CLASSIC MIXED BERRY DUMP CAKE
This berry-loaded beauty gets its name from its ease of preparation. All you need to do is dump a few simple ingredients into a 13x9 baking dish and pop it in the oven for a mindless treat that's ready in no time. The fresh blueberries and raspberries give this cake a sweet, summery flavor and a touch of lemon juice and grated lemon peel give it a nice burst of citrus. Serve with a scoop of vanilla ice cream and you'll have yourself a warm-weather dessert that's guaranteed to please all season long.

Steps:
- Preheat oven to 350°F. Lightly spray no-stick cooking oil over a 9x13-inch baking pan. Sprinkle a little cake mix on the bottom pan with a thin layer. Add the frozen berries on top of the thin layer of cake mix in the pan and spread evenly. Then dump the remaining cake mix evenly over the top of the frozen berries. Cut the butter in to small pieces and spread over the cake mix. Bake 40 to 50 minutes until the top turns a golden brown. Optional: drizzle some honey or caramel while it's hot to give little more flavor. You may also use apple, pineapple, cherry, peach or other your favorite fruit for this cake. I like berries because they are rich with antioxidants.

BLUEBERRY DUMP CAKE FOR TWO
The first time I ever heard of a Dump Cake was when a friend of mine used to make them for potluck occasions at our church. Despite the unusual name, they were delicious! But most recipes make enough for a crowd. I was pleased to be able to make a smaller amount for two of us. I served it with ice cream. Whipped cream would be good, too.

- Drizzle 2 tablespoons of 1/2 and 1/2 over cake mix in each ramekin. Cover with thin slices of butter. Sprinkle with lemon zest, if using.
- Place ramekins into baking pan and bake for 25 - 30 minutes.
- NOTE: Instead of 2 ramekins, you can use 1 round baking pan that is about 6 inches across and with about 3 cups capacity. Increase baking time by about 5 minutes.

- Pour the cherry and blueberry pie fillings in the bottom of the dish. Sprinkle the nuts over the fruit. Open the cake mix and sprinkle the power evenly over the top.
- Slice butter into small pieces and sprinkle evenly over the top of the cake mix. Make sure to make it even so that it all melts into the cake mix.
- Bake for 30-40 minutes until the fruit starts to bubble up around the edges and the edges start to turn golden. I baked mine in a casserole dish that was deeper than a 9x13” pan so it took 40 minutes. Different pans will have different baking times, so start checking after 30 minutes.
