24 oz. raw shrimp (wild-caught shrimp, jumbo size, deveined, peeled & tail off)
1 cup light beer
1 cup flour
salt & pepper to taste (I use about 1 teaspoon of sea salt)
Oil for frying

Steps:

  • In a mixing bowl combine 1 cup of flour with 1 cup of beer. Season with salt and pepper.
  • Using a sauce pan pour enough oil to submerge your shrimps. Heat the oil on medium heat until oil is hot.
  • Dip shrimp in the batter and add it to the hot oil, fry until golden color, remove from the pan onto a plate with a paper towel. Enjoy the crispiest shrimp!

I found this recipe on Food Network's website and couldn't believe it wasn't on Zaar! This is a super simple fried shrimp recipe from Paula Deen. I tried this on my shrimp the other night and it was delicious. I also fried some chicken tenders in the batter and they were delicious as well. Make sure you let the beer/flour mixture sit for a few hours before using it.

21 -25 large shrimp, peeled and deveined with tails left on

Steps:

  • Preheat a fryer or a deep pot halfway filled with oil to 350 degrees F.
  • In a bowl, combine the beer, flour, and salt, and allow to sit at room temperature for several hours.
  • Pat the shrimp dry with paper towels and dip the shrimp in the batter and fry for approximately 2 to 3 minutes.

1 (8-ounce) bottle beer (recommended: Heineken)
1 (2-ounce) "shot" vodka (the cheaper the better)
1 3/4 cups all-purpose flour, plus a little extra, if needed
1 tablespoon paprika
1 clove garlic, peeled
1 tablespoon extra-virgin olive oil
1 pound "16/20" size shrimp, peeled and deveined, tails attached
Kosher salt
Freshly ground black pepper
4 cups vegetable oil
About 20 basil leaves, stemmed, washed and dried
1 lemon, thinly sliced

Steps:

  • Pour the beer into a medium-size bowl and stir in the vodka. Slowly whisk in the flour and the paprika. The batter should be fairly thick, but also easy to stir. Set aside in a warm place. "Press" the garlic clove into another bowl and stir in the olive oil and shrimp. Season lightly with salt and pepper. Set aside. Pour the oil into a heavy-bottomed pot (or, alternatively, a deep-fryer). Heat the oil slowly to 370 F. Use a candy thermometer to monitor the temperature. Line a baking sheet with a kitchen towel or paper towels to drain the shrimp once they are cooked.
  • Preheat the oven to 250 degrees F.
  • Arrange the basil leaves on a sheet pan. Put the pan in the oven for 2 minutes, just to wilt the basil a bit, if the basil is young and tender this step is not necessary. Wrap a basil leaf around the middle of each shrimp like a belt. When ready to serve, dip the shrimp into the batter and drop, in small batches, into the oil. Fry until crispy, turning on both sides with a slotted metal spoon. Add the lemons into the oil and fry until crispy. Drain them on the lined baking sheet and season immediately with salt. Transfer to a serving platter and serve immediately.

  • Season the shrimp with a big pinch of salt.

1 bottle light- or medium-bodied lager (12 ounces), cold
2 1/2 cups all-purpose flour (spooned and leveled)
Coarse salt
5 cups vegetable oil
2 1/2 to 3 pounds shrimp, firm fish fillets (such as cod), or desired vegetables (such as onions or pepperoncini), cut into pieces if necessary
2 cups buttermilk (if using onions)

Steps:

  • In a medium bowl, whisk eggs until smooth, then whisk in beer. Add 1 1/2 cups flour and 1 1/2 teaspoons salt and whisk until combined. Place 1 cup flour in a shallow bowl. Place a wire rack on top of a rimmed baking sheet; set near stove.
  • In a wide 6-quart pot fitted with a deep-fat or candy thermometer, heat oil to 375 degrees over medium. (The oil should bubble rapidly when a pinch of flour is added.) Working in small batches, lightly coat food in flour, then dip in batter, gently shaking off excess. Fry, turning halfway through, until browned and crisp, about 5 minutes per batch (adjust heat to maintain 375 degrees). With a slotted spoon, transfer food to rack to drain and discard any browned bits of batter. Season immediately with salt. Keep warm in a 200-degree oven.

3/4 cup amber ale (use a light-coloured beer not a dark beer for this, and it MUST be room temperature)
4 large egg whites
1 1/4 teaspoons salt
black pepper (I use about 1/2 teaspoon)
1 1/2 lbs uncooked large shrimp, peeled, tails left on and deveined
shortening, for deep-drying (or use oil)

Steps:

  • In a medium bowl whisk together 3/4 cup flour, 3/4 cup room temperature beer and 2 unbeaten egg whites until smooth.
  • Cover and let stand at room temperature for 2 hours.
  • After 2 hours, set oven to 250°F (to keep the shrimp warm after you have fried them).
  • In a large bowl beat the remaining 2 egg whites until soft peaks form.
  • STIR in about 1/3 of the egg white batter into the beer batter, then fold in the remaining egg whites.
  • Melt the shortening to 375°F in a heavy large pot or a deep fryer.
  • Meanwhile place 1 cup flour into a pie dish.
  • Working in batches, coat the shrimp with flour (shake off any excess flour).
  • Holding the shrimp by the tail, dip into batter until well coated.
  • Carefully lower the shrimp a few at a time into hot shortening.
  • Fry until golden brown and cooked through (about 1 minute per side).
  • Using tongs transfer the cooked shrimp to a oven-proof baking sheet and keep warm in the preheated oven while cooking the remaining shrimp.
  • Serve with tartar sauce.

In the late 1970s, I discovered Clyde's restaurant in Columbia, Maryland. The entire menu was fabulous, especially the Beer Battered Shrimp and their Victoria Spice Cake. Both recipes were creations of the chef, who passed away a few years later and took her recipes to her grave. The restaurant later became part of a chain and only the splendid decor remains today. The food is still good, but that's all - just "good". For months, I have been trying to replicate something approaching the taste of that wonderful shrimp dish. I am very pleased with the following recipe.

1 lb large or jumbo fresh shrimp, peeled and deveined
4 ounces self-rising flour
3/4 teaspoon shellfish spice mix
1 egg
1 tablespoon unsalted butter, melted
5 fluid ounces strong flavoured beer or 5 fluid ounces ale
oil, or melted fat to deep fry
lemon wedge, to garnish
prepared seafood cocktail sauce (optional)
1 tablespoon morton lite salt
1 tablespoon salt-free lemon pepper
1/2 teaspoon paprika
1/4 teaspoon Old Bay Seasoning
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon cornstarch

  • Combine all ingredients in a small bowl and mix well.
  • Store unused portion in an empty spice bottle and refrigerate for maximum flavour retention.

  • Sift the flour and ¾ tsp (or more, if you like) shellfish spice mix into a bowl.
  • Beat to a smooth batter with unbeaten egg, butter and beer.
  • Dredge the shrimp in the batter to coat them and place them, a few at a time, in a frying basket and fry in hot oil or fat (350F/180C) for about a minute or two until the batter is golden brown.
  • Remove them from the oil and drain them.
  • Serve with lemon wedges and, if desired, cocktail sauce.

l teaspoon salt
1/4 cup honey
2 tablespoons red wine vinegar

  • Combine 1 cup of the flour with the cayenne, salt, sugar and baking powder in a medium bowl.
