OLD BAY SHRIMP SALAD

Old Bay Shrimp Salad image

Old Bay kicks up the flavor of this classic shrimp salad. Pile it onto a croissant, scoop it over lettuce, or serve it with crackers.

Provided by Jennifer Segal

Categories     Salads

Time 15m

Yield 6

Number Of Ingredients 7

2 pounds large raw shrimp (31-35 per pound), shell-on and deveined (see note), thawed if frozen
½ cup mayonnaise, best quality such as Hellman's or Duke's
1½ teaspoons Old Bay seasoning
2 teaspoons white wine vinegar
¼ teaspoon Worcestershire sauce
½ cup finely diced celery
¼ cup finely sliced scallions, light and dark green parts separated

Steps:

  • Fill a large bowl with ice and cold water and set next to the sink.
  • Bring a large pot of water to a boil over high heat. Add the shrimp and cook, stirring occasionally, until bright pink and cooked through, about 1½ minutes (the water needn't return to a boil).
  • Drain the shrimp in a colander and then immediately plunge them into the ice water to shock them and stop the cooking process. Let sit until chilled, about 15 minutes. Peel the shrimp and set aside.
  • In a medium bowl, whisk together the mayonnaise, Old Bay, wine vinegar and Worcestershire sauce. Stir in the shrimp, celery, and light green scallions. Taste and adjust seasoning if necessary. Chill in the refrigerator until ready to serve. Before serving, transfer the salad to a serving bowl and sprinkle with the dark green scallions and a dash of Old Bay. The salad will keep for 2 days, covered, in the refrigerator.

SEAWEED SALAD

Seaweed Salad image

Seaweed has amazing properties! Sea vegetables are virtually fat-free, low calorie and are one of the richest sources of minerals in the vegetable kingdom. According to Seibin and Teruko Arasaki, authors of Vegetables from the Sea, "All of the minerals required by human beings, including calcium, sodium, magnesium, potassium, iodine, iron, and zinc are present in sufficient amounts. In addition, there are many trace elements in seaweeds." They also contain vitamins as vitamin A (in the form of beta-carotene), B1, B2, B6, niacin, vitamin C, pantothenic acid, and folic acid. Analysis has shown trace amounts of vitamin B12, which rarely occurs in land vegetables. Sea vegetables have been shown to cleanse the body of toxic pollutants. Seaweed feeds the shafts and the ducts of the scalp to help improve the health of the hair. It has been said that the thick, black, lustrous hair of the Japanese is partly due to their regular diet of brown sea vegetables such as arame. Research has shown that minerals are important to healthy hair growth, and arame has a high mineral content. Other health benefits, according to Carlson Wade's book Health Secrets from the Orient, include regulating the hormones, enriching the bloodstream, assisting in metabolism, promoting a youthful skin color, and helping to warm the body to promote mental youthfulness. So enjoy this nutritionally-packed food on the planet.

BEST TACO SALAD RECIPE

Best Taco Salad Recipe image

Taco Salad is a show-stopper dinner, if you do it right. Plus it's healthy! I'll show you all my tips (and the best ingredients) for Taco Salad, Done Right. Plus two taco salad dressing recipes to choose from!

Provided by Karen

Categories     Salad

Time 30m

Number Of Ingredients 31

1 pound ground beef
1/4 cup McCormick's Premium Taco Seasoning
3/4 cup water
1 head Romaine lettuce
1/2 cup green onions (chopped)
1 bunch cilantro (chopped)
1 & 1/2 cups cheddar cheese (shredded)
1 & 1/2 cups cherry tomatoes (or chopped tomatoes of any kind)
8 radishes (thinly sliced)
1/2 red onion (chopped)
2 avocados (chopped (and/or 1 cup guacamole))
1 cup frozen corn (thawed)
1-2 jalapeños (sliced)
Juanitas tortilla chips ( or Fritos, crushed)
sour cream (to taste (optional))
restaurant style salsa (to taste (optional))
sliced limes (to garnish)
1/2 cup mayonnaise
1/2 cup sour cream
1 (.4-oz) package Buttermilk Ranch Seasoning
1 serrano pepper (roughly chopped)
2 tomatillos (halved)
1/2 bunch cilantro
1 lime zest
1 lime Juice
milk (if the dressing is too thick)
1 cup sour cream
1/3 cup Restaurant Style Salsa
1 teaspoon taco seasoning (**)
1 lime Zest
1 lime juice

Steps:

  • Start with the taco meat.** Brown 1 pound ground beef in a skillet on the stove, over medium heat. Break up the meat into small pieces. Once it is no longer pink (3-5 minutes), remove from heat. Tilt the pan and scoop the grease into a foil-lined bowl (then refrigerate and toss when solidified). Return the pan back to the stove and set over medium heat. Add 1/4 cup Premium McCormick's taco seasoning. (Or a regular taco packet will do. See notes for a homemade recipe.) Add 3/4 cup water to the pan. Let the mixture come to a simmer. Turn off the heat when there is still thickened liquid at the bottom of the pan. If you cook until all the liquid has evaporated, you will have dry taco meat; no thanks. Set aside and keep warm, covered.
  • Prep the lettuce and herbs. Chop the romaine into bite size pieces and dry in a salad spinner (or dry off with paper towels). Add 1/2 cup chopped green onions and 1 bunch of chopped cilantro. Spin to mix, or add to a large bowl and toss together.
  • Prep your toppings. Grate 1 and 1/2 cups cheddar cheese. Chop 1 and 1/2 cups tomatoes. Thinly slice 8 radishes. Dice half a red onion. Chop 2 avocados (or make a quick guacamole with them by adding a bit of lime and salt). Thaw out 1 cup of frozen corn (I usually stick it in the microwave for 20 seconds and then let it finish thawing on the counter). Slice 1 or 2 jalapeno peppers. Crush some Juanitas or Fritos, but leave some whole for garnishing.

THE BEST SEAFOOD SALAD

The Best Seafood Salad image

I looked through all of the seafood salad recipes on here and although they all looked delicious I thought that I would try making my own with some ideas from the other seafood salad recipes that I seen on here and this turned out excellent. I could not quit eating it. You can add more or less of the ingredients as you like and you can also add grated cheddar cheese to it which is also wonderful. I added the cheese and bacon which is optional but very good without it as well.

THE BEST LOBSTER SALAD

The Best Lobster Salad image

Level up your greens with our sweet, luscious lobster salad loaded with crunchy cucumbers, juicy tomatoes, and a tangy dill dressing.

Provided by Fanny Slater

Categories     Seafood

Time 50m

Number Of Ingredients 12

1/4 cup minced scallions, green tops only
2 tablespoons finely chopped fresh dill
2 tablespoons Dijon mustard
1/2 teaspoon coarse sea salt, plus more for cooking
1/2 teaspoon freshly ground black pepper
2 tablespoons white wine vinegar
6 tablespoons extra-virgin olive oil
4-5 lobster tails (about 16 ounces cooked meat)
2 heads butter lettuce (such as Boston or bibb), leaves separated and chopped into bite-size pieces
1 cup diced seedless cucumber
2 cups halved cherry tomatoes
2 ripe avocados, cut into bite-size pieces

Steps:

  • Combine the green onions, dill, mustard, salt, pepper, and vinegar in a small bowl. Slowly stream in the oil, whisking as you pour, until the dressing is emulsified. Set aside.
  • Bring a large pot of salted water to a boil and prepare a large bowl of ice water nearby.
  • Add the lobster tails to the pot, cover, and reduce the heat to medium. Cook until the meat is firm and pinkish-white and the shells are bright red, about 8 minutes. Using tongs, transfer the tails to the ice bath and remove after they've cooled to the touch, about 5 minutes.
  • Place a tail on its side and press down to crack the shell. From here, you can pry the rest of the shell open with your fingers and remove the meat. Repeat with each tail. Coarsely chop the meat into big chunks.
  • Arrange the lettuce on 4 individual salad plates and drizzle each with about 1 tablespoon of the dressing. In a large bowl, add about 1/3 of the cucumber and cherry tomatoes, and all of the lobster meat. Pour in all but about 1/4 cup of the remaining dressing and gently fold the salad together.
  • Plate the salad in even portions on top of the lettuce, surround it with the remaining cucumbers, tomatoes, and avocado, and drizzle with the remaining dressing. Serve immediately.
