BERRY SAUCE
Quick and easy to make, this mixed berry sauce is delicious spooned over cheesecake, vanilla ice cream, pancakes, or waffles.

Steps:
- Combine all of the berries in a large bowl and stir gently to combine. Spoon about ⅔ of the mixed berries into a medium saucepan; transfer the remaining berries to a small bowl and refrigerate until ready to serve.
- Add the lemon juice and sugar to the berries in the sauce pan. Bring to a gentle boil over medium heat and cook until the fruit is syrupy, about 5 minutes.
- Transfer the hot berry mixture to a blender and purée until smooth. Set a fine mesh strainer over a bowl. Pour the sauce into the strainer and use the back of a soup ladle and circular motions to force the sauce through the strainer and into the bowl. Discard the seeds that remain in the strainer. Refrigerate the berry sauce until cold or ready to serve.
- Before serving, add the reserved berries to the sauce and stir to combine. If the sauce seems too thick, add a few tablespoons of water, a little at a time, until the desired consistency is reached.
- Freezer-Friendly Instructions: The sauce can be frozen in an airtight container for up to 3 months.

This is a simple, lovely way to serve fresh summer berries. I made this for brunch today and found it a refreshing end to the meal. This dish could also be made year-round using unsweetened frozen berries that have been thawed. Note: Preparation time includes time needed for berries to sit at room temperature.

- In a medium bowl, combine berries, lemon zest and sugar. Gently toss, being careful not to break the blackberries and raspberries too much.
- Allow berry mixture to sit at room temperature for 30 minutes until berries begin to create their own juice, and sugar is dissolved.
- Serve in four small serving bowls (or dessert bowls) with around 2 tbs. cream drizzled attop per bowl.

MASCARPONE CREAM AND BERRIES
After a nice dinner in an Italian restaurant, my mom, daughter & I shared a fabulous dessert - the sweet cream was rich and berries were layered inside. I went on a mission to re-create the dessert and came up with this recipe. The cream is soft -- not stiff or firm, like whipped cream. You can use your favorite fresh fruit or coulis. Layer it in a clear glass goblet or parfait dish; about 2 cups of berries or fruit coulis will be right.

- In a large bowl, whisk the mascarpone, heavy cream, confectioners' sugar, and vanilla until smoothly blended.
- Using half of the mascarpone cream, divide it evenly among 4 dishes or goblets. Place a layer of your favorite berries or coulis over, and spoon the remaining mascarpone over. Top with a few more berries or coulis.
- Cover and refrigerate for 1 hour or as long as overnight. Serve cold.
