½ cup sliced green bell pepper

Steps:

  • Brown chicken in oil in a large skillet over medium high heat. Add green bell pepper, red bell pepper, carrot and garlic and stir fry for 1 to 2 minutes.
  • In a small bowl, combine cornstarch and soy sauce and mix together; pour mixture into the skillet, along with the pineapple and liquid, vinegar, sugar and ginger. Stir together and bring to a full boil.

0.5 (3 ounce) bell peppers, chopped
3 ounces chopped celery
1 1/2 ounces thin sliced baby carrots
3 ounces snap peas, cut in half widthwise
1/2 cup canned pineapple in juice, undrained
1 teaspoon cornstarch
2 tablespoons light soy sauce
1 teaspoon minced garlic
1 1/2 teaspoons cider vinegar
1 1/2 teaspoons Sugar Twin or 1 1/2 teaspoons Splenda sugar substitute
1/2 teaspoon ground ginger

Steps:

  • Spray a non-stick skillet with cooking spray.
  • Sauté garlic for 2 minutes. Add chicken and brown over medium heat. Add bell pepper, carrot, celery, and pea pods and stir fry for 5-7 minutes, until carrots soften just a bit.
  • In a small bowl, combine cornstarch and soy sauce and mix. Pour into skillet, along with pineapple, vinegar, Sugar Twin, and ginger. Stir well and bring to a boil.
  • Reduce heat and simmer 1-2 minutes until sauce thickens.
  • Serve over hot rice, or cabbage for a "lower carb" option.

227g can pineapple slices in juice, drained and chopped, juice reserved
1 tbsp cornflour
1 tbsp tomato sauce
1 tsp each soy and brown sugar
2 ½ tbsp rice wine vinegar or white wine vinegar
1 tbsp sunflower oil
200g stir-fry pork strips, trimmed of fat
1 red pepper , cut into chunks
3 spring onions , quartered and shredded

Steps:

  • Mix 4 tbsp of pineapple juice into the cornflour until smooth, then stir in the tomato sauce, soy, sugar and vinegar.
  • Heat oil until very hot in a wok, then throw in the pork for 1 min, stirring. Lift pork out onto a plate, then set aside.
  • Add the pepper, stir-fry for 2 mins, then add the pineapple and most of the spring onions for 30 secs. Stir in the sauce for 1 min, splashing in a little water as it cooks, then stir the pork back in for 20-30 secs until just cooked through - it should still be tender. Scatter with the remaining spring onions and serve with rice or noodles.

  • In 2-cup glass measuring cup, mix chicken broth, reserved pineapple juice, soy sauce, vinegar, brown sugar and cornstarch; set aside.
  • In large 12-inch nonstick skillet, heat 1 tablespoon of the oil over medium-high heat until hot. Season pork with salt and pepper. Add to skillet; cook without stirring 2 minutes. Stir occasionally 1 to 3 minutes longer or until browned; transfer to plate, and keep warm.
  • Add remaining 2 tablespoons oil to skillet; stir in broccoli and peppers. Cook 3 to 4 minutes, stirring frequently, until vegetables are crisp-tender. Return pork and juices to skillet. Stir in garlic and gingerroot; cook about 30 seconds or until fragrant.

2 teaspoons cornstarch
2 tablespoons cold water
1 tablespoon sesame oil

4 cups hot cooked rice
Sunflower nuts, if desired

Steps:

  • Mix 1/4 cup water, the vinegar, honey, soy sauce, ginger and pineapple juice. Place tofu in small glass or plastic bowl. Pour juice mixture over tofu; toss gently. Cover and refrigerate 1 to 2 hours.

2 large chicken breasts (medium chunks, or cubed)
3 tbsp cornstarch
salt and pepper to taste
1 small bell pepper (yellow, cut into 1 ½ inch chunks)
1 small bell pepper (red, cut into 1 ½ inch chunks)
1 medium yellow/brown onion (cut into 1 ½ inch chunks)
½ cup pineapple chunks (canned or fresh)
1-2 tbsp scallion for garnish (thinly sliced)

1-2 small hot peppers (thinly sliced for garnish)
Vegetable oil for cooking
⅔ cup granulated sugar
½ cup apple cider vinegar
1 ½ tbsp soy sauce (low sodium, gluten free)
3 garlic cloves (minced)
3 tbsp cornstarch
3 tbsp cold water
¼ cup ketchup (make sure it's gluten free)
1 1/2 tsp honey
1 tsp ginger (grated or paste)

Steps:

  • Sweet and Sour sauce. In a small saucepan add oil over medium heat and saute garlic and ginger for about 1 minute. Stir in sugar, vinegar, honey, ketchup, soy sauce. Simmer until sugar dissolves.
  • Meanwhile, in a small bowl whisk together cornstarch and water and pour the mixture into the saucepan. Simmer on low heat for 10 minutes until the sweet and sour sauce starts thickening. Set aside.
  • Chicken prep. In a medium bowl add chicken, season with salt and pepper, and stir in the cornstarch. Make sure all the chicken pieces are covered in cornstarch. Set aside.
  • Stir fry. In a large skillet or wok over medium to high heat add 2-3 tbsp of vegetable oil and cook the chicken until golden brown on all sides (about 3-4 minutes.) Remove from pan and set aside in a plate lined with a paper towel.
  • In the same skillet add vegetables, cook for few minutes until they get almost tender and throw in the pineapple. Stir well and return the chicken to the pan, pour the sauce on top. Stir and simmer for 1-2 minutes. Taste the sauce for seasoning, add salt and pepper if needed.
  • Serve with scallions, sesame seeds, and rice, noodles, or another favorite side.

1/2 lb udon noodles or 1/2 lb soba noodles
1 -2 head broccoli
3 carrots, diced
1 tablespoon grapeseed oil
3 garlic cloves, minced
1 tablespoon fresh ginger, grated
1 cup snow peas, trimmed and strings removed
1 cup pineapple chunk
2 tablespoons rice vinegar
2 tablespoons mirin
2 tablespoons soy sauce, low sodium
2 tablespoons toasted sesame oil
1/4 cup toasted sesame seeds

Steps:

  • Cook noodles according to directions on package.
  • Drain in colander and rinse thoroughly under cold water.
  • Place colander on a plate and refrigerate.
  • Bring 2-3 cups water to boil.
  • Cut broccoli florets into bite-size pieces.
  • Peel and discard tough outer stems and cut remaining stems into chunks.
  • Place prepared carrots and broccoli in bowl, cover with boiling water and let sit 2 minutes.
  • Drain, rinse with cold water and set aside.

  • Remove vegetables from wok and set aside.
  • Pour remaining tablespoon of vinegar, mirin and soy sauce into empty wok.

3 tablespoons sugar
3 tablespoons rice vinegar
2 tablespoons tomato paste
1 tablespoon low sodium soy sauce
2 dashes hot sauce (we used Sriracha)
1 tablespoon corn starch
3 teaspoons vegetable oil divided
1 ½ pounds medium uncooked shrimp, peeled and deveined
1 tablespoon freshly grated ginger
2 medium garlic cloves minced
1 ½ cups thinly sliced carrots
1 cup ½ inch diced onion
1 medium green bell pepper sliced into ¼ inch strips and each strip cut in half (about 1 ¼ cups total)
1 cup fresh pineapple, cut into 1 inch cubes (or canned if fresh is not available)
1 8-ounce can water chestnuts, drained
¼ cup roasted peanuts
Cooked white rice, for serving

Steps:

  • In a medium bowl, mix pineapple juice, sugar, vinegar, tomato paste, soy sauce, hot sauce and corn starch. Mix to dissolve corn starch. Set aside.
  • In a wok or heavy bottomed pan, heat to medium high and add two teaspoons of the oil. When oil starts to smoke, add shrimp and cook about 3 minutes flipping to cook both sides and cook until pink. Do not over cook. Remove shrimp to a bowl or plate.
  • Add remaining teaspoon of oil and cook ginger and garlic for 30 seconds. Add all other ingredients except reserved liquid from step one. Cook stirring often for 4-6 minutes or until vegetables are starting to get tender but not mushy.
  • Add shrimp back in. Give the sauce a quick stir and add to the shrimp and vegetables and cook for about 2 minutes to thicken sauce and blend ingredients.
  • Remove from heat and serve over white rice.

Steps:

  • Cut the chicken breasts into 1/2 inch chunks.
  • Peel and slice the carrots.
  • Cut the pepper and onion into 1/2-1 inch pieces.
  • Drain the pineapple from the can reserving 1/4 cup of the pineapple juice.
  • Heat a wok or frypan on medium high heat. Add 2 tbsp oil. Stir in the chicken and cook until no longer pink. Scoop the chicken onto a plate.
  • Add the remaining tablespoon of oil and dump in the sliced carrots, pepper and onion. Cover the wok or frypan with a lid. Check every couple minutes and stir to ensure the vegetables do not stick to the bottom of the pan. If needed, add the optional 2 tbsp of water which will help steam the veggies and keep them from burning.
  • Once the carrots are starting to soften, lower the heat and add the pineapple chunks and cooked chicken.
  • In a separate bowl, whisk together the remaining ingredients, ensuring the corn starch is dissolved.
  • Pour the sauce into the frypan and stir it gently through the chicken and veggies. Cook for about 5 minutes or until the sauce is thickened.
  • Serve on cooked rice.

Steps:

  • Sift flour over both sides of pork medallions.
  • Coat a nonstick skillet with low-calorie cooking spray. Add 1 tbsp oil and heat for 1 minute of med-high heat. Add pork and saute for 3 minutes. Turn and cook 2-3 minutes longer. Remove pork from skillet and set aside.
