1 teaspoon sea salt
1/2 teaspoon coarsely ground pepper
1/4 cup mayonnaise
1/2 cup finely chopped pistachios
SAUCE:
1 shallot, chopped
1 tablespoon olive oil
1 cup heavy whipping cream
2 teaspoons grated lemon zest
1/4 teaspoon sea salt
1/8 teaspoon cayenne pepper

Steps:

  • Place fillets on a greased baking sheet; sprinkle with salt and pepper. Spread with mayonnaise and sprinkle with pistachios., Bake at 375° for 15-20 minutes or until fish flakes easily with a fork., Meanwhile, in a small saucepan, cook and stir shallot in oil over medium-high heat until tender. Add cream, lemon zest, salt and cayenne; bring to a boil. Reduce heat; simmer, uncovered, for 5-7 minutes or until thickened, stirring occasionally. Serve with salmon.

1/4 cup finely chopped, plus more for garnish pistachios
1 teaspoon divided salt
1/2 teaspoon freshly ground black pepper
2 (4 oz) salmon fillets
2 tablespoons extra virgin olive oil
1 teaspoon minced garlic
1 tablespoon butter
1 tablespoon all purpose flour
1/2 cup chicken broth
1/4 cup heavy whipping cream
2 teaspoons lemon zest
1/8 teaspoon fresh lemon juice
1/8 teaspoon ground white pepper

Steps:

  • For the Salmon:
  • In a shallow dish, combine the pistachios, 1/2 teaspoon salt and pepper. Dredge the salmon in the pistachio mixture, pressing gently to coat.
  • In a small skillet, heat the oil and garlic over medium heat. Add the salmon and cook until browned, about 2 to 3 minutes. Reduce the heat to medium; turn the salmon and cook until salmon flakes easily with fork, about 2 or 3 minutes more. Transfer the fillets to serving plates. Serve with Lemon Cream Sauce, and garnish with chopped pistachios, if desired.
  • For the Lemon Cream Sauce:
  • In a small saucepan, melt the butter over medium-high heat. Add the flour, whisking to combine and cook for 2 minutes. Reduce the heat to medium; stir in the broth and cream and simmer until thickened, whisking frequently, about 3 minutes. Add the lemon zest, lemon juice, 1/2 teaspoon salt and pepper, whisking to combine. Cook for 2 minutes, whisking constantly. Pour into a serving dish and serve with the salmon.

1 (2 to 3-pound) side salmon, skin on
2 lemons, juiced
4 tablespoons stone-ground mustard
1 cup shelled pistachio nuts
1/2 cup panko bread crumbs
4 tablespoons canola oil
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • Arrange the side of salmon on an oven proof baking sheet, skin side down. Mix the lemon juice and mustard together in a small bowl and spread sparingly over the top of the salmon.
  • Coarsely grind the pistachios in a food processer. Add the panko bread crumbs, the oil and salt and pepper, to taste. (The bread crumbs should be slightly wet, as it helps the stick to the salmon.)
  • Sprinkle the pistachio mixture over the mustard to cover the salmon evenly.
  • Put in the preheated oven and bake until the salmon reaches the correct doneness, about 15 to 20 minutes. Remove from the oven to a serving platter.
  • Remember the fish needs to rest outside of the oven for at least 5 minutes. It will continue to cook, so remove the salmon from the oven with this in mind. Enjoy.

1/2 cup onion and garlic salad croutons
1/2 cup pistachios
1 large egg white, beaten
2 tablespoons water
4 salmon fillets (6 ounces each), about 1 inch thick
4 ounces reduced-fat cream cheese
2 tablespoons lemon juice
2 tablespoons snipped fresh dill
1 tablespoon capers, drained
2 tablespoons olive oil, divided
1-1/2 cups julienned fresh carrots
1-1/2 cups julienned yellow summer squash

  • Preheat the oven to 400°F and line a baking tray with parchment paper.
  • Pat the fish dry with a paper towel and divide the fillet into three uniform portions.
  • Sprinkle salt and pepper on the skin, and lay it skin-side down on the parchment-lined baking tray.
  • Combine the mustard and chives in a small bowl.
  • Spread one-third of the mixture evenly on each piece of fish.

You can use different nuts such as walnuts, hazelnuts, almonds etc. You may also use a different fish such as Chilean Sea Bass, Trout etc. Seafood Magic is a seasoning by Chef Paul Prudhomme. Get his seasonings if you can find them - they are to die for! You may sub Old Bay instead but it wont have the same flavor, though still fantastic!

2 -3 teaspoons seafood, magic seasoning blend
1/2 cup pistachios, shelled
1 teaspoon extra virgin olive oil

Steps:

  • Generously sprinkle both sides of salmon with Seafood Magic (about 2-3 teaspoons total).
  • Put pistachios and olive oil in a food processor and grind.
  • Evenly distribute the crushed nuts on both sides of the salmon, pressing in with your fingers.
