Old Bay kicks up the flavor of this classic shrimp salad. Pile it onto a croissant, scoop it over lettuce, or serve it with crackers.

Steps:
- Fill a large bowl with ice and cold water and set next to the sink.
- Bring a large pot of water to a boil over high heat. Add the shrimp and cook, stirring occasionally, until bright pink and cooked through, about 1½ minutes (the water needn't return to a boil).
- Drain the shrimp in a colander and then immediately plunge them into the ice water to shock them and stop the cooking process. Let sit until chilled, about 15 minutes. Peel the shrimp and set aside.
- In a medium bowl, whisk together the mayonnaise, Old Bay, wine vinegar and Worcestershire sauce. Stir in the shrimp, celery, and light green scallions. Taste and adjust seasoning if necessary. Chill in the refrigerator until ready to serve. Before serving, transfer the salad to a serving bowl and sprinkle with the dark green scallions and a dash of Old Bay. The salad will keep for 2 days, covered, in the refrigerator.

- Bring a large pot of salted water to a boil. Add the pasta and cook until al dente.
- Add the olive oil to a large high-sided skillet over medium-high heat. Add the shallots and garlic and saute until tender and fragrant, 3 to 4 minutes. Stir in the red pepper flakes, salt and pepper. Add the white wine and the crushed tomatoes. Season with salt and pepper and bring to a simmer. Add the shrimp and scallops, cover, and gently simmer for 5 minutes.

- Start with the taco meat.** Brown 1 pound ground beef in a skillet on the stove, over medium heat. Break up the meat into small pieces. Once it is no longer pink (3-5 minutes), remove from heat. Tilt the pan and scoop the grease into a foil-lined bowl (then refrigerate and toss when solidified). Return the pan back to the stove and set over medium heat. Add 1/4 cup Premium McCormick's taco seasoning. (Or a regular taco packet will do. See notes for a homemade recipe.) Add 3/4 cup water to the pan. Let the mixture come to a simmer. Turn off the heat when there is still thickened liquid at the bottom of the pan. If you cook until all the liquid has evaporated, you will have dry taco meat; no thanks. Set aside and keep warm, covered.
- Prep the lettuce and herbs. Chop the romaine into bite size pieces and dry in a salad spinner (or dry off with paper towels). Add 1/2 cup chopped green onions and 1 bunch of chopped cilantro. Spin to mix, or add to a large bowl and toss together.
- Prep your toppings. Grate 1 and 1/2 cups cheddar cheese. Chop 1 and 1/2 cups tomatoes. Thinly slice 8 radishes. Dice half a red onion. Chop 2 avocados (or make a quick guacamole with them by adding a bit of lime and salt). Thaw out 1 cup of frozen corn (I usually stick it in the microwave for 20 seconds and then let it finish thawing on the counter). Slice 1 or 2 jalapeno peppers. Crush some Juanitas or Fritos, but leave some whole for garnishing.

THE BEST SEAFOOD SALAD
I looked through all of the seafood salad recipes on here and although they all looked delicious I thought that I would try making my own with some ideas from the other seafood salad recipes that I seen on here and this turned out excellent. I could not quit eating it. You can add more or less of the ingredients as you like and you can also add grated cheddar cheese to it which is also wonderful. I added the cheese and bacon which is optional but very good without it as well.

- Combine the green onions, dill, mustard, salt, pepper, and vinegar in a small bowl. Slowly stream in the oil, whisking as you pour, until the dressing is emulsified. Set aside.
- Bring a large pot of salted water to a boil and prepare a large bowl of ice water nearby.
- Add the lobster tails to the pot, cover, and reduce the heat to medium. Cook until the meat is firm and pinkish-white and the shells are bright red, about 8 minutes. Using tongs, transfer the tails to the ice bath and remove after they've cooled to the touch, about 5 minutes.
- Place a tail on its side and press down to crack the shell. From here, you can pry the rest of the shell open with your fingers and remove the meat. Repeat with each tail. Coarsely chop the meat into big chunks.
- Arrange the lettuce on 4 individual salad plates and drizzle each with about 1 tablespoon of the dressing. In a large bowl, add about 1/3 of the cucumber and cherry tomatoes, and all of the lobster meat. Pour in all but about 1/4 cup of the remaining dressing and gently fold the salad together.
- Plate the salad in even portions on top of the lettuce, surround it with the remaining cucumbers, tomatoes, and avocado, and drizzle with the remaining dressing. Serve immediately.
