QUICK CRANBERRY COLESLAW
A very tasty coleslaw using a pre-packaged cabbage mix and dressing it up with cranberries and nuts. Feel free to lighten it up with low/no fat mayo & Splenda.

Steps:
- In a small bowl, whisk together mayonnaise, lemon juice, water, sugar and salt.
- Combine shredded cabbage, carrot, scallions, cranberries and optional nuts in a large bowl.
- Pour dressing over cabbage mixture and toss well to coat.
- Allow coleslaw to chill for at least 15 minutes before serving, tossing occasionally.

CRANBERRY APPLE COLESLAW
I adapted this from a recipe I found on here. I wanted to use up some apples and an open bag of leftover coleslaw. This recipe is simply delicious with some nice clean fall flavors. This is nothing like the creamy wet coleslaw you would get at a deli. Its light, crisp, and crunchy.

Steps:
- Thinly slice the apples into a small bowl.
- Stir in two tablespoons of lemon juice onto the apple.
- In a large bowl, combine the coleslaw, onion, celery, cranberries, and walnuts.
- Stir in the apples.
- In another small bowl, combine sour cream, mayo, sugar, salt, pepper, and remaining lemon juice.
- Poor the wet ingredients onto the coleslaw mix and combine.
- Serve chilled.

This is one of our families favorites and it is requested for the family get togethers throughout the year. It is bright, colorful, easy to make and since it uses low fat ingredients guilt free. The recipe was adapted from one served at the Kimbell Museum in Fort Worth Texas.

- Note: Sometimes certain heads of cabbage are a little bitter, I taste and add a teaspoon or two of sugar if needed; The dried fruit& coconut usually provide enough sweetness to this salad.
- Mix all vegetables& fruit in a large bowl.

- Chill at least 30 minutes& stir before serving.

- Use a whisk to combine yogurt, honey, lemon juice (or vinegar), salt, pepper, and celery seed to make the dressing. Set aside.
