Fresh sweet and tart strawberries and blueberries layered with mascarpone-yogurt cream is a delicious no-bake dessert recipe that's super easy and fast to make.

½ cup (3 oz.) fresh blueberries
½ lemon, zest
1 tsp lemon juice
½ cup mascarpone cheese
½ cup plain Greek yogurt (preferably 0% fat)
½ lemon, zest
1 tbsp lemon juice
1 tbsp pure honey
½ tsp vanilla extract

Steps:

  • In a medium bowl, combine the strawberries, blueberries, lemon zest, and lemon juice together. Set aside.
  • In another bowl, stir together the mascarpone, yogurt, lemon zest, lemon juice, honey, and vanilla extract until creamy and uniform in texture. Taste and adjust for sweetness and tartness by adding more honey or lemon juice according to your personal preferences.
  • Take two glasses and layer the fruit and cream. Serve immediately or chilled.

This dessert is so fast and easy and looks cooked because we brulee sugar on top of the mascarpone. I'm not a big dessert person but this is my idea of the perfect finish to that early summer dinner.

1 pint whole strawberries, stems removed
½ pint fresh blackberries
⅓ cup white sugar
½ orange, juiced
1 (8 ounce) container mascarpone cheese
1 teaspoon lemon zest
½ teaspoon white sugar
3 drops vanilla extract, or to taste
2 shortcakes, halved horizontally
4 teaspoons white sugar, or as needed

Steps:

  • Mix strawberries, blackberries, 1/3 cup sugar, and orange juice together in a bowl. Cover the bowl with plastic wrap and refrigerate, 2 hours to overnight.
  • Stir mascarpone cheese, lemon zest, 1/2 teaspoon sugar, and vanilla extract together in a bowl.
  • Spread mascarpone mixture over the top of each shortcake half; sprinkle about 1 teaspoon sugar over the top to cover. Caramelize the sugar using a kitchen torch, 20 to 30 seconds per shortcake. Place each shortcake in a shallow bowl and surround with berries and accumulated juices.

I went on a mission to re-create the dessert and came up with this recipe. The cream is soft -- not stiff or firm, like whipped cream. You can use your favorite fresh fruit or coulis. Layer it in a clear glass goblet or parfait dish; about 2 cups of berries or fruit coulis will be right.

Steps:

  • Combine vinegar, 2 teaspoons sugar, and lemon juice in heavy small saucepan. Stir over medium heat until sugar dissolves. Boil until syrup is reduced to scant 1/4 cup, about 3 minutes. Transfer to small bowl; cool completely. (Can be made 2 days ahead. Cover and refrigerate.)

sweet pastry dough
pie weights or raw rice for weighting shell
1 cup mascarpone cheese (about 8 ounces)
1/3 cup well-chilled heavy cream
1/4 cup sugar
1 1/2 cups small strawberries
1 cup raspberries
1 cup blueberries
1 cup blackberries
2 tablespoons sweet orange marmalade
2 tablespoons dark berry liqueur such as blueberry, blackberry, or cassis

Steps:

  • Preheat oven to 375°F.
  • On a floured surface with a floured rolling pin roll out dough into an 11-inch round (about 1/8 inch thick) and fit into a 9-inch tart pan with a removable fluted rim. Roll rolling pin over top of shell to trim dough flush with rim and with a fork prick bottom of shell all over. Chill shell 30 minutes, or until firm.
  • Line shell with foil and fill with pie weights or raw rice. Bake shell in middle of oven 20 minutes and carefully remove foil and weights or rice. Bake shell until golden, about 10 minutes more, and cool completely in pan on a rack. Shell may be made 1 day ahead and kept in pan, loosely covered, at room temperature.
  • In a bowl with a whisk or an electric mixer beat together mascarpone, cream, and sugar until mixture holds stiff peaks. Spoon mixture into shell, spreading evenly.
  • Quarter strawberries and in a large bowl combine with remaining berries. In a small saucepan simmer marmalade and liqueur, stirring, until reduced to about 3 tablespoons and pour over berries. With a rubber spatula gently stir berries to coat evenly. Mound berries decoratively on mascarpone cream. Tart may be assembled 2 hours ahead and chilled. Bring tart to room temperature and remove side of pan before serving.

1 lb strawberry, hulled (retain some whole strawberries for garnish)
1 tablespoon grenadine
1/2 tablespoon black peppercorns
3 ounces caster sugar
2 teaspoons balsamic vinegar
1 tablespoon vanilla extract
1 tablespoon strawberry liqueur or 1 tablespoon vodka
1 cup single cream
8 ounces mascarpone cheese

Steps:

  • Place the hulled strawberries and whole strawberries in a bowl and crush lightly with a fork or potato masher, mix with the grenadine and set aside.
  • Place peppercorns in a frying pan, dry roast on a stove for a few minutes, allow to cool and then coarsely crush using a mortar and pestle.
  • In another bowl mix the caster sugar with the balsamic, vanilla and the liqueur or vodka, mix in the single cream.
  • Beat the mascarpone until smooth and mix into the single cream mixture.
  • Spoon a little of the crushed strawberries into the bottom of Martini glasses, wineglasses or Knickerbocker Glory glasses. Spoon over a little of the cream mix and sprinkle with some of the peppercorns.
  • Repeat until the glasses are full, finishing with the cream and the final sprinkle of pepper.
  • Garnish with whole or cut strawberries.
