- To make the pastry: combine the flour, sugar, and salt in a large mixing bowl. Add the butter and mix with a pastry blender or hands until the mixture resembles coarse crumbs. Make a well in the middle of the pastry. Combine the egg yolk with the ice water in a small bowl, whisking to blend; pour it into the well and work it in to bind the dough until it holds together without being too wet or sticky. Squeeze a small amount together, if it is crumbly, add more ice water, 1 tablespoon at a time. Form the dough into a disk and wrap in plastic; refrigerate for at least 30 minutes.
- Roll out the pastry on a lightly floured surface into a 12-inch circle, about 1/4-inch thick. Carefully roll the dough up onto the pin (this may take a little practice) and lay it inside a 9-inch tart pan with a removable bottom. Press the dough into the pan so it fits tightly; press the edges into the sides of the pan. It is important to press the dough evenly into every nook and corner of the ring, especially the scalloped edges. Shave off the excess hanging dough with a knife. Put the tart in the refrigerator for 15 minutes to relax.
- Preheat the oven to 350 degrees F.
- Place the tart pan on a sturdy cookie sheet so it will be easy to move in and out of the oven. Line the tart with aluminum foil and add pie weights or dried beans to keep the sides of the tart from buckling. Bake for 30 minutes, then remove the foil and weights. Using a pastry brush, lightly coat the crust with a beaten egg white. Return to the oven and continue to bake for another 8 minutes until the tart is golden in color, but not brown. Remember the tart will be cooked again with the filling. It should be cooked but light in color so that it will not burn on the second bake. Set aside to cool and lower the oven temperature to 325 degrees F.
- To make the filling: Heat the heavy cream and milk in a pot over medium-low flame, until it simmers slightly around the edges. Remove from the heat; add the chopped chocolate and stir until melted and smoothed out. Add the sugar and salt and whisk until well incorporated. Beat the eggs in a small bowl until blended and add them to the chocolate mixture, stir until completely blended. Pour the filling into the cooled tart shell and bake at 325 degrees F for 15 to 20 minutes until the filling is set and the surface is glossy. If you see any bubbles or cracks forming on the surface, take the tart out right away - that means it is beginning to become over baked. Cool before cutting.

- Preheat oven to 400°F.
- For the shells, combine the flour and salt. Cut in the shortening with a pastry blender until the mixture resembles coarse meal. Sprinkle cold water evenly over the surface. Stir with a fork until all the dry ingredients are moistened. Shape the dough into a ball and chill.
- When chilled, roll the dough to 1/8 inch thickness on a lightly floured surface. Cut into 3 1/4 inch rounds. Fit each pastry round into 3 inch tart pans. Prick with a fork.
- Bake in a preheated oven for 10-12 minutes. Let cool.
- Place the butter in the top of a double boiler. Bring the water in the double boiler to a boil. Reduce the heat to low, and cook until the butter melts. Combine the sugar and cornstarch, stirring well. Add to the butter and stir until smooth. Stir in the eggs and cook for 5 minutes, stirring constantly.
- Add the lemon juice. Cook 3-4 minutes longer or until the mixture thickens, stirring constantly. Cool. Spoon a rounded tablespoon of lemon filling into each cooled tart shell.
- Before serving, top each tart with a dollop of whipped cream, if desired. Makes 22 tarts.

Sprinkle with water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost leaves side of bowl (1 to 2 teaspoons more water can be added if necessary). Gather pastry into a ball. Shape into flattened round on lightly floured surface. Wrap flattened round in plastic wrap and refrigerate 45 minutes or until dough is firm and cold, yet pliable. This allows the shortening to become slightly firm, which helps make the baked pastry flaky. If refrigerated longer, let pastry soften slightly at room temperature before rolling. Using floured rolling pin, roll pastry on lightly floured surface (or pastry board with floured pastry cloth) into round 2 inches larger than upside-down 9-inch glass pie plate or 3 inches larger than 10- or 11-inch tart pan. Fold pastry into fourths and place in pie plate or tart pan, or roll pastry loosely around rolling pin and transfer to pie plate or tart pan. Unfold or unroll pastry and ease into plate or pan, pressing firmly against bottom and side and being careful not to stretch pastry, which will cause it to shrink when baked. For pie, trim overhanging edge of pastry 1 inch from rim of pie plate. Fold edge under to form standing rim; flute edges (see Decorative Crust Ideas, page 00). For tart, trim overhanging edge of pastry even with top of tart pan. Fill and bake as directed in pie or tart recipe.

- Preheat oven to 350 degrees F (175 degrees C). Place the tart shells onto a baking sheet lined with parchment paper.
- In a bowl, mash the brown sugar and butter until thoroughly combined, then mix in corn syrup, eggs, and salt to make a smooth mixture. Spoon into the tart shells, filling each one about 3/4 full.
- Bake in the preheated oven until golden brown and the filling is set, 25 to 30 minutes.

AWARD-WINNING BUTTER TARTS
Butter tarts are a Canadian tradition. Waaaay back in the 1970s, a national contest here in Canada concluded that these butter tarts, originating from Wilkie's Bakery in Orillia, Ontario, were the best. I certainly think so and it's the only recipe I use. Add a sprinkle of toasted walnuts when you add the raisins, if you wish, or use only walnuts if you don't like raisins.

- Prepare muffin pans by rolling out pie dough and cutting 4-inch (approx) circles; fit dough circles into muffin cups; set aside in fridge until ready to fill.
- In a small bowl, place raisins and cover with hot tap water; let stand on the counter for 30 minutes.
- In a large bowl, using a wooden spoon, mix together the soft butter, brown sugar, salt and corn syrup; stir well until sugar is dissolved and butter is creamed.
- Add egg and vanilla and mix well.
- Drain raisins.
- Retrieve tart shells and divide raisins equally into all shells; then divide butter mixture into all tarts.
- Bake at 400F for 15-20 minutes; filling will be lightly browned but still bubbling.
- Canadians fall into two camps about butter tarts and are quite loyal to their favourite type: runny or firm.
- I like runny-- the type that dribbles when you bite into one; if you like firm, bake them for the full 20 minutes, even adding another minute or two if you wish.
- Let cooked butter tarts cool in pans for 10 minutes after removing from oven; then remove and place on racks until completely cool.

- Preheat oven to 375°F.
- Prepare pastry dough; cut in circles and line 3-inch tart pans with pastry circles.
- Combine balance of ingredients.
- Spoon mixture into unbaked pastry lined pans, filling each no more than 2/3 full (if the filling bubbles over it makes one heck of a mess!). Bake for 20 minutes or until filling has cooked and pastry is golden.
- Notes: This can be made without the raisins or nuts, but they are very plain.
- I generally make these with a combination of nuts and raisins.
- Craisins can be substituted for the raisins.
- For Jam Tarts: Line tart pan cups with pastry.
- Fill cups 1/2 full with your choice of jam.

- Butter Tart Pastry
- Sift flour, salt and sugar together.
- Using pastry blender cut butter into flour mix until resembles course meal.
- Add cold water a bit at a time until dough just starts to hold together. (too much water will make for a tough dough).
- Press dough together and shape into disk.
- Wrap in plastic wrap and refrigerate for at least 30 minutes.
- Roll out tart dough and cut 16 4-inch circles.
- Press dough in muffin cups (try not to stretch dough).
- Refrigerate until filling is prepared.
- Butter Tart Filling
- In large bowl, mix together butter, brown sugar and corn syrup. Stir until butter is creamed and sugar is dissolved.
- Add eggs, vanilla and pinch of salt. Mix well.
- Fill tart shells with filling.
- Bake 400F for 15-20 minutes.
- Filling should be lightly browned and still bubbling.
- Let tarts cool in pan for about 10 minutes, then transfer to rack to cool completely.

- Beat eggs; add sugar, syrup, vinegar, vanilla, and butter; mix well to combine thoroughly
- Stir in currants
- Preheat oven to 350°F
- Roll pastry and cut with fluted cookie cutter
- Place each pastry cutout into mini-tart shell mold ; fill each shell ¾ full with filling (if too fill, filling will boil over and tart will stick to pan and appear unappealing)
- Bake 8 - 12 minutes at 350°F until pastry is golden; watch carefully after 8 minutes
- Cool for 5 minutes in pan on cooling rack; use a butter knife, or dull knife to loosen each tart from pan as some filling usually creates a little sticking
- Place each on cooling rack; pack carefully in tightly sealed labeled and dated container until needed, placing parchment or plastic wrap between layers
- Freezes beautifully up to 3 months
IRISH APPLE TART RECIPE
This is my Nanny Betty's Traditional Irish Apple Tart recipe. This shortcrust Irish apple tart is made how my nan and my wife love it. The apples are soft and sweet with just a touch of tartness. Fantastic with fresh whipped cream and a nice cup of tea. Just as my nan and wife love it.

- Sift the flour in to a large mixing bowl along with the salt and caster sugar. With a knife cut the butter into small pieces and add to the flour. My nan would would always hold the block of butter and with a butter knife cut slivers off into the flour.
- Rub the soft butter into the flour to create a breadcrumb like consistency. The key to a light pastry is to rub the butter into the flour while holding your hands above the bowl. This allows the flour to fall keeping air in the mixture and preventing a tough pastry.
- Once the butter is combined add the water or milk and mix with your hand in a claw shape to bring the mixture clings together. Empty the bowl out onto a floured work surface and fold to bring all the mixture together into a smooth pastry.
- Wrap pastry in clingfilm and place in your fridge to rest for approx 20 min. While this is resting you can preheat your oven to 200°C / 400°F / Gas Mark 6 then wash, peel and core your cooking apples then slice them and place in a bowl. You can sprinkle a little lemon juice over them to prevent them browning if you like but don't put them in a bowl of water. They will just absorb the water and you will loose a lot of flavour.
- Once this is complete you can take your pastry out and divide it into two balls, one slightly bigger than the other. The small pastry ball will be used for the base while the bigger will be used for the top as it will need to cover the mound of sliced cooking apples.
- My nan always used a dinner plate that had deep sides to make her apples tarts so that is what I use. If you like you can use a 23cm/9inch pie plate. Roll out the smaller pastry while keeping the second covered. Roll it to the size of your plate while leaving a little to overlap the edge.
- Take half of your apple slices and layer them around the pastry covering the base. Sprinkle half of your sugar over the layer then add the remaining apples followed by the last of the sugar ensuring that space is left around the edge of the pastry.
- Roll out the bigger ball of pasty to a size slightly bigger than the plate. Take a little bit of water or egg wash and rub it around the edge of the bottom layer of pastry. Transfer the top layer of pastry by rolling it over your rolling pin and folding it out over the apples. Ensure that there is a little bit of pastry hanging over the edge and pull and stretch to fit if needed.
- With a sharp knife, hold the plate up with one hand and with the other hand run the edge of the blade around the plate to cut off the excess pastry. I use to love watching my nan doing this and she always seemed to trim it all in one smooth motion. A little twist of the wrist and the sound of the knife on the plate brings back fond memories.
- Take a fork or the edge of a butter knife and press all around the edge of the pastry to seal. You can be as decorative as you like to create a nice, sealed crust.
- With the remaining pastry you can create little decorations for the apple tarts like leaves. This was always my job when I was a kid and I loved that I could help my nan out.
- Prod the pastry with a fork to allow the steam to release or cut four slits into the pastry near the center.
- Brush the pastry with a little milk or egg yolk mixed with milk to create a golden crust.
- Bake in the preheated oven for 30 minutes or until the pastry is nice and golden brown. When cooked the apples should be soft and sweet and the pastry should be fully cooked through and golden.
- The apple tart can be served dusted with a little icing sugar and a nice bit of fresh whipped cream. It is always better with a nice Irish cup of tea just as nanny Betty like. You can't be that. Enjoy.

- Allow pie crusts to stand at room temperature for 15 minutes to soften (take pouches out of box but leave unopened until ready to use).
- Gently unroll crust. With 4-inch (10 cm) round cutter, cut 6 rounds from each crust. To get the last round you will need to re-roll the scraps of dough to same thickness as original crust. If you don’t have a 4-inch cutter, a large glass or mug will work (just be sure it is 4-inches in diameter). Using a metal lifter transfer each round to ungreased 12-cup muffin pan. Ease the pastry into each cup, gently pressing sides to edges of muffin cups (don’t press the bottoms).
- Pour boiling water over raisins. Allow to stand 7 minutes. Meanwhile in a small saucepan, over medium-low heat, melt butter. Continue heating and stir in brown sugar, salt, corn syrup and vanilla. Add beaten egg and stir constantly until mixture is very hot, but not boiling. Remove from heat. Drain raisins and stir into mixture.
