This easy gluten free cornbread recipe can be made naturally gluten free with all cornmeal and no other flours. Use it to make muffins, too!

2 cups coarsely ground yellow cornmeal ( (See Recipe Notes))
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon kosher salt
1 1/2 cups plain yogurt (at room temperature (can substitute an equal amount of buttermilk or half sour cream/half whole milk))
4 tablespoons unsalted butter (melted and cooled)
1 egg (at room temperature, beaten)
4 tablespoons honey

Steps:

  • Preheat your oven to 400°F. Grease a 12-inch cast iron skillet or an 8-inch square or round pan, and set it aside.
  • In a large bowl, place the cornmeal (See Recipe Notes), baking powder, baking soda, and salt, and whisk to combine well. In a separate bowl, place the yogurt (or buttermilk or sour cream and milk mixture), butter, and egg, and whisk to combine well.
  • Create a well in the dry ingredients and pour in the wet ingredients and the honey. Mix until just combined. The mixture will be relatively thin (thinner if you used buttermilk). Pour the mixture into the prepared pan.
  • Bake for 20-30 minutes (closer to 20 minutes if using a cast iron skillet, closer to 25 minutes if you made the all purpose gluten free flour variation), or until lightly golden brown on top, golden brown around the edges, and firm to the touch in the center. Slice and serve immediately.

1/4 cup sorghum flour
1/4 cup tapioca starch
1/4 cup potato starch
1/4 cup sweet rice flour
1/4 cup sugar
4 teaspoons baking powder
3/4 teaspoon salt
1 teaspoon xanthan gum
1/4 cup shortening (not butter)
2 large eggs
1 cup non-dairy milk substitute
1 cup yellow cornmeal

Steps:

  • Preheat the oven to 425 degrees.
  • Combine the flours by sifting them into a large bowl. Add the remaining dry ingredients and stir.
  • Cut the shortening (such as Earth Balance to make it casein free) into the flours, the way you would when making a pie dough. You should end up with walnut-size pieces in a sandy flour.
  • Combine the eggs and milk in a small bowl. You can use cow's milk just fine if it's not a problem for your family. I usually use original rice milk.
  • Make a well in the center of the dry ingredients and pour in the liquid. Stir with a rubber spatula until everything is combined.
  • Stir in the cornmeal, whisking fast, until it is just combined. Do not overstir.
  • Pour into a greased 9 by 9 by 2-inch pan or a preheated greased cast iron skillet. Slide it into the oven. Bake for 20 to 25 minutes, or until the sides of the cornbread are slightly shrinking from the pan and a toothpick comes out clean.

1/4 cup shortening (use a non-hydrogenated shortening), plus more for greasing the pan
140 grams All-Purpose Gluten-Free Flour Mix, recipe follows
1/4 cup sugar
1 tablespoon baking powder
1 teaspoon psyllium husk
3/4 teaspoon salt
2 large eggs
1 cup milk (you can use non-dairy milk, if you want)
1 cup yellow cornmeal
400 grams millet flour
300 grams sweet rice flour
300 grams potato starch

Steps:

  • Prepare to cook. Preheat the oven to 425 degrees F. Grease a 9-by-9-by-2-inch pan.
  • Mix the dry ingredients. Sift the flour into a large bowl. Add the sugar, baking powder, psyllium husk and salt and stir.
  • Cut in the shortening. Cut the shortening into the flour mixture the way you would when making pie dough. You should end up with walnut-size pieces in a sandy flour.
  • Add the wet ingredients. Combine the eggs and milk in a small bowl. Make a well in the center of the flour mixture and pour in the liquid. Stir with a rubber spatula until everything is combined.
  • Finish the batter. Stir in the cornmeal, whisking fast, until it is just combined. Do not overstir.

½ cup white sugar
¼ cup gluten-free all-purpose flour
1 tablespoon gluten-free baking powder
1 cup milk
¼ cup butter, melted
1 egg
1 (14.75 ounce) can cream-style corn

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease an 8-inch square pan.
  • Mix cornmeal, sugar, flour, and baking powder together in a bowl.
  • Whisk milk, butter, and egg together in another bowl. Stir into cornmeal mixture just until combined and some lumps remain. Fold in corn. Pour batter into the pan and smooth out the top.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 25 minutes.

MIX TOGETHER DRY INGREDIENTS
1 cup(s) **glad flour or other gluten free flour mix
1 cup(s) organic corn meal
2 teaspoon(s) xanthan gum
4 teaspoon(s) aluminum free baking powder
1/2 teaspoon(s) pink himalayan sea salt
2 tablespoon(s) dried italion seasoning, parsley, rosemary or dill *optional
WET INGREDIENTS
1/3 cup(s) raw granulated sugar, raw honey, agave nectar or molasses *optional
2 - beaten eggs
1 cup(s) casien free milk ( i use coconut or almond- soy works too) or water
1 tablespoon(s) apple cider vinegar
1/3 cup(s) melted coconut oil
PAN
- for best results use a 10 inch well seasoned cast iron skillet
- if you don't have cast iron you can use a 9 inch round or square cake pan, or even a glass pan but it won't taste quite as good :)

Steps:

  • Preheat oven to 450 F. Heat coconut oil in a cast iron skillet if using, or just melt it in your baking pan while the oven preheats.
  • Add 1 tbsp vinegar to 1 cup casein free milk or water and set aside
  • Mix together dry ingredients with a whisk.
  • Make a well in your dry mixture and add remaining ingredients. Mix well.
  • Pour batter into hot greased skillet, or baking pan. Bake until the sides pull away from the pan a bit and the top will usually crack a bit.
  • A Note about Gluten and Casein Free Ingredients: Since my family began this diet, we have discovered that you always have to read the labels on the foods you buy. This week when shopping I may buy something that is clearly gfcf and next week when I look for the same item I will notice they have changed the ingredient list adding dry milk, or maltodextrin, or some other questionable ingredient. I find that it's best to stick to unprocessed foods whenever possible- make it from scratch. My son is on the autism spectrum, its not the end of the world if he gets a little gluten or casein, while it may ruin his day, it isn't life threatening. I always watch him for symptoms and note the offending food. Please keep this in mind while selecting your ingredients for my GFCF recipes. Happy Careful Shopping! :)

Gluten-free, casein-free cornbread for those of you who like cornbread that tastes like cake. You need 6.6 ounces of gluten-free flour, but because everyone's blend is different, volume can differ based on the density of the type of flour you're using (e.g. rice vs. garbanzo bean flour). I use a store-mix that's primarily rice flour with potato and tapioca starches and it comes out to slightly more than 1.5 cups of gluten-free flour.
