With summer coming soon, I'm posting salad dressing recipes with lower calories that are still high in flavor. This was originally in my local newspaper, The San Jose Mercury News.

1/2 cup light mayonnaise
1/4 cup parmesan cheese, grated
1/4 cup low-fat buttermilk
2 small garlic cloves, minced
1/2 teaspoon fresh parsley, minced
1/2 teaspoon fresh lemon juice

Steps:

  • Whisk together all ingredients in a small bowl. Chill before serving.

Parmesan lends great flavor to a dressing. This creamy Parmesan dressing makes a delicious dip for vegetables.

Number Of Ingredients 9

1/4 cup mayonnaise (reduced fat is acceptable)
1/4 cup parmesan cheese (grated)
3 tablespoons white wine vinegar
2 tablespoons sour cream
2 tablespoons fresh parsley (chopped)
1 tablespoon Dijon mustard
1 pinch fines herbes
salt & freshly ground black pepper
1/3 cup vegetable oil

Steps:

  • In a small bowl, mix together the mayonnaise, Parmesan, vinegar, sour cream, parsley, mustard, herbs, and salt and pepper to taste.
  • Whisk well.
  • Slowly add the oil, whisking constantly, until the dressing is emulsified.
  • Cover and chill the dressing until you are ready to use it.
  • Let stand at room temperature for 5 minutes before serving.
  • This dressing will keep for up to 5 days in an airtight container in the refrigerator.

Years ago in Florida, I came across an Italian restaurant with a delightful salad dressing. I've never been able to find a substitute so I tried to replicate the dressing. For best results, use homemade mayonnaise. Serve with salad greens.

2 tablespoons lemon juice
1 ½ ounces freshly grated Parmesan cheese

¼ teaspoon salt

Steps:

  • Combine mayonnaise, olive oil, lemon juice, Parmesan cheese, milk, lemon zest, pepper, and salt in a glass mason jar. Secure lid and shake until dressing is well combined. Store in the refrigerator.
