SEARED TUNA IN WASABI SAUCE

This tuna is seared and still raw insde so be sure to get sushi quality tuna. I myself like it that way!

1 1/4 cups white wine
2 tablespoons limes
1/4 cup onion, minced
1 piece fresh ginger, size of a quarter and crushed
1 garlic clove, left whole and but crushed
2 -4 tablespoons wasabi paste
1 tablespoon soy sauce
1/2 cup unsalted butter
1 cup fresh cilantro leaves or 1 cup fresh parsley
6 (6 ounce) tuna steaks
1 tablespoon olive oil
salt and pepper

Steps:

  • Combine wine, lime, onion, ginger and garlic in a saucepan over medium heat. Simmer to reduce to about 2 tablespoons.
  • Place reduced sauce in blender with the butter, soy and wasabi and blend till smooth and butter is melted.
  • Place in a bowl.
  • Stir in cilantro.
  • Preheat grill high. It needs to be very hot!
  • Mix olive oil and 1 tablespoon sauce together. Brush tuna steaks with the sauce and oil mixture.
  • Grill for 90 seconds then turn and continue grilling for 90 seconds more.
  • If you just want the tuna seared remove from grill now. Otherwise continue grilling for 1 minute on each side again.
  • Serve tuna topped with the yummy sauce.

4 tuna steaks (1-inch thick)
vegetable oil, for brushing tuna
1 1/2 teaspoons crushed black peppercorns
1 tablespoon minced fresh dill
3 scallions, sliced thin
1 teaspoon minced fresh coriander (I use dry)
1 1/2 tablespoons fresh lime juice
3 tablespoons soy sauce
1 1/2 tablespoons wasabi paste
6 tablespoons cold unsalted butter, cut into pieces

Steps:

  • Arrange tuna steaks in one layer in a shallow dish and lightly brush both sides with oil.
  • Spread peppercorns and dill evenly on both sides of tuna and marinate 20 minutes.
  • Grill tuna on a oiled rack set about 5-6 inches over glowing coals. 3 minutes on each side for medium-rare fish. (Alternatively, grill tuna in a preheated oiled well-seasoned ridged grill pan).
  • Make sauce while tuna marinates:.
  • In a heavy saucepan combine scallions, coriander, lime juice, soy sauce and wasabi paste and bring to a boil.
  • Reduce heat to low and whisk in butter, 1 piece at a time, lifting pan from heat occasionally to cool mixture and adding each new piece before previous one has melted completely. (Do not allow sauce to simmer. Sauce should not get hot enough to seperate).
  • This dish goes well served with garlic mashed potatoes and french green beans.

If you like a good piece of tuna and you like wasabi, you are in for a real treat! Buy sushi-grade tuna so you don't have to cook the heck out of the fish. Tuna is best served when the middle is room temp. However, even if you like your fish charbroiled, you will love the wasabi sauce with it!

12 ounces white wine, open a good bottle, reserve the remainder for dinner
2 tablespoons white wine vinegar
1/4 cup shallot, minced fine
1 -3 tablespoon wasabi powder, according to taste
1 tablespoon low sodium soy sauce
1/4 cup unsalted butter, cubed
salt and pepper
olive oil, for brushing on the fish
6 (6 ounce) sushi-grade tuna steaks, about 1-inch in thickness

Steps:

  • In a small saucepan, over medium heat, combine the wine, vinegar and shallots.
  • Simmer until reduced to about 2 T. of liquid.
  • Strain through a fine-mesh strainer, return the liquid to the pan, discard the shallots.
  • Whisk in the wasabi and soy sauce.
  • Over low heat, gradually whisk in the butter, on piece at a time, allowing the mixture to emulify.
  • Do not let the mixture boil.
  • When all the butter has been mixed in, remove from heat, pour into a small bowl and set aside.
  • Brush the tuna steaks with a little oil.
  • Either pan sear or BBQ to desired doneness.
  • 3 minutes per side will leave a rare center.
  • 5 minutes per side will be "pink".
  • Watch closely, though.
  • Serve with the sauce.

1/4 cup reduced-sodium teriyaki sauce
1 tablespoon rice vinegar
2 teaspoons sesame oil
4 tuna steaks (8 ounces each)
1/2 cup wasabi mayonnaise
2 tablespoons chopped green onion
2 teaspoons lemon juice

Steps:

  • In a large resealable plastic bag, combine the teriyaki sauce, vinegar and oil; add tuna. Seal bag and turn to coat; refrigerate for up to 1 hour. Meanwhile, in a small bowl, combine the mayonnaise, onion and lemon juice until blended. Refrigerate until serving. , Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack.   • Whisk 1/2 cup water and wasabi powder in medium bowl to form smooth paste. Whisk in soy sauce, 2 tablespoons peanut oil, sherry, and sesame oil. Set aside.

1/2 gallon orange juice

1 1/2 quarts olive oil
Field greens
Sesame seeds
Marinated tuna

Steps:

  • Mix the wasabi and soy sauce together in a bowl, then marinate the tuna in the mixture for 30 minutes, refrigerated.
  • Place all ingredients except olive oil in a saucepan and reduce by 1/2. Blend in the olive oil with a whisk to emulsify.
  • Toss the tuna in sesame seeds. Pan sear the tuna to the desired doneness. Toss field greens in the orange ginger dressing. Arrange the greens on a plate. Slice the tuna and place on the greens.

1/2 cup mayonnaise
1 tablespoon honey
1 tablespoon soy sauce
Zest of 1 lemon plus 1 tablespoon lemon juice
1/2 teaspoon prepared wasabi paste
One 10-ounce box extra-crispy tempura batter mix
1 1/2 cups cold seltzer, or as needed
1 tablespoon soy sauce
Two 1-inch-thick tuna steaks
Kosher salt and freshly ground black pepper
All-purpose flour, for dusting
Peanut oil, for frying
Everything bagel seasoning, for sprinkling, optional

Steps:

  • For the sauce: In a medium bowl, mix together the mayonnaise, honey, soy sauce, lemon zest and juice and wasabi. Taste--it should be salty, sweet and a bit tangy. Balance the seasoning if needed. Refrigerate.
  • For the tuna: In a large bowl, mix together the tempura batter, cold seltzer and soy sauce. You want the batter to have a pancake-like consistency; you may not need all the seltzer. Set aside in the refrigerator.
  • Slice the tuna against the grain into 3/4- to 1-inch-thick sticks. You should be able to make 4 to 5 sticks from each tuna steak. If using skewers (not needed), push one down the center of each. Dust each tuna stick all over with salt and pepper, then some flour. Transfer to a baking sheet lined with parchment paper and freeze for 30 minutes.
  • Meanwhile, add enough oil to a pot to deep-fry the fish sticks and heat to 375 degrees F.
  • When ready to fry, remove the batter from the refrigerator and the floured tuna from the freezer. Check all sides to make sure the flour is still dusty and not soaked in; sprinkle with flour again if needed, then dip into the batter and fry until golden, about 2 1/2 minutes. Remove and season immediately with everything bagel seasoning or a pinch of salt. Serve with the dipping sauce.

YELLOWFIN TUNA WITH WASABI CREAM

1 tablespoon whole black peppercorns
1 tablespoon whole green peppercorns
1 tablespoon whole red peppercorns
1 pound of sushi grade yellowfin tuna, cut into a long, thin strip
2 tablespoons canola oil
2 cups low sodium soy sauce
1 cup orange juice
1/2 cup heavy cream
2 tablespoons wasabi powder

Steps:

  • In a spice grinder, coarsely grind peppercorns. Coat the tuna with the peppercorns, pressing them into the flesh of the fish. Add oil to a hot saute pan. Sear the tuna in the saute pan, for about 1 minute per side. Remove tuna from the pan and slice into 1/4 inch thick slices. In a saucepan, combine the soy sauce and orange juice and bring to a boil. Boil the soy sauce mixture until reduced by 70 percent and has achieved a syrup consistency. Cool. Whip the cream. Fold in the wasabi powder. Drizzle a little orange soy sauce onto each slice of tuna. Top with a little wasabi cream.

1 1/2 tablespoons mirin
1/4 cup Wasabi-Yuzu, recipe follows
16 slices raw tuna, approximately 1-ounce each
Coarse sea salt to garnish
1 tablespoon rice vinegar
1 tablespoon yuzu juice
4 tablespoons mirin
1 tablespoon wasabi powder
2 tablespoons wasabi mustard
2 tablespoons soft tofu

Steps:

  • Place the assorted sliced radishes in a medium mixing bowl with the mint, cilantro and radish sprouts. Add the yuzu juice and mirin and toss until well combined. Divide the salad equally to the center of 4 chilled plates. Shingle 4 slices of tuna over each mound of salad. Drizzle some Wasabi-Yuzu around the radish salad on each plate. Finish by sprinkling a light amount of sea salt over the tuna slices.
  • Combine all the ingredients in the cup of a hand-held blender. Blend until smooth.
  • 1/2 cup (leftover sauce can be reserved for another use)

4 (4 ounce) pieces sushi grade tuna
Vegetable oil
1 pineapple, diced
1 red bell pepper, diced
4 avocado, peeled and sliced
1 cup flour, sifted
1 egg
1 cup cold water
1-ounce wasabi
6 ounces heavy cream
Salt and pepper
Seaweed

Steps:

  • Preheat a fryer to 360 degrees F. Begin by mixing the cumin and pepper in a small bowl. Dip and coat each tuna steak in the cumin mixture. In a hot skillet coated with oil, sear each tuna steak for approximately 2 minutes on each side. Remove from the pan and set aside. The tuna should still be pink.
  • In a hot wok or skillet, saute the diced pineapple and red bell pepper for 2 minutes. Remove from wok and set aside.
  • Prepare the tempura batter right before you are ready to fry. The avocados should be peeled and sliced into 1/2-inch thick slices. To make the batter, mix the flour, egg, and cold water together until all of the ingredients have combined. Dip each avocado piece into the batter and fry until golden, approximately 1 minute. Remove the fried avocado pieces and season.
  • To make the wasabi sauce, combine the wasabi paste and heavy cream in a small saucepot. Bring the sauce to a boil and let reduce. Once the sauce has reduced you are ready to serve.
  • To serve this dish, place the avocado tempura in the center of each plate. Top with tuna and surround with the seaweed. Add a spoonful of the pineapple and peppers, and drizzle some of the wasabi sauce around the plate.

24 ounces ahi tuna steaks, around 1-inch thick
2 tablespoons dark sesame oil
salt and pepper
1/2 cup butter
3 tablespoons soy sauce
2 tablespoons wasabi paste (the tube kind)
3 green onions, sliced
2 tablespoons fresh lemon juice
lemon slice (for garnish)

Steps:

  • Drizzle sesame oil on both sides of each tuna steaks. Season with salt and pepper.
  • Combine remaining ingredients in a small sauce pan. Heat over low heat until butter is melted, stirring constantly to mix and prevent scorching.
  • While sauce is heating, heat a heavy frying pan on another burner with high heat. Place tuna in pan and sear until crispy and brown. Turn and sear on the other side.
  • Note: Tuna steak fans who like their tuna on the rare side (like me) will usually find 2 minutes searing time is ample. Folks who like their tuna steaks more well-done (like my DH) may want to sear their tuna for 4-5 minutes per side.

3 tbsp soy sauce
1 tbsp rice wine vinegar
1 tbsp caster sugar
2 tuna steaks , each about 140g/5oz
500g potato
100ml semi-skimmed milk
2 tsp wasabi paste (see Know-how)
1 spring onion , finely sliced
frozen broad bean or soya beans, to serve

Steps:

  • Mix together the soy sauce, vinegar and sugar. Pour over the tuna and marinate for at least 20 mins or up to 2 hrs in the fridge. Place the potatoes in a pan of lightly salted boiling water, then cook for 10-15 mins until soft. Drain well. Heat the milk in the pan and mix in the wasabi, return the potatoes to the pan, then mash until smooth. Stir through the spring onion and keep warm.
  • Heat a non-stick griddle pan until smoking hot. Remove the tuna from the marinade. Cook on the griddle for 2-3 mins on each side until seared on the outside, but still pink inside. Cook the broad or soy beans according to pack instructions, then serve alongside the tuna and mash.

2 egg yolks
1/4 cup honey
2 tablespoons wasabi powder
1/2 cup canola oil
2 tablespoons cold water
4 (6 ounce) tuna steaks (center-cut, sushi grade)
1/2 cup sweet soy sauce
3 tablespoons sesame oil
2 tablespoons garlic, chopped
2 tablespoons gingerroot, chopped fresh
8 pieces baby bok choy
1/2 lb shiitake mushroom, sliced

Steps:

  • For sauce: combine egg yolks, honey and wasabi powder in a food processor and process on high until completely blended. Slowly add the oil. Add water to thin it out to sauce-like consistency. Place in a squeeze bottle.
  • For tuna: rub tuna steaks with a little of the soy sauce. Grill about 2 minutes per side, until medium-rare.
  • Heat a large saute pan or wok over medium-high heat. Add the sesame oil.
  • Add the garlic and ginger and sauté for 30 seconds. Add remaining vegetables and cook until wilted. Toss with remaining soy sauce.
  • Arrange vegetables on plates. Slice grilled tuna and arrange over the vegetables. Drizzle with the wasabi-honey sauce. Garnish with sesame seeds.

1 teaspoon water
1 tablespoon rice vinegar
2 tablespoons mayonnaise
1 garlic clove (crushed)
1 tablespoon soy sauce
1 tablespoon vegetable oil
1/2 teaspoon wasabi powder or 1/2 teaspoon dry hot mustard
2 fresh tuna steaks (1 1/2 lbs total, 1 1/2 inch thick)

Steps:

  • -----------Sauce-------------.
  • In a bowl mix wasabi and water to make a paste.
  • Let stand 10 minutes.
  • Stir in vinegar, mayonnaise and garlic.
  • Set aside.
  • ---------Tuna-----------.
  • Prepare grill with medium-hot coals.
  • In a cup, mix the soy sauce, oil, and wasabi powder.
  • Brush on tuna.
  • Grill for 3-4 minutes on each side for rare tuna.
  • Thinly slice the tuna and serve with the Wasabi sauce.

4 5- to 6-ounce tuna steaks, each about 1 inch thick
1/4 cup purchased teriyaki marinade
3 tablespoons butter, room temperature
2 tablespoons (about) wasabi powder (horseradish powder)
2 tablespoons chopped fresh chives
1 tablespoon light olive oil

Steps:

  • Place tuna in shallow glass dish. Pour marinade over and turn to coat. Let tuna stand 10 minutes at room temperature, or cover and refrigerate 1 hour. Mix butter, wasabi powder, and chives in small bowl.
  • Prepare barbecue (medium heat). Remove tuna from marinade; brush on both sides with oil. Sprinkle with salt and pepper. Grill fish, brushing occasionally with remaining marinade, about 2 minutes per side for medium-rare. Transfer to platter. Top with wasabi butter and serve.

2 tablespoons wasabi powder (horseradish powder)*
1 1/2 tablespoons water
1/2 cup mayonnaise
1 pound fresh tuna steaks, cut into 3/4-inch cubes
2 1/2 tablespoons soy sauce
28 large slices pickled ginger*
28 8-inch wooden skewers
1 bunch watercress
1 teaspoon freshly ground black pepper
1 tablespoon vegetable oil

Steps:

  • Mix 2 tablespoons wasabi powder and 1 1/2 tablespoons water in small bowl to blend. Whisk in 1/2 cup mayonnaise. Cover wasabi mayonnaise and refrigerate at least 30 minutes. (Can be made 1 day ahead. Keep refrigerated.)
  • Combine tuna and soy sauce in medium bowl; toss to coat. Marinate tuna 30 minutes at room temperature, stirring occasionally.
  • Meanwhile, thread 1 ginger slice onto each skewer 2 inches from tip.
  • Line platter with watercress. Place bowl of wasabi mayonnaise on platter. Drain tuna; pat dry. Return to medium bowl. Sprinkle with pepper; toss to coat. Heat oil in large skillet over medium-high heat. Add tuna and sear until browned on all sides but still pink inside, about 2 minutes total. Thread 1 tuna cube onto each prepared skewer next to ginger. Arrange skewers on platter and serve.
  • *Available at Japanese markets and specialty foods stores and in the Asian foods section of some supermarkets.

I've had the seared tuna in nice restaurants, but this is better than all of them. One tablespoon of wasabi sounds like a lot of heat, but somehow this cooking method mellows it to almost nothing, just leaves the flavor. Really really great.

2 tablespoons white wine vinegar
10 fluid ounces white wine
¼ cup minced shallots
1 tablespoon wasabi paste, or to taste
1 tablespoon soy sauce
1 cup unsalted butter, cubed
salt and black pepper to taste
1 tablespoon olive oil, or as needed
1 cup chopped cilantro leaves
6 (6 ounce) fresh tuna steaks, 1 inch thick

Steps:

  • Combine the white wine vinegar, white wine and shallots in a small saucepan over medium heat. Simmer until the liquid is reduced to about 2 tablespoons. Strain out shallot and discard, return liquid to the pan.
  • Stir the wasabi and soy sauce into the reduction in the pan. Over low heat, gradually whisk in butter one cube at a time allowing the mixture to emulsify. Be careful not to let the mixture boil. When all of the butter has been incorporated, stir in cilantro, and remove from heat. Pour into a small bowl, and set aside.
  • Heat a large skillet over medium-high heat. Brush tuna steaks with olive oil, and season with salt and pepper. Place in the hot skillet, and sear for 3 to 5 minutes on each side. Be careful not to overcook, this fish should be served still a little pink in the center. Serve with sauce.

1 cup uncooked white rice
1 red bell pepper
olive oil
2 big handfuls of fresh spinach leaves that have been washed carefully
1 garlic clove, minced
1 tablespoon white wine vinegar
1/4 cup unsweetened coconut milk
2-3 tablespoons sugar
2-3 tablespoons wasabi powder
6- to 8-ounce cut of sashimi-grade tuna
shredded coconut and/or parsley (for garnish)

Steps:

  • 1. Make white rice according to the directions on the package . . . Set aside . . .
  • 2. Roast the red pepper. (To do this, remove the burner on a gas stove and hold the pepper with tongs over the open flame until its skin blackens - and open your windows to let out the fumes. If you don't have a gas stove, fire up your broiler, cut the pepper in half, and place it skin-side up on a cookie sheet under the broiler. Once the skin is black, let it cool.) Set aside . . .
  • 3. Add a tablespoon or two of olive oil to a pan, and sauté spinach with a little fresh minced garlic and some white wine vinegar . . .
  • 4. Towel-dry cooked spinach (so that when you add it to the rice, the moisture in the cooked spinach doesn't make the rice sticky) . . . set aside to let the spinach dry further . . .
  • 5. Cut up the roasted red pepper into bite-sized pieces and add to rice . . .
  • 6. Add spinach to the rice and fluff the rice, mixing the red pepper, rice, and spinach into an attractive pilaf . . . set aside . . . on a low burner if you'd like to keep it warm . . .keep an eye on it so it doesn't overcook or scorch . . .
  • 7. Pour about 1/4 cup of coconut milk into a sauté pan . . .
  • 8. Add equal parts sugar and wasabi powder (around two or three tablespoons each . . . whatever your taste) to the coconut milk as you gradually increase heat to allow the sugar and wasabi to melt into the coconut milk . . . be careful not to scorch . . . set aside . . . over low heat to keep warm . . . careful not to let the sauce break up . . . not too much heat . . .
  • 9. Over high heat . . . in a cast-iron skillet . . . with a touch of olive oil if you like . . . pan-sear the tuna . . . rare . . . or to your liking . . .
  • 10. Put the rice pilaf onto a plate . . . put the tuna on top of the rice . . . and ladle some of the wasabi-coconut sauce over the tuna . . . shredded coconut makes a nice garnish on this one . . . as does parsley.

ten 8-inch bamboo skewers, soaked in water 30 minutes

Steps:

  • In a bowl stir together mayonnaise, soy sauce, sugar, and lemon juice. Transfer 2/3 cup soy mayonnaise to a small bowl and stir in wasabi paste. Stir tuna into remaining 1/3 cup soy mayonnaise. Chill wasabi mayonnaise, covered, at least 1 hour and up to 24. Marinate tuna, covered and chilled, at least 1 hour and up to 24.
  • Prepare grill.
  • Thread 2 tuna cubes onto each skewer and grill on an oiled rack set 5 to 6 inches over glowing coals until just cooked through, 2 to 3 minutes on each side. Serve tuna satés with chilled wasabi mayonnaise.
