BLACK DIAMOND MARINATED STEAKS
Just in time for grilling season! I've posted this recipe in response to a request. Prep time includes marinating steaks.

- Mix marinade ingredients together.
- Score steak on both sides.
- Marinate steaks for 8 to 10 hours.
- Grill 6 to 8 minutes per side.
BLACK DIAMOND STEAK
The marinade for the steak is a unique blend of sweet, salty, and savory. It won't overpower the natural steak flavors but rather it enhances them. So even those steak purists who shun marinades will find this one appealing!

Steps:
- Score the steaks on both sides and set aside. Combine the oil, soy sauce, honey, brown sugar, vinegar, ginger, and garlic powder in a zip-top plastic bag. Mix well. Add the steaks to the marinade, seal the bag, and turn to coat them evenly in the marinade. Place in the refrigerator and let marinate for 8-10 hours. When ready to cook, preheat the grill to medium-high heat. Remove the steaks from the marinade (discard the marinade). Place the steaks on the grill and cook over direct heat for 6-8 minutes per side or until desired doneness (actual cook time will depend on the thickness of the steaks). Remove the steaks from the grill and let sit covered lightly with foil for 5 minutes before serving.

EMILY'S MARINATED VENISON STEAKS
I threw this together one afternoon, as we needed to use up the venison we had in our freezer. We don't like the 'gamey' taste of some meats, and this marinade did the trick! I find it best to have the meat marinate overnight so it really takes in the flavors.

- Whisk Worcestershire sauce, soy sauce, lime juice, onion, red pepper flakes, dry mustard, salt, thyme, black pepper, garlic, and hot pepper sauce together in a bowl; pour into a resealable plastic bag. Add venison steaks, coat with the marinade, squeeze to remove excess air, and seal the bag. Marinate in the refrigerator at least 1 hour.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Remove venison from the marinade and shake off excess. Discard remaining marinade.
- Cook the steaks until they are firm, hot in the center, and just turning from pink to grey, about 5 minutes per side. An instant-read thermometer inserted into the center should read 150 degrees F (65 degrees C).

BETTER THAN A-1 MARINADE FOR STEAKS

Steps:
- Combine soy, oil, sugar, Worcestershire, garlic, chives, and pepper in medium bowl. Remove 1/4 cup marinade and combine with vinegar in small bowl; set aside.
- Place remaining marinade and steaks in gallon-size zipper-lock bag; press out as much air as possible and seal bag. Refrigerate 1 hour, flipping bag after 30 minutes to ensure that steaks marinate evenly.
- Remove steaks from marinade, letting any excess marinade drip back into bag. Discard bag and marinade. Grill steaks as desired.
- Transfer steaks to shallow pan and pour reserved marinade over top. Tent loosely with foil and let rest 10 minutes, turning meat halfway through. Slice steak or serve whole, passing reserved marinade if desired.

- Combine the brown sugar, whiskey, apple cider vinegar, olive oil, Better Than Bouillon, onion powder, garlic powder, rosemary, garlic, salt, and black pepper in a large glass measuring cup. Stir with a spoon to combine.
- Place the steaks in a large zip-style freezer gallon bag and pour the marinade over steaks. Refrigerate for 4 to 24 hours. When ready to cook, allow the steaks to come to room temperature while preparing the grill.
- Grill the steaks on medium-high heat for about 6 minutes on each side, or until desired doneness is reached. Transfer the steaks to a plate or half sheet pan lined with parchment paper or aluminum foil. Cover with aluminum foil to keep warm and allow to rest for 5 minutes.
- Slice on a cutting board. Serve the steak over a fresh garden salad, or serve with seasonal vegetables, and mashed potatoes.

BLACK DIAMOND STEAK MARINADE
I adapted this from another black diamond recipe that I thought was a little sweet (that one had honey in it too which i guess you could add.) This is DEFINITELY my "go to" marinade, and I've used it on chicken as well. Hubby doesn't want any other type of marinade any more...and this one is so easy and so good, neither do I! ...

Steps:
- 1. Score steaks on both sides then put in a large re-sealable bag.
- 2. Mix all marinade ingredients together in a bowl until sugar is dissolved and all are incorporated together.
- 3. Pour marinade over the steaks in the bag and as you seal the bag try to get as much air out of is as possible.
- 4. Marinate in refrigerator overnight or 24 hours.
- 5. Grill to your desire likeness.

- Ribeye steak. And now, the best of them all: Ribeye steak. This cut of beef is taken from the rib of the cow (of course) and is easily one of the most prized and sought-after varieties of steak out there.
- Tenderloin steak. Ah, tenderloin. Now we're in the big leagues. The tenderloin is cut from the short loin of the cow, and, because of the nature of the muscle it derives from, contains very little connective tissue.
- Hanger steak. Hanger steak isn't the most popular cut of beef out there. You certainly won't find it up on the fancy steakhouse menus with filet mignon, ribeye or porterhouse.
- Porterhouse steak. Okay, maybe you can do a little better. To all but the most discerning eye, the porterhouse steak is pretty much the exact same cut of steak as the T-bone steak.
- Flat iron steak. Also known as butler's steak or boneless top chuck steak, flat iron steak is a relatively modern cut of beef as far as butchering techniques go.
- T-bone steak. A T-bone steak is cut from the forward section of the short loin on a steer, and contains both a strip of top loin (i.e. a strip steak) and a nice big slab of tenderloin.
- Top sirloin. Now we come to the other part of the sirloin, and by far the better choice for steak fans. The top sirloin comes from — you guessed it — the upper portion of the sirloin butt, and is usually presented in the form of a tender, boneless steak.
- Vacio or bavette steak. One of the steaks you might not have heard of is the vacio steak, an extremely popular steak in Argentina (but it's available here too).
- Strip steak. Otherwise known as the New York strip, the ambassador steak, the strip loin steak, the Kansas City strip, the club steak, the Omaha steak, or whatever other name you care to give it, the strip steak is a cut of meat that comes from the short loin, which is located in the top-center of the cow's body, just in front of the sirloin.
- Bottom sirloin. The sirloin is one of the most famous cuts of beef, but it's actually generally divided up into three smaller cuts: the top sirloin, the bottom sirloin, and the rear part of the tenderloin.
