WHITE RICE RECIPE BY TASTY
Getting fluffy, fully-cooked white rice without burning the bottom isn't hard, but there are a few steps to make the process a little easier. You'll always want to rinse white rice in a sieve until the water is clear to remove excess starch that can make the rice gummy and unevenly cooked. You should also let the rice steam for five minutes before you fluff with a fork, so that the rice doesn't dry out or get clumpy. Enjoy your now-perfect rice!

PERFECT WHITE RICE
It is possible to make perfectly fluffy white rice on the stovetop. Sauteing the rice first helps keep the rice grains separate. Keeping the pot covered for the entire cooking time traps the steam which is necessary for properly cooking the rice, and is very important. The last 5 minutes off the heat allow the rice to finish in the residual steam, without burning the bottom.

- White Rice Can Actually Help Stabilize Blood Sugar Levels. That may be odd to hear as white rice is mostly starch and fairly high on the glycemic index.
- White Rice is Easy to Digest. Most people don’t know that whole grains can be hard for the body to digest (including most doctors) if they’re not properly prepared.
- White Rice Does Not Contain Gluten. Or any of the other possibly problematic compounds that are a part of the three main sources of gluten – wheat, barley and rye.
- White Rice Can Help with Chronic Digestive Issues. Beyond its digestibility, many eastern healing systems look at white rice as having certain qualities or energetic characteristics that can be beneficial.
- White Rice is a Perfect Complement to Bone Broth. Perhaps this is why so many Asian soups are served with either white rice on the side or directly in the soup as it easily absorbs and soaks up the flavor in broth.
5 BENEFITS OF WHITE RICE, ACCORDING TO A DIETITIAN - WELL+GOOD
From wellandgood.com

- White rice is comforting. Qureshi pointedly calls out that not all benefits of a food are tied to specific nutrients; enjoying what you eat is just as important.
- It's gluten-free. If you want to make a soup, stew, or casserole heartier but follow a gluten-free diet, white rice does the job perfectly. Yes, there are lots of gluten-free pasta alternatives out there, but white rice is likely the most affordable option you'll find.
- White rice gives you energy. "White rice is a source of carbohydrates that provides us with quick energy," Qureshi says. "Thanks to the milling process, white rice is able to be digested quicker than brown rice providing us not only with energy but also the comfort that goes along with enjoying rice with your meal."
- It has B vitamins, magnesium, and iron. The iron and B vitamins in white rice are directly related to its energy-giving properties that Qureshi loves.
- White rice is easy to digest. Qureshi also points out that white rice is easy on the digestive system. Some foods, like meat or leafy greens, require more work to break down.

HOW TO MAKE THE BEST FRIED RICE | THE FOOD LAB
From seriouseats.com
- Use the Right Rice (Almost Any Rice) Perfect fried rice is all about texture. I was looking for rice that had distinct grains, each with a slightly chewy fried exterior and a tender bite.
- Plan in Advance if You Can, But Don't Worry if You Don't. I'd always heard that fried rice is best made with day-old rice, and that fresh rice will turn to mush if you try to fry it.
- Rinse the Rice. This was an obvious one: Excess starchiness is what causes rice to clump. Nobody likes clumpy fried rice. If you are cooking your rice from raw in order to make fried rice, make sure to rinse off excess starch first.
- Break Up the Rice. If you're using rice that has had a chance to clump or go stale, break it up before it goes into the wok. This will ensure that the rice separates into individual grains without breaking or getting crushed.
- Use a Wok. While it's true that woks were not designed to be used on Western-style gas ranges, with their rings of burners, they are still far superior vessels for stir-frying than a skillet or saucepan.
- Keep Things Hot. Very Hot. Here is where I've made the most fried rice mistakes in my life: not getting the pan hot enough, and cooking too much rice at a time.
- Go Easy With the Add-Ins. Just as a plate of pasta is really about the pasta itself, not the sauce, fried rice is all about the rice. The mix-ins should all be flavor enhancers, not stars unto themselves.
- Go Easy With the Sauce. Some fried rice recipes call for massive amounts of soy sauce, oyster sauce, or hoisin sauce. This has never made much sense to me.
- Season Rice With Salt. That teaspoon of soy sauce will add some salt to the mix, but it's not enough to season the whole wok-ful. I prefer to season my rice with plain salt instead of more soy sauce, as salt will not add excess moisture, nor will it distract from other, more subtle flavors in the rice.
- How to Add an Egg. Okay, this one technically isn't a rule, but eggs are so common in fried rice that it may as well be. There are many methods of adding eggs to fried rice, but I find that the simplest is best: Push the rice aside, add a little oil to the bottom of the wok, crack an egg into it, then scramble it right in the center of the wok, using the top of your spatula to break it up into small pieces and eventually tossing them with the rice for even distribution.
