1 (16 ounce) can tomato sauce
1/2 cup chopped onion
1 teaspoon minced garlic
1 teaspoon dried basil
1/2 teaspoon dried rosemary
1/4 teaspoon oregano
1 teaspoon sugar
2 tablespoons olive oil
salt
pepper

Steps:

  • Heat olive oil over medium heat in medium-sized saucepan.
  • Saute onions and garlic until brown.
  • Add tomato sauce and stir.
  • Lower heat to medium-low.
  • While stirring, add rosemary, basil and oregano.
  • Allow sauce to bubble.
  • Sprinkle with sugar and mix again.
  • Season to taste with salt and pepper.
  • Use immediately, or transfer to plastic container for storage.

1 tablespoon olive oil
2 garlic cloves, finely chopped
1/2 small onion, chopped
1 (28 ounce) can diced tomatoes, undrained
2 tablespoons chopped fresh basil or 1 teaspoon dried basil leaves
2 teaspoons chopped fresh oregano or 1/2 teaspoon dried oregano leaves
1/2 teaspoon sugar
1/4 teaspoon salt
1 dash pepper
hot pasta
fresh-grated parmesan cheese

Steps:

  • In a large saucepan, sauté garlic and onion in olive oil until onion is tender.
  • Stir all remaining ingredients in with onion mixture; heat to boiling; reduce heat and simmer, uncovered, for 45 minutes, stirring occasionally.
  • Carefully puree hot sauce in in a food processor or blender; serve hot over cooked pasta and top with fresh-grated Parmesan cheese.

Summertime is a time when really good tomatos are avalible. It is also the time of year you want to stay away from hours in front of a hot stove. This recipe is really quick and above all FRESH. The recipe is for 2 or 3 people but I see no reason you can't double it. It is a little spicey but the freshness makes this a great sauce. Make sure you get great tomatoes, it makes a big difference. Enjoy!

3 tomatoes
5 teaspoons olive oil (extra virgin)
1 Spanish onion
1/2 bell pepper (red)
4 garlic cloves
3 tablespoons basil (fresh)
1 tablespoon oregano (fresh)
1 tablespoon chives (fresh)
fresh ground black pepper
1/2 teaspoon red pepper flakes
1 teaspoon garlic powder
1 teaspoon sea salt
4 tablespoons tomato paste

Steps:

  • Chop tomatoes.
  • finely chop onion , bell pepper, garlic, and fresh herbs. Put olive oil and onions, bell pepper and garlic in iron skillet and cook over med high heat for 5 or so minutes. add tomatoes and all spices and cook covered for 15-20 minutes.add the tomato paste and cook till thickened. serve over half a box of cooked pasta . 1/4 cup extra-virgin olive oil
1 small onion, finely chopped
1 garlic clove, finely chopped
1 celery stalk, finely chopped
1 carrots, peeled and finely chopped
1/2 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
1 (32-ounce) cans crushed tomatoes
1 dried bay leaves

Steps:

  • In a large pot, heat the oil over a medium-high flame. Add the onions and garlic and saute until the onions are translucent, about 10 minutes. Add the celery, carrots, and 1/2 teaspoon each of salt and pepper. Saute until all the vegetables are soft, about 10 minutes. Add the tomatoes and bay leaves, and simmer uncovered over low heat until the sauce thickens, about 1 hour. Remove and discard the bay leaves. Season the sauce with more salt and pepper, to taste.
  • (The sauce can be made 1 day ahead. Cool, then cover and refrigerate. Rewarm over medium heat before using.)
