GRANDMOTHER'S ORANGE SALAD

Steps:
- Drain oranges and pineapple, reserving juices. Set oranges and pineapple aside. Add water to juices to measure 2 cups. Place in a saucepan and bring to a boil; pour over gelatin in a large bowl. Stir until gelatin is dissolved. Stir in sherbet until smooth. , Chill until partially set (watch carefully). Fold in oranges, pineapple and bananas. Pour into an oiled 6-cup mold. Chill until firm.

ORANGE PINEAPPLE SALAD
WONDERFUL FLAVOR!! Cool, soothing and almost taste like a dreamsycle! This salad has always been a hit at our family gatherings. Goes well with any entree. It makes a very pretty salad when served on a lettuce leaf. (Cooking time includes refrigerator time.)

Steps:
- Dissolve packages of orange gelatin mix in 2 cups of boiling water and stir well. Add 2 cups of cold water and stir.
- Place gelatin mixture in a medium size bowl and allow to get cold in refrigerator. When gelatin mixture is slightly beginning to set around edges of bowl (test frequently -- you do not want it to completely set) remove from refrigerator.
- With an electric mixer beat softened cream cheese in a separate bowl and add small amounts (starting with tablespoons full) of gelatin mixture while beating. This will insure the mixture to be smooth.
- By hand, stir in drained mandarin oranges and drained pineapple tidbits. Stir in mini marshmallows. (If you elect to use crushed pineapple, drain extremely well.).
- Pour into a 2 or 3 quart pyrex dish and place in refrigerator. Let mixture get completely cold for at least 6 hours before serving.
- Cut in squares and serve salad on lettuce leaf.
- Note: If you want more of an orange flavor, use 3 ounces of cream cheese.
- Enjoy!

ORANGE SALAD
This nostalgic orange salad is creamy, tangy, sweet and refreshing--the perfect, eye-catching complement to a big holiday feast.

- Spray a 6-cup gelatin mold or bundt pan with nonstick cooking spray. Place the gelatin in a medium bowl.
- Strain the pineapple and mandarin oranges, reserving the liquid in a large measuring cup. Set the fruit aside. Add enough water to the fruit juices to equal 2 cups. Transfer the juice mixture to a small saucepan and bring to a simmer over low heat. Pour the hot juice mixture over the gelatin and whisk to dissolve. Add the orange sherbet and stir until fully melted and combined.
- Add the sour cream and beat with an electric mixture until smooth, 1 to 2 minutes. Pour the mixture into the mold and add the reserved mandarins and pineapples, making sure to distribute the fruit evenly throughout. Refrigerate until fully set, at least 3 hours up to overnight.
- Carefully dip the mold in hot water for 15 to 30 seconds. Remove and place a platter over the top of the mold. Invert onto the platter and serve.
MANDARIN ORANGE & PINEAPPLE SALAD
One of my Mom's favorite salads. Top with a little Cool Whip for a dessert, great for luncheons. Cook time is chill time.

- Slice both stem and blossom ends off of orange.
- Stand the orange on a cutting board, cut side down. Run the blade of the knife between the flesh of the orange and the white pith, slicing off all of the pitch.
- Segment the peeled orange into eight pieces. Cut off any remaining pith from the inside of the orange.
- In a medium bowl mix oranges, pineapple, and whipped topping.
