With moistened hands, form into 1-inch balls, chill 4 hours, then roll in toppings. Here we used chopped pistachios, chives, tarragon, hulled pumpkin seeds, bacon with paprika, almonds, and black and white sesame seeds.

MINI-CHEESE BALLS - WEIGHT WATCHERS
For a colorful and tasty presentation, roll these cheese balls in paprika or black pepper. Or roll them in 1/2 cup chopped almonds. Each serving is 1 mini-cheese ball with 1 bagel chip. Make this recipe up to 2 days ahead. This recipe has a 1 point value per serving. I found this recipe in a Weight Watchers magazine. I have not tried this recipe, but I'm posting it for safe keeping.

MINI CHEESE BALLS
This is a great make-ahead recipe that gets better the longer you let it refrigerate. It also makes lots so it is good for a large party. I like to vary the types of dried fruit - substituting craisins for raisins, dried pineapple for apple, etc.

MASCARPONE BOUCHEES (MINI CHEESE BALLS)
Delightful bite-size cheese balls. This is just a basic cheese ball--you can add whatever you like to the recipe to spice it up to make it not so ordinary. Just omit the chives and add 1/4 cup of whatever you like. I like to put in green olives sometimes and sometimes a mix of bacon and cheddar--it just depends on what you're in the mood for. Hope you enjoy.

- Pulse the cheddar cheese, cottage cheese, mustard, and cayenne in a food processor until very smooth, about 2 minutes. Add the cream cheese and soup mix; process until smooth, scraping down the sides of the bowl as needed. Scrape with a spatula onto a large sheet of plastic wrap.
- Wrap the plastic around the cheese mixture and shape it into a 4-inch ball or 7-inch-long log with your hands. Refrigerate until firm, at least 3 hours or overnight.
- Just before serving, sprinkle about half of the chopped parsley in a circle onto a sheet of plastic wrap. Unwrap the cheese ball or log and place on the parsley. Sprinkle the remaining parsley on top and press to help the leaves adhere. Carefully roll any uncoated areas in the loose parsley, and smooth the shape, if needed. Place on a serving plate and surround with cut-up vegetables of your choice. Yields 2 tablespoons per serving.
