4 cups flour
2 tablespoons yeast
1/2 cup water
1/2 cup milk
2 eggs
2 tablespoons butter
1/2 tablespoon sugar
1/2 teaspoon salt
vegetable oil, about 2 cups (for frying)

Steps:

  • Combine all ingredients (except oil) in a large mixing bowl , mixing to form a dough.
  • Knead the dough on a floured surface, then return to mixing bowl. Cover with a towel and let sit for 30 minutes.
  • Heat oil in deep skillet over high heat.
  • Pull off tablespoon-size pieces of the dough and roll into a ball. Press down slightly, then drop carefully into oil and fry until golden brown.
  • Drain on paper towels.

  • In a medium-size pot place the meat, pour 3 L of water, add 1 TBSP of salt. Turn the heat on and bring the water to a slight boil.
  • Once the foam starts forming, use a skimmer and remove the foam. At this time turn the heat down and keep simmering the broth. You may also cover the pot with a lid halfway in order to help the meat cook faster. Or you may also use your pressure cooker, or Insta Pot to do this job for you. Simmer the broth until the meat is completely cooked and tender. This process will probably take from 40 minutes to an hour. In Insta Pot the meat and the broth will be ready in 20 minutes.
  • While the meat is boiling start working on the dough. Place warm water, 1/2 TBSP of salt and 2 eggs in a medium-size bowl. Give all the ingredients a stir with a fork.
  • Start adding the flour, 1 cup at a time. Incorporate the first cup, add the second and see if you will need more. Flour is different for everyone. Cups are different everywhere. But the dough should not be too hard and not too soft, as to stick to your hands.

  • Wash the meat in running water. Put it in a saucepan with cold water and bring to a boil. When the water starts boiling, remove the foam on the surface and boil for about 1.5 hours.
  • While the meat is boiling, prepare the dough. Pour the water into a bowl, add egg and salt while stirring. Add the flour and knead the dough. The ready dough should be divided into two equal parts and placed for 10-15 minutes under a dish. This procedure makes it soft and pliable for rolling. Make those 2 parts into a bun which is then flattened by pressing down on it. Keep covered with a linen cloth and left for 15 minutes.
  • Then prepare the Chyk sauce. Finely chop the third onion. Pour 0.5 l of broth in an pot and bring to boil. Add the chopped onions, black pepper and salt to taste. The Chyk should be hot when served with the meat and the noodles, so it is necessary to cover it and store it in a warm place in order to avoid it cooling.
