EASY QUICHE
This is an easy mix-it-up-in-one-bowl-and-cook recipe. I make it for every brunch I attend. You may substitute chopped spinach for the broccoli if you wish.

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 10 inch quiche dish.
- In a large bowl, beat together milk, eggs, baking mix, butter and parmesan cheese. Batter will be lumpy. Stir in broccoli, ham and Cheddar cheese. Pour into prepared quiche dish.
- Bake in preheated oven for 50 minutes, until eggs are set and top is golden brown.

LOW FAT BISQUICK CRUST BACON AND CHEESE QUICHE
Amazingly, the quiche will form its own crust. I think this quiche tastes best when it's made the evening before and heated up the next morning. If you use a blender instead of a whisk, process the Bisquick, eggs, milk, pepper and salt for about 15 seconds; afterwards, by hand mix in the onion and garlic. Optional: Use ½ lb Canadian bacon in place of bacon and top with tomatoes. Or Swiss cheese instead of cheddar.

Steps:
- Preheat oven to 350.
- Cook the bacon in a medium frying pan. If you use turkey bacon I recommend spraying the pan with cooking spray.
- After you have removed the bacon from the pan, use the same pan to sauté the onion and garlic over medium heat until softened.
- While the onion and garlic cook, chop up the bacon.
- In a large bowl beat the eggs and milk until just blended.
- Add to that mixture the Bisquick, onion, garlic, salt and pepper. Mix by wire wisk for about 1 minute (some small Bisquick lumps are fine).
- Spray pie plate or muffin tins with cooking spray.
- Pour Bisquick mixture evenly into the pie plate or muffin tins.
- Sprinkle bacon and cheese on top of egg mixture; gently press below surface with fork.
- Bake the quiche until the top is golden-brown and a knife inserted near the center comes out clean. If you have a thermometer the internal temperature of the quiche should be between 165 - 185 degrees Fahrenheit. Let stand at least 10 minutes before cutting.
- Baking time: Pie plate - 40-50 minutes or Muffin tin - 20-25 minutes.
- Makes 8 servings: 1 slice of quiche or 2.5 muffin size quiches.
BACON QUICHE BISCUIT CUPS
These little cups are wonderful! However, I veered slightly from the original recipe. I added some horseradish and used onion/chives cream cheese. They make nice appetizers! It was originally the recipe of Doris Geist, from Bethlehem, Pa. Bake-Off 34 in Phoenix, 1990. I have some nerve changing a Bake-Off recipe don't I? It came about because I bought the wrong type of cheese and then decided to add a little kick to it!

Steps:
- Heat oven to 375°F.
- Spray 10 muffin cups with nonstick cooking spray.
- In medium skillet cook bacon until crispy.
- Drain on paper towels.
- Crumble bacon, set aside.
- Meanwhile, beat onion/chive cream cheese in small bowl until smooth.
- Gradually add milk and horseradish, beating at low speed until smooth.
- Stir in Swiss cheese and onions. Set aside.
- Separate dough into 10 biscuits.
- Press or roll each to form 5-inch round.
- Place 1 biscuit round in each sprayed muffin cup; firmly press in bottom and up sides, forming 1/4-inch rim.
- Place half the bacon in bottom of dough-lined muffin cups.
- Spoon cheese mixture evenly into cups.
- Bake for 21-25 minutes or until filling is set and edges of biscuit cups are golden brown.
- Sprinkle each with remaining bacon; lightly press into filling.
- Remove cups from pan.
- Serve hot or at room temperature.
- Enjoy!

BISQUICHE (BISCUIT QUICHE)
Made in a muffin tin, these little quiches are easy to make and are great for taking along or grabbing on the run. Kids live them as they can pick up and eat out of hand. I've given the recipe using breakfast sausage, scallions, sweet red pepper and cheddar cheese, but you can vary the fillings to suit your taste or use what you have. I have some leftover ham to use in the next batch!

- Preheat oven to 350.
- Liberally grease 16 muffin cups.
- Split each biscuit in half and press into greased muffin cup. Press up sides a bit to form a bowl in bottom of muffin tin. (Biscuit will not come all the way up the side of muffin cup. You just need a well to put sausage, veg and cheese).
- Place sausage into each biscuit cup, top with scallions, pepper and cheese.
- Beat eggs and milk together and pour some over each biscuit, just covering edge of biscuit do not fill to top of muffin cup as the biscuits and eggs will puff and form perfect muffins. add salt and pepper to taste. Note: I did not use salt with the breakfast sausage as it was already very salty and it worked out fine.
- Bake for 15-18 minutes until eggs are set.
- Note: you can make these with any combination of meats and/or veg and vary the cheese. For example, use Swiss cheese with chopped broccoli and onion with bacon. We did not add salt or pepper as the sausage was highly seasoned. You may adjust seasoning as needed based on the meat, cheese and veg combination you decide on.

Steps:
- Mix biscuit mix, zucchini, oil, eggs, onions, cheddar cheese, parmesan cheese, salt, pepper, and garlic powder together in a large bowl, until it looks like thick batter. Mix by hand. Do not beat.
- Bake at 350 degrees in a greased 9 inch pie plate for 35 to 40 minutes.
