An easy to throw together side dish with inexpensive cabbage!

Number Of Ingredients 3

1/4 medium green cabbage
2 tablespoons butter (or more if you are feeling decadent)
salt and pepper

Steps:

  • Core and very thinly slice the cabbage.
  • Melt the butter in a large skillet (I use non-stick) over medium heat. When it is bubbling, add the cabbage. Salt and pepper the cabbage.
  • Stir occasionally and cook until mostly wilted, about 10 minutes.
  • Turn the heat down to medium-low and let cook, stirring frequently, until cabbage is starting to caramelize (brown), about 10 minutes. Do not let burn.

1 small red or green cabbage
2-3 tablespoons avocado oil or high heat oil
Kosher salt or flaky sea salt

Steps:

  • Preheat a large cast-iron skillet over medium-high for 5 minutes.
  • Meanwhile, cut cabbage in half, top to bottom. Then lay cut-side down and slice crosswise into ½- to ¾-inch planks.
  • Decrease heat to medium, add 1 tablespoon oil to skillet and swirl to coat, place about 4 cabbage planks in an even layer in skillet. Cook, without moving, until charred on the first side, about 5 minutes; season with salt, flip and continue to cook until charred on second side, 5 more minutes.
  • Transfer to a platter or shallow bowl and repeat process with remaining oil and cabbage.
  • Season with salt to taste. Optional, season with pepper to taste.

Frizzled cabbage with an Asian flavor. Easy to make with packaged slaw mix. Makes a nice side dish with steamed rice and Asian chicken wings.

1 (16 ounce) bag coleslaw mix
2 slices bacon, diced
soy sauce or teriyaki sauce

Steps:

  • Fry bacon in medium hot skillet until crisp.
  • Remove bacon from pan and pour off all but about 2 tablespoons of the drippings.
  • Add the cabbage to hot skillet and a bit of water to de-glaze the pan.
  • Reduce heat and cover pan.
  • Stir occasionally and cook until mostly wilted.
  • Turn the heat down to medium-low and let cook, stirring frequently, until cabbage is starting to caramelize (brown), about 10 minutes.
  • Do not let burn.
  • Add preferred sauce to taste, return bacon to cabbage and serve.
