3 eggs
1 cup milk
1 1/2 tablespoons butter, melted
3/4 cup flour
1 tablespoon sugar
1/4 teaspoon salt
3 tablespoons butter, approximately
1 1/2 cups fresh blueberries
granulated sugar
powdered sugar, sifted
lemon wedge
warm melted butter (optional)

Steps:

  • Beat eggs well.
  • Beat in milk and butter.
  • Sift flour, measure, and sift again with sugar and salt into egg mixture.
  • Beat until smooth.
  • Heat a shallow 8-inch frying pan and butter well.
  • Pour in about 3 tbsp batter then turn and tilt pan so batter covers entire surface.
  • Cook until golden brown on both sides.
  • Sweeten blueberries to taste with sugar.
  • Spoon 3 tbsp of sweetened blueberries in centre of crepe; fold in half and lift to a heated plate; keep warm.
  • Repeat, buttering pan before cooking each crepe.
  • Serve about two filled crepes to each person.
  • Pass powdered sugar and lemon wedges and melted butter, if desired.

One of the best breakfasts ever, light and sweet and so satisfying! This is my take on fruit crepes. I mixed and match several recipes and added my own twist.

1 cup flour
1/4 cup sugar
1/2 teaspoon cinnamon
1/8 teaspoon salt
1 1/2 cups milk
1/2 teaspoon vanilla
2 eggs
4 ounces cream cheese, softened
6 ounces one container vanilla yogurt
2 tablespoons sour cream
2 tablespoons milk
1 teaspoon vanilla
1 1/2 cups berries (blueberries, black berries, raspberries, andor sliced strawberries, etc.)

Steps:

  • For crepes: Combine dry ingredients (flour, sugar, cinnamon, salt) and blend until homogeneous. Add milk, eggs,and vanilla and blend until smooth. The mixture will resemble a thin pancake batter.
  • Heat a 6 inch skillet over medium heat. Spray lightly with cooking spray. Add 1/4 cup of crepe batter to skillet and immediately tilt to cover the bottom of the pan. Cook until the edges begin to look dry and browned. Loosen edges and flip crepe. Cook approximately 15 seconds more, then remove from pan. Repeat for remaining crepes.
  • For filling: Blend cream cheese, yogurt, sour cream, milk, and vanilla until smooth.
  • Assembly: Place one crepe on a flat surface. Spread 1 heaping tablespoon of filling down the center of the crepe. Top with approximately 2 tablespoons of berries. Roll. Repeat for all crepes. Enjoy.

2 cups blueberries
1/4 cup sugar
1/4 cup water
12 crepes, room temperature

Steps:

  • In a medium saucepan combine 1 cup blueberries, sugar and water. Simmer for about 10 minutes. Many berries will begin to burst and syrup should thicken. Add remaining cup of berries and allow them to heat through.
  • Spoon warm compote into crepes. Drizzle with maple syrup and dollop with sweetened whipped cream. Garnish with additional blueberries.

2 eggs
1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
1 cup thawed COOL WHIP Whipped Topping
1-1/2 cups mixed fresh berries (blueberries, raspberries, sliced strawberries)
1 cup maple-flavored or pancake syrup

Steps:

  • Combine flour and salt in medium bowl. Gradually whisk in 1 cup milk until blended. Add eggs; mix well.
  • Heat small heavy nonstick skillet on medium-high heat; spray with cooking spray. Pour about 1/4 cup batter into skillet; tilt skillet to evenly coat bottom with batter. Cook 1 to 2 min. or until bottom of crêpe is lightly browned; turn. Cook to brown other side. Transfer crêpe to plate. Repeat with remaining batter to make 7 more crêpes.
  • Beat pudding mix and remaining milk in separate medium bowl with whisk 2 min. Stir in COOL WHIP.
  • Spoon 1/4 cup pudding mixture down center of each crêpe; roll up. Place in serving dish; top with berries. Serve with syrup.

175g plain flour
3 large eggs
450ml milk
sunflower oil , for frying

Steps:

  • Weigh the flour in a large jug or bowl. Crack in the eggs, add half the milk and a pinch of salt. Whisk to a smooth, thick batter. Add the remaining milk and whisk again. Set aside for at least 30 mins.
  • Heat a large non-stick crêpe pan or frying pan. Add a drizzle of oil, then wipe out the excess with kitchen paper. When the pan is hot, add enough batter to just cover the surface, swirling it and pouring any excess back into the bowl. The pancake should be as thin as possible. When the edges are peeling away from the sides of the pan, shake it to see if the pancake easily releases and is browning on the underside. If not, cook a little longer. Flip and cook the other side for a minute or two. Serve, or keep warm in a low oven.

We love these crepes! Blueberries are a great fresh filling, but so are meats and cheeses! This recipe is our take on a Pampered Chef® recipe that we make every other weekend!

⅓ cup milk
3 tablespoons all-purpose flour
1 large egg
3 teaspoons unsalted butter, melted, divided
2 teaspoons white sugar
¼ cup freshly squeezed orange juice
¼ cup white sugar
3 pinches ground cinnamon, or to taste
1 teaspoon grated orange zest
1 cup fresh blueberries
½ cup whipped cream, or to taste

Steps:

  • Whisk milk, flour, egg, 2 teaspoons melted butter, and 2 teaspoons sugar together in a bowl until smooth. Cover and refrigerate crepe batter for at least 30 minutes, or overnight.
  • Heat an 8-inch saute pan over medium heat. Brush pan with 1 teaspoon melted butter. Pour in 1/4 cup crepe batter; immediately tilt the pan and swirl so the batter covers the entire bottom of the pan. Cook until crepe begins to bubble and the edges are turning brown, 1 to 2 minutes. Flip crepe and cook until the other side browns slightly, about 1 more minute. Remove to a plate and repeat to cook remaining 3 crepes.
  • At the same time, place orange juice, 1/4 cup sugar, and cinnamon in a small saucepan; bring to a boil. Remove from heat and let cool for 5 minutes. Stir in orange zest.
  • Fill each crepe with blueberries and whipped cream. Roll up and pour syrup over top.

1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon ground nutmeg
2 teaspoons granulated sugar
1 cup 2% low-fat milk
3 eggs
3 tablespoons shortening or 3 tablespoons nonstick cooking spray
2 cups fresh blueberries

Steps:

  • Combine first 7 ingredients in a large bowl or measuring cup.
  • Blend completely until smooth.
  • Let stand at room temperature 1 hour before cooking, or cover and refrigerate overnight.
  • Heat an 8-inch (20cm) non-stick skillet over medium high heat.
  • melt about 1/2 tsp (3ml) shortening in the skillet until very hot.
  • Tilt pan back and forth to fully coat bottom.
  • Alternatively spray the pan with cooking spray before heating.
  • Pour in just under 1/4 c (60ml) batter with 1 hand, tilting it around in a full circle as the batter hits the pan.
  • Replace the skillet on the heat.
  • Using a flexible spatula,gently lift an edge when you see tiny bubbles on the surface of the crepe and when the edges start to turn brown (this will take only seconds per crepe). When the underside is golden brown flip it over shaking the pan to settle the crepe evenly on the skillet.
  • Cook another few seconds until golden brown.
  • Slide onto a paper towel lined plate.
  • Place another paper towel and repeat process until batter is used up.
  • Make sure the pan is always hot and a tiny amount of shortening coats the pan between crepes.
  • Crepes can be filled with berries and cream then rolled or folded up into halves or quarters.

I made these for the very first time yesterday, and I must say how absolutely DELICIOUS they were! Good enough to eat alone, without any fillings really. They're super easy, and a great breakfast or brunch item. Enjoy!

1 1/2 cups whole milk
3 eggs
3 tablespoons sugar
1 teaspoon salt
4 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
1 cup flour

Steps:

  • In a blender, combine milk and eggs, blend until foamy, approx 20 seconds or so. Turn off.
  • Add sugar and salt, blend for a few seconds turn off.
  • Add melted butter and vanilla, blend a few seconds turn off.
  • Add flour, blend until all mixed.
  • Okay now for cooking them, this is what I did --
  • I had a small tefal frying pan, (measured 6-1/2 on bottom, 9-1/2 or so across top) I sprayed it with non-stick Butter Flavor cooking spray. Heat it on medium-high heat.
  • Use a 1/3 cup measuring cup and dump crepe mixture into pan, swirl around real quick to coat bottom of pan.
  • I used a silicon spatula to lift edges of crepe and to form round if any stray edges -- it will start to bubble, not much, but its safe to flip when you see edges on underside becoming brown. Just flip with plastic spatula.
  • So once first side cooked, flip and cook about 2 minutes or so, transfer to plate and continue with rest of batter.
  • *** Each crepe I made, I sprayed pan with butter cooking spray. So when I took crepe out, i sprayed bottom of pan before putting next cup of batter, do each time.
  • Serve with powdered sugar, jam, fruits any filling of your choice!
  • *** For chocolate crepes, add two tablespoons of chocolate syrup to blender when adding in vanilla.
  • *** For saltier crepes to make with meat or veggies, omit sugar and vanilla.
