Time 6h25m

Yield 12 lollipops

Number Of Ingredients 7

4 large egg whites, at room temperature
1/2 teaspoon cream of tartar
1/4 teaspoon salt
2 1/4 cups confectioners' sugar
Coarse sugar and/or silver nonpareils, for sprinkling
1 11-ounce bag white chocolate chips
1 tablespoon coconut oil or shortening

Steps:

  • Position racks in the upper and lower thirds of the oven; preheat to 250 degrees F. Line 2 baking sheets with parchment paper.
  • Beat the egg whites, cream of tartar and salt in a large clean dry bowl with a mixer on medium speed until foamy. Increase the speed to medium high and beat until thick and opaque, about 1 more minute. Gradually add the confectioners' sugar, about 1/4 cup at a time, and beat until stiff shiny peaks form, about 5 more minutes.
  • Transfer the meringue to a pastry bag fitted with a large star tip. Pipe twenty-four 2 1/2-inch disks on the baking sheets, leaving space between each. Sprinkle with coarse sugar and/or silver nonpareils; bake at 250 degrees F until dry and crisp, 3 to 4 hours. Let cool completely on the baking sheets. Store in an airtight container in a dry place for up to 1 week.
  • For the filling, combine the white chocolate chips and coconut oil in a microwave-safe bowl; microwave, stirring every 30 seconds, until melted. Sandwich some white chocolate mixture and a lollipop stick between 2 cookies; repeat to make 12 lollipops. Let set.

Time 2h15m

Yield 12 lollipops

Number Of Ingredients 7

1/2 teaspoon cream of tartar
1/4 teaspoon fine salt
4 large egg whites, at room temperature
1/4 teaspoon peppermint extract
2 1/4 cups confectioners' sugar
Sanding sugar, for decorating
Silver sprinkles, for decorating

Steps:

  • Position oven racks in the top and bottom thirds of the oven and preheat to 225 degrees F. Cut 2 pieces of parchment paper to fit 2 baking sheets. Using a 4-inch diameter cookie cutter, draw 6 circles on each piece of parchment, then flip each piece over onto a baking sheet marked-side down.
  • Combine the cream of tartar, salt and egg whites in the bowl of a stand mixer fitted with the whisk attachment. Whisk on medium speed until foamy, about 1 minute. Increase the speed to medium high and beat until thickened, about 1 minute more. Mix in the peppermint extract, then add the confectioners' sugar in batches about 1/4 cup at a time, beating until well incorporated after each addition. After the last addition, continue to beat until stiff, shiny peaks form, about 5 minutes.
  • Fill a resealable plastic bag or piping bag with the meringue. Snip off the end or corner to make about a 1/2-inch-wide opening. Lay a lollipop stick down about 1 inch into each drawn circle and pipe the meringue lollipops onto the parchment circles over the sticks. Sprinkle the sanding sugar and silver sprinkles onto the piped meringue pops.
  • Bake, rotating the baking sheets from front to back and top to bottom halfway through, until the meringue is dry and crispy, about 2 hours.

WREATH MERINGUE LOLLIES

Wreath meringue lollies image

Get children involved in making these Christmas meringue lollies. They will love practising their piping skills and decorating them with sprinkles and sweets

Provided by Liberty Mendez

Time 1h40m

Number Of Ingredients 6

2 large egg whites (you'll need 60g)
120g caster sugar
green food colouring gel
4 tbsp icing sugar
12 x 10cm lollipop sticks
strawberry laces, edible pearls, sprinkles and dried orange slices, to decorate

Steps:

  • Heat the oven to 120C/100C fan/gas 1. Line two baking sheets with baking parchment. Beat the egg whites in a medium bowl using an electric whisk for 45 seconds until just starting to turn opaque, then gradually add the sugar, 1 tsp at a time, until thick and glossy, about 5 mins. Whisk in a drop of green food colouring gel until combined.
  • Spoon the meringue into a piping bag fitted with a star nozzle. Pipe a dot onto the baking parchment, lay the top end of one of the lollipop sticks onto it, then pipe a 7-8cm circle outward and above it, looping back to the stick (see tip). Repeat this process until both trays are full - you should have about 12. You can also pipe simple meringue loops, if you run out of sticks.
  • Bake on the lower shelf of the oven for 20 mins, then reduce the heat to 110C/90C fan/gas ¼ and bake for 1 hr more until fully dry. Remove from the oven and leave to cool completely on the trays.
  • Meanwhile, make the icing. Combine the icing sugar with 1-2 tsp water until stiff but smooth. When the meringues are cool, use the icing to attach your choice of decorations. Leave to set before boxing up. Will keep in an airtight container for up to three days.

LINZER HEART SANDWICH COOKIES

Linzer Heart Sandwich Cookies image

Linzer heart sandwich cookies add a bit of pizazz to any dessert table and they're a breeze to make! The shortbread-like dough rolls so easily and doesn't require any chilling before baking. You can substitute a variety of jams for filling these cookies for a beautiful mix of colors and flavors.

Provided by Dan Langan

Categories     dessert

Time 1h45m

Yield 16 to 18 sandwich cookies

Number Of Ingredients 11

1 1/4 sticks (10 tablespoons) unsalted butter, at room temperature
2/3 cup (135 grams) granulated sugar
1/2 teaspoon baking powder
1/2 teaspoon fine salt
1 small lemon, zested
1 egg yolk, at room temperature
2 teaspoons pure vanilla extract
1 3/4 cups (220 grams) all-purpose flour, plus more as needed
1/4 cup (25 grams) almond flour
About 3/4 cup raspberry jam or your favorite jam
Confectioners' sugar, for dusting

Steps:

  • Preheat your oven to 350 degrees F and line 2 baking sheets with parchment paper.
  • In the bowl of your stand mixer fitted with the paddle attachment, add the butter, sugar, baking powder, salt and lemon zest. Mix on low to combine, then raise to medium speed and cream until smooth, 1 to 2 minutes. Add the egg yolk and vanilla and mix on medium speed until combined, about 30 seconds.
  • Scrape the bowl and mix another few seconds. Add the all-purpose flour and almond flour and blend on low until combined. The dough will be very stiff. Once mixed, use your hand to incorporate any remaining flour by pressing and turning the dough around in the bowl.
  • Take about half of the dough and roll out between two pieces of parchment to about 1/8 inch thick. Use a light sprinkling of all-purpose flour if the dough sticks to the parchment.
  • For the cookie tops, cut out 16 to 18 cookies with a floured 2 3/4-inch heart-shaped cutter and arrange on one of the prepared baking sheets. Cut out the center of each solid heart with a smaller (such as 1 3/4-inch) heart-shaped cutter.
  • For the cookie bottoms, gather the scraps and the other half of the dough and reroll. Cut out 16 to 18 more 2 3/4-inch hearts. Leave them solid and arrange on the second prepared baking sheet (see Cook's Note).
  • Bake the cookie tops, rotating the baking sheet halfway through baking, until golden, 7 to 8 minutes. Bake the solid heart cookie bottoms, rotating the baking sheet halfway through baking, until golden, 12 to 14 minutes. Allow the cookies to cool completely on the trays before filling.
  • Lightly dust the cookie tops with confectioners' sugar and set aside.
  • Use a butter knife or small offset spatula to spread 1/2 to 1 teaspoon of jam over each cookie bottom. Carefully add the cookie tops. Place the remaining jam into a resealable plastic bag, snip off the end and pipe a bit into the center of each heart to fill in the space. The sandwich cookies can be store in a single layer in an airtight container at room temperature for up to 3 days.
