CLASSIC MIXED BERRY DUMP CAKE

This berry-loaded beauty gets its name from its ease of preparation. All you need to do is dump a few simple ingredients into a 13x9 baking dish and pop it in the oven for a mindless treat that's ready in no time. The fresh blueberries and raspberries give this cake a sweet, summery flavor and a touch of lemon juice and grated lemon peel give it a nice burst of citrus. Serve with a scoop of vanilla ice cream and you'll have yourself a warm-weather dessert that's guaranteed to please all season long.

3 cups fresh blueberries
3 cups fresh raspberries
1/2 cup sugar
1/2 teaspoon ground ginger
1 teaspoon grated lemon peel
2 tablespoons fresh lemon juice
1 box Betty Crocker™ Super Moist™ yellow cake mix
3/4 cup butter, melted
Vanilla ice cream, if desired

Steps:

  • Heat oven to 350°F. Spray 13x9-inch pan with cooking spray.
  • Spread berries evenly in bottom of pan. In small bowl, mix sugar, ginger and lemon peel; sprinkle over berries. Drizzle lemon juice over top.
  • Top with dry cake mix; gently shake pan to distribute evenly
  • Pour melted butter over top, tilting pan to cover as much of the top with butter as possible. Bake 45 to 50 minutes or until top is light golden brown, mostly dry on top and bubbly around edges. Cool 15 minutes before serving. Top individual servings with ice cream.

1 pkg frozen berry mix
1 box white or yellow cake mix
1 can(s) sprite or other clear soda

Steps:

  • 1. Pre-heat oven to 350 degrees
  • 2. Spray 9X13 cake pan with non-stick pan
  • 3. Spread frozen fruit evenly in bottom of pan
  • 4. Sprinkle dry cake mix evenly over fruit
  • 5. Pour can of sprite evenly over cake mix. DO NOT MIX
  • 6. Bake in oven approximately 45 minutes until a light golden brown
  • 7. Allow to cool. Cut into squares and serve with cool whip (optional)

1 box classic yellow cake mix (or white cake mix)
1 bag frozen mixed berries (about 12-ounces)
1/4 cup butter (1-stick)

Steps:

  • Preheat oven to 350°F. Lightly spray no-stick cooking oil over a 9x13-inch baking pan. Sprinkle a little cake mix on the bottom pan with a thin layer. Add the frozen berries on top of the thin layer of cake mix in the pan and spread evenly. Then dump the remaining cake mix evenly over the top of the frozen berries. Cut the butter in to small pieces and spread over the cake mix. Bake 40 to 50 minutes until the top turns a golden brown. Optional: drizzle some honey or caramel while it's hot to give little more flavor. You may also use apple, pineapple, cherry, peach or other your favorite fruit for this cake. I like berries because they are rich with antioxidants.

Two 12-ounce bags frozen mixed berries
1 box yellow cake mix
1/3 cup finely chopped walnuts
1/3 cup rolled oats
1 stick (8 tablespoons) unsalted butter, melted
Ice cream or whipped cream, for serving

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish with cooking spray or butter.
  • Put the berries in the prepared baking dish. Evenly distribute the cake mix over the berries. Sprinkle with the walnuts and oats. Evenly drizzle the butter over the entire dish.
  • Bake until firm and golden brown, about 55 minutes. Let sit 5 minutes. Serve with ice cream or whipped cream.

1/4 cup sugar
2 tablespoons cornstarch
1 tablespoon fresh lemon juice
1 teaspoon vanilla extract
One 15.25-ounce box vanilla cake mix
8 tablespoons unsalted butter, cut into cubes
Vanilla ice cream, for serving

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9-inch square baking dish with nonstick cooking spray.
  • Combine the berries, sugar, cornstarch, lemon juice and vanilla in a medium bowl. Toss to coat the berries. Pour the mixture into the greased baking dish, then spread the cake mix over the top in an even layer. Scatter the butter cubes over the top. Cover the baking dish with aluminum foil and bake until the top is puffed and golden and the fruit is bubbling, about 40 minutes. Remove the foil and continue baking for 5 minutes more.

yellow cake mix
1/2 cup rolled oats
4 cups fresh blackberries
1/2 cup white sugar
1 teaspoon ground cinnamon
1 cup butter, melted (can also use cold butter shavings)

Steps:

  • Preheat oven to 350 degrees.
  • 2 Mix your berries, sugar and cinnamon together and spread in the bottom of a 9×13 pan.
  • 3 Sprinkle dry cake mix and rolled oats over the top of berry mixture.
