Whip up this easy, dairy-free mayonnaise with silken tofu. This sensational spread will take vegan sandwiches to the next level

Yield Makes approximately 250ml

Number Of Ingredients 5

100g silken tofu
1 tsp cider vinegar
½ tsp Dijon mustard
100ml light olive oil
1-2 tsp lemon juice

Steps:

  • Put the tofu, vinegar and mustard into a jug and blend with a stick blender until smooth. Drizzle the olive oil into the jug in a slow stream, with the blender still on, to incorporate into the mayonnaise. Season with salt, pepper and lemon juice to taste.

If you can't live without mayonnaise, you don't have to if you want to eat vegan. Here's my fave Vegan Mayo recipe! It only takes 5 minutes, tastes incredible and uses easy ingredients!

Number Of Ingredients 6

1/2 cup original soy milk ((125mL))
2 teaspoons apple cider vinegar (or lime juice or white vinegar)
1/2 teaspoon garlic powder
1/2 teaspoon sea salt
1 teaspoon dijion mustard
1 cup oil (I recommend any neutral oil (don't use coconut oil) (250mL))

Steps:

  • Make sure all your ingredients are room temperature. If your milk is cold, you can microwave it for about 20 seconds.
  • Add the original soy milk, apple cider vinegar, garlic powder, sea salt and mustard in the immersion blender beaker/jar and stir together.
  • Pour the oil over the soy milk mixture. Let it sit for about a minute.
  • Place your immersion blender into the bottom of the jar. Blend and keep it firmly pressed against the bottom for about 15 seconds while the mixture emulsifies. Slowly move the blender up and down to properly blend and incorporate all the ingredients until thick and fully combined.
  • Taste and add/adjust any ingredients if needed. Place in a sealed jar in the fridge. It thickens up in the fridge even more. Enjoy!

Vegan mayo is tasty, versatile, and so easy to make that you can do it in literally 1 minute with 6 simple ingredients.

½ cup soy milk (unsweetened)
¾ cup sunflower oil ((+ 2 tbsp if you want an extra thick mayo))
¼ cup olive oil
2 tablespoons lemon juice
1 tablespoon mustard
¾ teaspoon salt
½ tablespoon maple syrup (or agave syrup)
1 - 2 tablespoons tabasco hot sauce
½ - 2 cloves garlic (based on your taste)
½ tablespoon maple syrup (or agave syrup (optional))

Steps:

  • Add all ingredients to a tall container that can fit your immersion blender. Make sure there are no lemon seeds.
  • Blend with an immersion blender for 30 seconds, or until the ingredients get to a mayonnaise consistency.TIP: move the blender up and down in the jar to facilitate the process.
  • Taste and adjust for salt, lemon or garlic to your liking. When you are happy with the flavour, store in a jar in the refrigerator for up to 5 days.NOTE: if you want to have thicker mayonnaise, then add 3 more tablespoons of sunflower oil. If you want a thinner mayonnaise, then add 3 more tablespoons of soy milk.
