Here's what you need: bananas, frozen mixed berry, vanilla extract, almond milk

Ingredients

3 bananas
½ cup frozen mixed berry
1 teaspoon vanilla extract
½ cup almond milk

Steps:

Cut the bananas into coins, then place in a resealable bag. Freeze overnight, or until solid.
Add the frozen bananas, berries, vanilla, and almond milk to a food processor and blend on high speed until smooth.
Transfer the mixture to a loaf pan and smooth the top with a rubber spatula. Freeze for 1 hour, or until solid.
Scoop and serve.
Enjoy!

This is a slight adaptation of a recipe from one of my favorite cookbooks, "500 Fat Free Recipes." This is a lovely end to your meal that you can feel reasonable eating. Healthy and decadent tasting though still helping you get all your fruit servings. I used raspberry flavored honey which was lovely, but any honey will be good here. The original recipe called for 2 cups strawberries but I really enjoyed the strawberry/blueberry combination.

Ingredients

1/2 cup plain fat-free yogurt
2 tablespoons honey
3 frozen bananas
1 cup fresh strawberries
1 cup fresh blueberries

Steps:

Peel the bananas and slice them into rounds. Keep the rounds frozen until you are ready to make and eat.
In a blender or food processor put the yogurt and honey and blend until mixed. Then add the banana rounds and process until smooth.
Put some banana cream in the bottom of each parfait glass. Add some sliced strawberries and some blueberries. Add more cream and more berries until all your supplies are used up.
Eat right away!

1 cup sugar
1/4 cup cornstarch
3 tablespoons strawberry gelatin powder
1 cup cold water
1 pint fresh strawberries, sliced
1-3/4 cups cold milk
1 package (3.4 ounces) instant vanilla pudding mix
3 medium firm bananas, sliced
1 tablespoon lemon juice
6 cups cubed angel food cake
2 cups heavy whipping cream, whipped
Additional strawberries or banana slices, optional

Steps:

In a saucepan, combine the sugar, cornstarch and gelatin; stir in water until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. Stir in strawberries; set aside. , In a large bowl, combine milk and pudding mix. Beat on low speed for 2 minutes; set aside. Toss bananas with lemon juice; drain and set aside. , Place half of the cake cubes in a trifle bowl or 3-qt. serving bowl. Layer with half of the pudding, bananas, strawberry sauce and whipped cream. Repeat layers. Cover and refrigerate for at least 2 hours. Garnish with additional fruit if desired.

This is a simple, lovely way to serve fresh summer berries. I made this for brunch today and found it a refreshing end to the meal. This dish could also be made year-round using unsweetened frozen berries that have been thawed. Note: Preparation time includes time needed for berries to sit at room temperature.

1/2 cup blackberry
1/2 cup raspberries
1/2 cup strawberry, hulled and quartered
1/2 cup blueberries
1 teaspoon lemon zest
2 tablespoons granulated sugar
1/4 cup light cream (or half-and-half or milk)

Steps:

In a medium bowl, combine berries, lemon zest and sugar. Gently toss, being careful not to break the blackberries and raspberries too much.
Allow berry mixture to sit at room temperature for 30 minutes until berries begin to create their own juice, and sugar is dissolved.
Serve in four small serving bowls (or dessert bowls) with around 2 tbs. cream drizzled attop per bowl.

Make the pudding first by Mixing the pudding mix together with the milk according to the package instructions. Set the pudding in the fridge until needed.
Make the whipping cream by whipping the heavy cream with your electric mixer until it forms soft peaks. Now pour in the sugar as you continue to beat the cream until the peaks firm up and the sugar dissolves. Set in the fridge till needed.
Tear the angel food cake into 1 or 2 inch chunks and lay half of them into the bottom of the large trifle bowl. If the layer is too deep use however much cake you prefer.
