ASIAN-APRICOT GLAZED PORK LOIN CHOPS
This recipe is based on one that was from my Grandmother's handwritten recipe note-cards. Over the years I've played with it and ended up with this Asian-inspired version.

Steps:
- Chop onion.
- Mix together the 1/4 tsp of salt, pepper, onion powder, garlic powder and the Ginger.
- Season loin chops with the spice mixture.
- Heat a large skillet over medium-low heat, and add the 2 TBS of oil.
- Brown the onion and the loin chops for approximately 5 minutes per side.
- Mix together all the remaining ingredients in a bowl.
- When loin chops are browned on both sides, add the sauce mixture.
- Simmer on medium-low heat for approximately 15-20 minutes, until pork is done to an internal temperature of 170 degrees and sauce is reduced and thickened.
- Taste sauce (say Yum) and add more pepper or soy sauce to taste, if desired.
- Serve over steamed white rice.

- Place the pork chops into a casserole dish. Mix onion soup mix, Russian dressing and apricot preserves together.
- Pour mixture over chops and bake for 1 hour.

Steps:
- Cut each squash half into 3 wedges; place in slow cooker. Top with onions, garlic and chops. Mix broth, jam, mustard, thyme and pepper until blended; pour over chops. Cover with lid.
- Cook on LOW 5 to 6 hours (or on HIGH 2-1/2 to 3 hours). Transfer chops and vegetables to platter; cover to keep warm.
- Skim and discard excess fat from liquid in slow cooker. Add enough water to reserved liquid to measure 1-3/4 cups; pour into medium saucepan. Mix cornstarch and 1/4 cup cold water until blended. Add to liquid in saucepan; mix well. Bring to boil on medium heat, stirring constantly; cook and stir 1 min. or until thickened. Spoon over chops and vegetables.

Steps:
- Place apricots in a bowl.
- Pour orange juice over apricots.
- Add preserves, brown sugar, and curry powder and stir gently. Set aside.
- Heat large skillet over medium high heat. Add oil.
- Cook chops about 3 minutes on each side or until browned.
- Season lightly with salt and pepper.
- Reduce heat to low. Add apricot and juice mixture.
- Cover and simmer about 5 minutes or until chops are done.
- Remove from heat and sprinkle with green onions.

PORK LOIN WITH ONIONS AND DRIED APRICOTS
GOOD TO KNOW Soaking pearl and cipollini onions in warm water for just ten minutes makes their thin, tight skin easier to remove. After soaking, simply cut off the root end and peel back the skin. If you can't find pearl or cipollini onions, you can substitute one large or two small yellow onions, each cut into eight wedges.

- Preheat oven to 350°F. In a large Dutch oven or other heavy pot, heat oil over medium-high. Pat dry pork, sprinkle with coriander, and season with salt and pepper. Cook until browned on all sides, about 10 minutes total. Transfer pork to a plate. Reduce heat to medium and add onions to pot. Cook, stirring, until onions are golden brown, about 3 minutes.
- Return pork to pot and add wine, broth, fennel seeds, orange zest, and apricots. Bring mixture to a boil. Cover and transfer to oven. Cook until an instant-read thermometer inserted in thickest part of pork registers 140°F, 25 to 30 minutes.
- Transfer pork to a cutting board, tent loosely with foil, and let rest 10 minutes. Bring cooking liquid to a boil over medium-high heat and cook until slightly thickened, about 3 minutes. Stir in vinegar.
- Thinly slice pork against the grain and serve with onions, apricots, and sauce.
