolate
1/2 tablespoon butter
2 cups port wine
1 cup mirepoix (medium dice of carrot, celery, onion and leek)
1/2 tablespoon extra virgin olive oil

Steps:

  • In a heavy sauce pot, sauté mirepoix for 8 minutes on medium heat.
  • Add the port wine, 1/2 cup of the huckleberries and demi glacé and then allow this to reduce by half to intensify the flavor.
  • Strain through a sieve and return to a clean sauce pot.
  • Prior to serving, bring sauce to a simmer and add the chocolate, remaining 1/2 cup of huckleberries and butter.
  • Serve immediately.

1 whole chipotle pepper in adobo, seeded or 1 teaspoon ground dried chipotles
1 teaspoon black peppercorns, freshly ground
1/2 teaspoon allspice, ground
2 teaspoons red chile powder
2 teaspoons cumin seed, toasted and ground
2 teaspoons coriander seeds, toasted and ground
1/4 cup paprika
1 tablespoon sugar
1 tablespoon salt
4 (8-ounce) bison tenderloin fillets

Steps:

  • Combine spices and set aside. Heat grill pan or grill to medium-high heat. Place spice on a pie pan or large flat plate and dip both sides of each steak into mixture and shake off excess. Place steak on grill or grill pan and lower heat if using a grill pan or the spices will burn. Grill for 4 to 5 minutes each side. Remove from grill and let rest a couple of minutes before serving.

VENISON TENDERLOIN WITH BERRY SAUCE AND CREAMY POTATOES



Venison Tenderloin with Berry Sauce and Creamy Potatoes image

3 medium Yukon gold potatoes
Kosher salt
3 tablespoons butter, room temperature
1 teaspoon ground nutmeg
1 tablespoon heavy cream, plus more if needed
Salt and freshly ground white pepper
2 venison tenderloins
Salt and freshly ground black pepper
3 tablespoons grapeseed oil
1 cup red wine
1 cup demi glace
1 small red onion, halved
2 sprigs fresh thyme
1 sprig fresh rosemary
1 tablespoon juniper berries
1 teaspoon sugar
1/3 cup blueberries
Salt and freshly ground black pepper
2 tablespoons butter

Steps:

  • For the potatoes: Peel the potatoes and cut into 1-inch chunks. Place the potatoes in a large saucepan of cold, salted water. Bring the water to a boil over high heat. When the water boils, lower the heat to medium and simmer the potatoes until they're fork tender, 15 to 20 minutes.
  • For the venison: Season both sides of the venison tenderloins with salt and pepper.
  • Heat a large saute pan over high heat and add the oil. When the oil is hot, but not smoking, add the tenderloins. Reduce the heat to medium and sear the tenderloins on all sides, 3 to 4 minutes per side. Remove the loins from the pan and let rest until ready to serve.
  • For the potatoes: Drain the potatoes well and transfer to a bowl. Mash the potatoes until there are no lumps. Stir in the butter, nutmeg, cream, salt, and white pepper. Stir until creamy, adding more cream if needed. You want smooth, creamy potatoes. Taste and season with more salt and white pepper, if needed.
  • For the sauce: In a small saucepan, combine all of the ingredients, except for the blueberries and butter. Bring the mixture to a boil over medium-high heat. Lower the heat, add the blueberries, and simmer until reduced a little and thickened, 8 to 10 minutes. Remove from the heat, strain the sauce back into the saucepan, season with salt and pepper, and then whisk in the butter. Hold warm until serving.
  • To plate: Spoon potatoes into the center of the plate. Slice the venison loin into 1/2-inch thick slices on a bias. Lay slices over potatoes. Top with sauce.

PORK TENDERLOIN WITH WILD HUCKLEBERRY SAUCE

1 1/2 pound pork tenderloin
2 tablespoons olive oil (garlic-infused oil will yield more flavor) plus 1 tablespoon
2 tablespoons finely chopped fresh rosemary leaves, plus 2 sprigs, for garnish
2 tablespoons finely chopped fresh thyme leaves
2 tablespoons finely chopped fresh sage leaves
1 tablespoon kosher or coarse ground sea salt
1 teaspoon freshly ground black pepper
2 cups fresh huckleberries or blueberries
1/3 cup sugar
2 tablespoons raspberry vinegar
1/4 cup white wine

Steps:

  • Lightly rub the pork with the olive oil. Combine the chopped herbs, salt and pepper in a shallow dish. Roll the pork loin in the herb mixture. Refrigerate.
  • In a medium saucepan, combine the huckleberries, sugar, vinegar, and wine and bring to a boil. Lower the heat and simmer until slightly thickened.
  • Preheat oven to 400 degrees F.
  • Heat the oil in a Dutch oven over medium-high heat and saute the pork on all sides until golden brown. Place in the oven for about 12 to 15 minutes, or until the internal temperature reaches 150 degrees F.
  • Transfer the pork to a serving platter and spoon a generous amount of huckleberry sauce over the pork. Garnish with springs of rosemary.

*1 Quart Hickory Wood Chips for grilling
HUCKLEBERRY REDUCTION
*4 ounces Veal Demi Glace
*1 Cup Huckleberries, fresh when in season or frozen
*1 Teaspoon Bitter Chocolate
*1/2 Tablespoon Unsalted Butter
*2 Cups Port Wine
*1 Cup Mirepoix (medium dice of carrot, celery, onion, leek)
*1/2 Tablespoon Extra Virgin Olive Oil

Steps:

  • 1. Marinate bison steaks overnight in the refrigerator with oil, garlic, rosemary and black pepper. 2. Remove the steaks from the refrigerator, and remove the large pieces of rosemary. Then season with salt and pepper on all sides of bison. Allow the steaks to sit at room temperature for twenty minutes to allow the salt to dilute and penetrate the meat. 3. For grilling of the steaks, you will need to soak the wood chips in warm water for 30 minutes prior to grilling. The wood chips should be added to your charcoal five minutes prior to grilling to allow them to burn and produce the necessary smoke you will need for the flavor in the steaks. 4. Grill steaks on each side for approximately five-eight minutes for a medium rare steak, depending on thickness of the pieces. Grill longer for more more doneness. Remove from grill and allow to rest for five minutes prior to serving. REDUCTION 1. In a heavy sauce pot, sautée the mirepoix for 8 minutes on medium heat in the oil. 2. Add the Port Wine, 1/2 cup of the huckleberries, and demi glace, allowing this to reduce by one third, about twenty minutes. Strain through a sieve and return to a clean sauce pot. Can be set aside in the refrigerator for as long as three days. 3. Prior to serving, bring sauce to simmer and add the chocolate, remaining huckleberries, and butter.
