HIDDEN VALLEY RANCH SAUSAGE STARS
These are easy to make you can do the wonton wraps the day or so ahead and have the sausage mixture made in advance then just 5 minutes before serving you fill the wraps and pop them in the oven. For a lighter exterior I prefer to use Spring Roll wraps. Use your regular pork breakfast sausage. if you wish use Italian sausage or bratwurst

Steps:
- Heat oven to 350 degrees F.
- Combine drained cooked sausage meat with the cheeses, salad dressing, olives and red pepper
- Lightly oil mini muffin tins and press a wrap in each tine so there are 4 wings sticking out
- Brush with oil bake 5 minutes until golden, remove wraps from pan, place on a baking sheet
- Fill wraps with the sausage, cheese mixture
- Bake for 5 minutes or until the cheese is bubbly& brown.

- Lightly press wonton wrappers onto the bottoms and up the sides of greased miniature muffin cups. Bake at 350° until edges are browned, about 5 minutes., In a large skillet, cook sausage over medium heat until no longer pink, breaking into crumbles; drain. Stir in the cheese, peppers, onions and salad dressing. Spoon a rounded tablespoon into each wonton cup. Bake until heated through, 6-7 minutes.

SAUSAGE-FILLED STARS
This is a fabulous appetizer; it does take a little time to prepare, but the taste is well worth it. If you want to freeze them for later use, they turn out just as good; just pop them in the freezer after filling the cups and then bake a bit longer then in the original recipe.

- Preheat oven to 350 degrees F (175 degrees C).
- Line each cup a mini-muffin pan with a wonton wrapper, carefully pressing each into the shape of a cup. Take care to not tear the wrapper as they will tear easily.
- Bake in preheated oven until golden brown, 8 to 10 minutes. Transfer 'cups' to a baking sheet; repeat until remaining wontons are all baked.
- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned completely, 5 to 7 minutes; drain and discard grease. Set sausage aside to cool.
- Stir cooled sausage, Colby cheese, green onions, red bell pepper, green bell pepper, and ranch salad dressing together in a bowl; spoon into the wonton cups.
- Bake in oven until cheese has melted and is beginning to bubble, 15 to 20 minutes.

CHEESEY SAUSAGE STARS
I made these for a get together and now am asked frequently to please make those Sausage Stars! These are a big hit with family and friends.

- 1. Cook sausage and drain. Add next 5 ingredients and blend together well. Set aside.
- 2. Spray muffin pan. Press wonton wrappers into pan and sides to form mini "bowls". (Sides may not come up all the way.)Bake "bowls" 5 mins on 350 degrees. Remove from oven and fill with rounded Tablespoon of sausage mixture.(more or less if prefer) Bake an additional 5 mins then remove from oven. Remove sausage stars from muffin tin and place on platter.
- 3. After removing sausage stars repeat step 2 until sausage mixture or wonton wrappers are used up.
- 4. Makes between 3 to 4 dozen depending on how much filling is put into each "bowl"
SAUSAGE CREAM CHEESE WONTONS
These wontons have a great taste; almost like sausage gravy. I got this recipe from cooks.com and adapted it to my tastes. Cooking times and servings are just estimates.

- Cook and drain sausage.
- Add cream cheese, A1 Steak Sauce and garlic powder, mix well.
- Chill mixture until cream cheese becomes cool.
- Put 1 to 1-1/2 teaspoons of mixture onto the center of a wonton wrapper.
- Moisten edges of wonton with water.
- Fold wonton over to form a triangle and seal edges.
- Fold all three corners over to form what looks like a envelope; seal corners together with water.

While sausage mixture cools, spray Pam on mini-muffin pan. Place one wonton in each mini-muffin slot and bake 5 minutes until golden brown. Remove baked wontons to a foil-lined baking sheet.
