These Sautéed Peppers and onions have a sweet caramelized outside and a tender flavorful inside. They cook to perfection in just minutes in a hot skillet.

1 sweet yellow onion (large)
1 green bell pepper
1 red bell pepper ((or yellow or orange))
1 tbsp oil (vegetable or olive)
1/2 tsp salt

Steps:

  • Cut the onion in 1/4 in strips. Remove the seeds and ribs from the bell pepper and cut into 1/2 in strips.
  • Heat oil in a large skillet over medium high to high heat. Once the oil is hot, carefully add the peppers and onions and season with salt. Allow to cook on the first side for 2-4 minutes without stirring to get a little char on the edges. Then stir and cook an additional 3-4 minutes stirring about every 1 minute.
  • Cook until the onions just start to turn translucent and the peppers are still slightly firm. If at any point, the peppers and onions start to get too brown, turn the heat to low and continue to cook to the desired consistency.

2 tablespoons olive oil, divided
1 clove garlic, chopped
1 green chile, seeded and sliced
1 red bell pepper, seeded and julienned
1 orange bell pepper, seeded and julienned
1 yellow bell pepper, seeded and julienned
1/4 red onion, sliced
Zest and juice of 1 lemon
Kosher salt

Steps:

  • In a saute pan, heat 1 tablespoon olive oil, and then sweat the garlic, and green chili over medium heat. Add the red, orange, and yellow peppers, and saute for 1 minute.
  • Add the red onion, and lemon zest to the pan, and continue cooking until the peppers are slightly tender.
  • Remove the pan from the heat, season with salt, to taste, and add the lemon juice. Drizzle with the remaining 1 tablespoon olive oil, and serve.

I am not a fan of overly cooked bell peppers. To my palate they become bitter; look and taste slimy. However, put a plate of grilled, stir fried or sauteed bell peppers in front of me and that's a different story. This is from Martha Stewart's Everyday Food supplemental magazine. The trick is NOT to overcook the bell peppers to both maintain the sweet taste and the lovely colors. Try to use 2 different color of bell peppers if you can; orange, red, yellow or all three if you wish.

2 large bell peppers (red, yellow or orange, green not recommended.)
1 tablespoon olive oil
1/2 small red onion, sliced into crescents
1 garlic clove, minced (my addition, can omit)
salt, to taste
fresh ground black pepper, to taste

Steps:

  • Remove stems from peppers. Halve the bell peppers crosswise then cut into 1/2" strips.
  • Heat the olive oil in a non-stick pan over medium heat.
  • Add bell peppers and sauté for about 2-3 minutes. Then add the red onion crescents (and garlic if using) and sauté another 2 minutes. Be careful not to burn.
  • You want the bell peppers to be slightly softened but still firm. Does that make sense?.
  • Season with salt and pepper and transfer to serving platter. Great as a side dish or served over pasta or rice.

1 3/4 lbs broccoli
1/4 cup unsalted butter (1/2 stick)
1 red bell pepper, cut julienne
1/2 cup sliced green onion (including some of green tops)
2 tablespoons minced fresh parsley
1 tablespoon fresh lemon juice
salt & freshly ground black pepper

Steps:

  • Cut off broccoli florets; cut large florets in half lengthwise.
  • Peel stems and slice 1/4-inch thick.
  • Steam broccoli until just crisp-tender, about 4 minutes for florets and 7 minutes for stems.
  • Rinse under cold water, drain and pat dry.
  • Melt butter in large skillet over medium heat.
  • Add bell pepper and saute until softened, about 5 minutes;increase heat to high.
  • Add broccoli, onions, parsley, juice,salt and pepper and toss until heated through.

  • Remove the seeds and ribs from the peppers; cut lengthwise into strips and halve crosswise. Heat the oil in a large nonstick skillet over medium heat. Add the peppers and onion; season with salt and pepper. Cook, stirring occasionally, until the peppers are just tender, about 10 minutes.

This is a great partner for almost any sort of pasta or grain dish, hot or cold, or to serve alongside a summertime sandwich. Use leftovers in wraps.

2 tablespoons olive oil
1 medium onion, quartered and thinly sliced
2 garlic cloves, minced
2 medium red bell peppers, cut into narrow strips
2 medium green bell peppers, cut to match red pepper
2 medium yellow bell peppers, cut to match red pepper
1/4 cup dry white wine
1/4 cup oil-packed sun-dried tomatoes, cut into strips
2 medium tomatoes
2 to 3 tablespoons minced fresh parsley, optional
Salt and freshly ground pepper to taste

Steps:

  • Heat the oil in a large skillet. Add the onion and sauté over medium heat until translucent.
  • Add the garlic, bell peppers, wine, and sun-dried tomatoes. Stir in 1/4 cup water and bring to a simmer. Cook, covered, over medium-low heat until the peppers are tender but not overdone, about 8 minutes.
  • Stir in the fresh tomatoes and continue to cook, uncovered, just until they have lost their raw quality, 3 to 4 minutes. Add the optional parsley and season with salt and pepper. Serve at once.

1 large red bell pepper, cored, seeded and cut into 1-inch pieces
1 large yellow bell pepper, cored, seeded, cut into 1-inch pieces
1 lb fresh large button mushroom, sliced
1 1/2 teaspoons dried tarragon or 2 tablespoons fresh tarragon, chopped
salt, to taste
fresh ground black pepper, to taste
1/2 teaspoon onion powder
1/2 teaspoon garlic powder

Steps:

  • Heat oil in a heavy nonstick skillet over medium heat.
  • Saute bell peppers and mushrooms 8-10 minutes or until vegetables are tender & there is no more liquid.
  • Add garlic powder and onion powder.
  • Season with salt and pepper to taste.
  • Stir in tarragon and cook for about another minute.

2 1 1/2-pound top sirloin steaks (or one 2- to 3-pound steak), 1 inch thick
6 tablespoons olive oil
2 tablespoons balsamic vinegar or red wine vinegar
6 garlic cloves, minced
1 large onion, sliced
1 large red bell pepper, sliced
1 large green bell pepper, sliced
1 cup unsalted beef broth or low-salt chicken broth
Crumbled Gorgonzola or other blue cheese
Minced fresh Italian parsley

Steps:

  • Place steaks in glass baking dish. Mix 4 tablespoons oil, vinegar and half of garlic in small bowl. Pour over steaks; turn to coat. Marinate 30 minutes at room temperature or refrigerate 3 hours.
  • Heat 2 tablespoons oil in heavy large skillet over medium heat. Add onion, bell peppers and remaining garlic and sauté 8 minutes. Add broth, increase heat and boil until vegetables are tender and liquid thickens slightly, about 5 minutes. Season with salt and pepper. (Can be prepared 3 hours ahead. Cover and chill.)
  • Prepare barbeque (high heat) or preheat broiler. Remove steaks from marinade. Sprinkle with salt and generous amount of pepper. Grill steaks until cooked as desired, about 5 minutes per side for rare. Transfer steaks to platter and let stand 5 minutes. Bring vegetables to simmer. Slice steaks; arrange on platter. Top with vegetables and skillet juices. Sprinkle with cheese and parsley.

1 red pepper, diced
1 orange bell pepper, diced
1/2 white onion, diced
3 medium tomatoes, diced
1 (19 ounce) can black beans, drained and rinsed
1 (7 ounce) can corn
1 teaspoon cumin (or to taste)
1 pinch chili pepper (or to taste)
1 pinch paprika (or to taste)
salt & pepper
1 lime, juice of

Steps:

  • In a large non stick skillet sauté onions until they soften. Add peppers and seasonings and sauté until peppers are almost tender. Add tomatoes, beans, corn and lime juice. Cover and let simmer until tomatoes are soft but not mushy.
  • Serve with tortilla chips and sour cream.
  • As an alternative, once the peppers are tender transfer the mixture to an oven-safe dish, mix in the remaining ingredients, cover with shredded cheese and bake until the cheese melts.

1/2 yellow onions or 1/2 white sweet onion, sliced in strips
1/2 clove garlic, very finely chopped
2 -3 tablespoons extra virgin olive oil
1 dash white pepper or 1 dash black pepper, to taste
1 dash oregano, to taste
1 dash red pepper flakes, to taste
3 -4 leaves fresh basil, left whole

Steps:

  • In a large frying pan, gently heat the olive oil and garlic for about 60 seconds on a low flame.
  • Add the peppers and onions, basil, pepper, oregano, and pepper flakes.
  • Sautee until the the onions are soft and transparent, the peppers and basil"wilt", and the garlic is lightly golden, 10-15 minutes.
