AIR FRYER BEIGNETS
This pillowy New Orleans classic is easy to make at home in your air fryer and uses far less oil than the original. As a bonus, you can use the same sweet yeasted dough to make air fryer doughnuts - just cut into rings and air fry at the same temperature as the beignets. Finish with a dusting of powdered sugar or a quick glaze.

Steps:
- Combine the flour, sugar, yeast and salt in the bowl of a stand mixer fitted with the dough hook and mix to combine. Add the egg, egg yolk, milk, butter and vanilla and mix on low to combine. Increase the speed to medium high and knead until the dough forms a loose ball around the hook and is smooth and elastic, about 3 minutes.
- Transfer the dough to a floured surface and lightly knead by hand just enough to bring it together into a smooth ball. Brush a medium bowl with melted butter and add the dough, turning to coat. Cover and let rise in a warm area until doubled in size, 1 hour to 1 hour 15 minutes.
- Punch the dough down and roll out on a lightly floured surface to a square slightly larger than 10 inches by 10 inches. Trim the edges with a sharp knife or pizza cutter to make an even square. Cut the square in a 4 by 5 grid pattern to make 20 rectangles. Loosely cover the dough and let rise right on the countertop for about 15 minutes.
- Preheat a 3.5-quart air fryer to 350 degrees F. Spray the basket with cooking spray and add half the beignets. Spray the beignets lightly with cooking spray. Cook until puffed and golden, about 6 minutes. Remove and repeat with the remaining beignets. Dust the beignets with confectioners' sugar and serve warm.
EASY BEIGNETS

So when I moved to Tennessee I still wanted to enjoy many of the foods I loved eating there. I found an easy way to make beignets which is basically just a fried batter fritter. All you need is a biscuit mix like Bisquick...

- 1. In a large bowl, mix the Bisquick baking mix and milk with a fork, until the baking mix is moistened.
- 2. Form a soft dough ball, and then knead the dough about 10 times on a lightly floured flat surface.
- 3. Flatten the dough initially with your hands and then roll the dough out from the center. Leave a little thickness to the dough.
- 4. Cut the dough into strips and then into squares. You can make the squares as big as you want, but consider the size of the saucepan you are using for frying.
- 5. In a medium-sized saucepan have approximately 2 cups of oil on high heat. When the oil is hot drop in your pieces of dough about 4 at a time, because the cooking process is fast. All you basically want to do is brown the dough.
- 6. Have a plate ready to place your browned fritter on and sprinkle with powdered sugar. Continue the process. You do need to watch carefully as you cook the beignets, they cook fast.

- Separate biscuits into individual rounds, and cut into quarters. Pour oil to a depth of 2 inches into a Dutch oven, heat over medium heat to 350°. Fry biscuit quarters, in batches, 1 to 1 1/2 minutes on each side or until golden. Drain on paper towels, and dust generously with powdered sugar. Serve immediately.

NEW ORLEANS STYLE BEIGNET RECIPE
Beignets (pronounced "ben-YAYS") are a traditional New Orleans deep-fried yeast pastry. In the heart of the French Quarter at the Café du Monde, every good day starts and often ends with a plate of these airy golden treats and a cup of chicory-infused café au lait. Rising times are not included in the prep and cooking times.

Steps:
- Combine the Yeast, Water, and Sugar in the work bowl of a stand mixer fitted with a dough hook (You could also make this in a food processor, or the old fashioned way, by hand).
- Let this sit until frothy, about 5 minutes, then add the Salt, Egg, and Evaporated Milk.
- Mix on low speed, then add half of the flour until it starts to come together, then add the shortening.
- When the shortening is incorporated start adding the remaining flour, a little at a time until most of it is incorporated.
- At this time I always turn the dough onto a floured bench to finish by hand, just like when I make bread; it's a touch thing.
- Knead the dough adding just enough flour as necessary to make a non-sticky, smooth dough.
- Place the dough into a large oiled bowl, loosely cover and let rise (I made mine last night and let it rise overnight in the refrigerator).
- After the dough has doubled in bulk, punch it down and turn it onto a floured surface and roll out into a rectangle that is about 1/2-inch thick.
- With a very sharp knife working at a diagonal to the rectangle, cut into 2-inch wide strips.
- Now cut into diamond shapes by making diagonal cuts in the opposite direction.
- Place the Beignets on a floured baking sheet to let rise about 40 minutes in a warm place (I place them in a barely warm oven).
- When the Beignets have risen, heat 2-3 inches of vegetable oil in a large saucepan to 350-360 degrees.
- Place 2-3 Beignets into the hot oil at a time, being careful not to smash or deflate them.
- When they are golden brown, flip them over until golden brown on the other side (They go pretty quickly so start checking them right after they go into the oil).
- Remove to paper towel lined plates to drain.
- Serve hot topped with plenty of powdered sugar (because the dough doesn't contain much sugar, you will want a lot!).
- Best served with Cafe au Lait. Enjoy!

CINNAMON AND SUGAR BEIGNETS
I found this recipe in "Out to Brunch - At Mildred Pierce Restaurant" Beignets are a french doughnut without the holes. These are best served while still warm.

- In a bowl, combine the warm water, yeast and 1 teaspoons of the sugar. Set in a warm place for 10 minutes.
- In a large bowl, cream together the butter, remaining white sugar and the cinnamon. Add the eggs and yolk one at a time, beating well with a wooden spoon after each addition. Beat in the yeast mixture, salt and flour until smooth.
- Cover the bowl with plastic wrap and place in a warm spot until the dough has doubled in size, about 2 hours. Punch down the dough in the bowl, cover again and refrigerate for 3 hours or overnight.
- Heat the oil to 325 F (160 C). Meanwhile, turn dough out onto a lightly floured surface and press to a 1" thickness. Using a 2" cookie cutter dipped into flour, stamp out the beignets. Press scraps together and pat into a 1" thickness. Cut out the remaining beignets.
- Fry beignets, 4 at a time, turning occasionally until they're evenly browned (about 5 mins). With the slotted spoon, carefully scoop them out and place on a paper towel to absorb any excess oil. Roll the beignets in the Cinnamon Sugar while they're still warm.
- Note: Also good rolling them in powdered/confectioners sugar.

- In a large bowl, dissolve yeast in warm water. Add sugar, salt, eggs, evaporated milk, and blend well. Mix in 4 cups of the flour and beat until smooth. Add the shortening, and then the remaining 3 cups of flour. Cover and chill for up to 24 hours.
- Roll out dough 1/8 inch thick. Cut into 2 1/2 inch squares. Fry in 360 degree F (180 degrees C) hot oil. If beignets do not pop up, oil is not hot enough. Drain onto paper towels.
- Shake confectioners' sugar on hot beignets. Serve warm.
