NIF'S PRETTY BELL PEPPER RICE PILAF



Nif's Pretty Bell Pepper Rice Pilaf image

I came up with this tonight, trying to use some of the veggies in my fridge while they were still good! I like to overlap steps to save time so I hope that the instructions make sense! You can use any kind of broth to make the rice or just use water. I also really enjoyed the rosemary but you don't need to add any herbs if you don't want to. The type of rice is also optional. Just make sure that you end up with about 2.5 cups of cooked rice. Enjoy!

Number Of Ingredients 10

1 cup converted long grain white rice
2 cups chicken broth (or whichever kind you prefer, water works in a pinch)
2 teaspoons olive oil
1/2 cup onion, chopped
1/2 cup carrot, diced
2 garlic cloves, minced
1 cup bell pepper, diced (red, yellow or orange)
2 teaspoons fresh herbs, chopped, optional (your favourite, I used rosemary)
salt and pepper
2 tablespoons green onions, thinly sliced (optional)

Steps:

  • Place rice and broth in a saucepan. Bring to a boil. Cover with lid, set heat to minimum and cook for 20 minutes. No peaking! If you are using a different kind of rice, just follow the instructions. You want your rice to be cooked, but not mushy!
  • Meanwhile, heat olive oil in a large nonstick frying pan over low-medium heat.
  • Cut veggies in the order listed (onion, carrot, garlic and peppers). Add each type of veggie to the pan as they are cut. When they are all added, turn heat to low and let veggies sweat. You want them to be soft but not browned. Add herbs, if using.
  • When rice is done, add it to the frying pan. Give it all a stir, taste and add salt and pepper to your liking. Serve immediately as rice will become mushy if you let it sit.
  • Top with green onion.

3 tablespoons butter (cubed)
1/2 small sweet onion (finely chopped (about 1/2 cup))
1/2 red bell pepper (finely chopped)
1/4 cup cilantro (finely chopped)
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 cup granulated sugar
1 1/3 cups long grain white rice
3 cups chicken broth

Steps:

  • Preheat oven to 350°F.
  • Place all of the ingredients in a 9x13 pan. Stir to combine. Cover with foil and bake at for 60-65 minutes, stirring once halfway through bake time.
  • The finished rice should have all of the liquid absorbed and will be soft and tender when biting into it.

1 cup white rice
2 cups water
2 tbsp olive oil
1 red bell pepper (diced)
1 yellow bell pepper (diced)
1 small onion (diced)
2 cloves garlic (minced)
1 tsp coriander
1/2 tsp cumin
1/2 tsp turmeric
1/4 tsp salt
1/4 tsp pepper
1 tsp dried parsley
1/4 tsp basil

Steps:

  • In a medium sized pot, heat olive oil over medium heat. Add bell peppers and onion. Cook for 4-5 minutes.
  • Add garlic, coriander, cumin, turmeric, salt and pepper. Cook for another minute or until fragrant.
  • Add in rice, toast the rice for 1-2 minutes, until coated in spices. Add water, parsley and basil. Bring to a boil, cover and reduce to a simmer. Cook for 20 minutes.

2 teaspoons vegetable oil
2 garlic cloves, finely chopped
6 green onions, chopped
1 cup long grain rice or 1 cup brown rice
3 cups water
2 teaspoons oregano, ground
1 1/4 cups tomatoes, seeded and chopped
1 cup corn kernel
1/2 cup parmesan cheese, grated
1/4 teaspoon salt
1/2 teaspoon fresh black pepper
4 large red bell peppers, cut in half on the lenght, white membrane removed
1/2 cup part-skim mozzarella cheese, grated

Steps:

  • In a saucepan, heat oil at medium heat. Add garlic and 2/3 of green onions. Cook for 1 minute. Add rice and cook, stirring, for 2 minutes. Add 2 cups water and oregano. Bring to boil. Reduce to low heat, cover and let simmer for 20 minutes or until rice is cooked.
  • In the saucepan, add tomatoes, corn kernels, parmesan, salt, pepper and stir. Spread the rice garnish in bell peppers. In a big skillet, pour remaining water and add stuffed peppers. Cover and cook at medium-low heat for 17 to 20 minutes or until peppers are tender (add water if necessary).
  • Sprinkle peppers with mozzarella cheese, cover and cook for 2 minutes or until cheese has melted. Sprinkle with remaining green onions.

Normally a pepper and rice dish has a Mexican or Spanish kind of flair to it. I wanted something a little more Italian, and this is what I came up with.

2 cups water
1 cup long grain rice
1 tablespoon olive oil
1 small sweet onion, finely chopped
3 cloves garlic, minced
1 small green bell pepper, chopped
1 small red bell pepper, chopped
1 teaspoon dried basil
1 teaspoon dried oregano
½ teaspoon ground black pepper
1 tiny pinch salt
1 splash dry white wine
1 tablespoon grated Parmesan cheese

Steps:

  • Bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender and liquid has been absorbed, 20 to 25 minutes.
  • Heat oil in a large skillet over medium-high heat. Cook and stir onion in the hot oil until tender, about 3 minutes. Add garlic and continue to cook and stir until onion is translucent, 2 to 3 minutes more. Stir green bell pepper and red bell pepper into onion mixture; cook until tender, about 5 minutes. Season with basil, oregano, black pepper, and salt.
  • Pour wine into vegetable mixture and reduce heat to medium low. Simmer until liquid is reduced, about 5 minutes. Stir rice into vegetables. Top with Parmesan cheese before serving.

1 tbsp olive oil
1 onion , finely chopped
1 red pepper , deseeded and chopped
thumb-size piece fresh root ginger , finely chopped
250g basmati rice
1 tsp turmeric
600ml vegetable stock
25g flaked almond , toasted

Steps:

  • Heat the oil in a wide pan with a lid, then cook the onion, pepper and ginger together for 5 mins, stirring, until softened. Stir in the rice and turmeric for 1 min more, then pour over the stock. When the stock begins to simmer, cover with the lid.
  • Cook for 12 mins until the rice is tender and stock has been absorbed. If the rice is tender but a little stock remains, turn off the heat, cover again, then leave for 2-3 mins. Season and stir through the almonds to serve.

1 garlic clove, minced
1 tablespoon butter
1 cup chicken or vegetable broth

Steps:

3 tablespoons pure wesson canola oil or 3 tablespoons sunflower oil
4 garlic cloves, peeled, washed and chopped
1 onion, peeled, washed and sliced
1 1/2 cups diced red bell peppers
4 cups cooked basmati rice
1 1/2 cups sliced mushrooms
1 teaspoon brown sugar
3 tablespoons light soya sauce
1/2 teaspoon red chili powder
1 teaspoon turmeric powder
1/4 teaspoon black pepper
salt
1 cup spring onion, chopped

Steps:

  • Heat oil in a wok.
  • Add the garlic and sauté on medium flame until the raw smell is gone and it starts to brown.
  • Add the sliced onion and red bell pepper.
  • Sauté on medium flame for 3 minutes.
  • Add red chili powder, turmeric powder, pepper and salt to taste.
  • Mix well with the other ingredients.
  • Sprinkle spring onions over the rice immediately before serving.

CLASSIC RICE & BEEF STUFFED BELL PEPPERS



Classic Rice & Beef Stuffed Bell Peppers image

This Cooks Illustrated recipe is delicious. You can also make it with ground chicken, basil and smoked mozzarella instead of the classic beef version.

4 medium yellow bell peppers (about 6 oz. each) or 4 medium orange bell peppers, 1/2 inch trimmed off tops, cores and seeds discarded (about 6 oz. each)
1/2 cup long grain white rice
1 1/2 tablespoons olive oil
1 medium onion, chopped fine (about 1/2 cup)
12 ounces ground beef, preferably ground chuck
3 garlic cloves, minced
1 (14 1/2 ounce) can diced tomatoes, drained, 1/4 cup juice reserved
1 1/4 cups monterey jack cheese (about 5 oz)
2 tablespoons chopped fresh parsley
black pepper
1/4 cup ketchup

Steps:

  • Bring 4 quarts water to a boil in a large stockpot or Dutch oven over high heat.
  • Add 1 tablespoon salt and bell peppers.
  • Cook until peppers just begin to soften, about 3 minutes.
  • Using slotted spoon, remove peppers from pot, drain off excess water and place peppers cut side up on paper towels.
  • Return water to boil; add rice and boil until tender, about 13 minutes.
  • Drain rice and transfer to large bowl; set aside.
  • Adjust oven rack to middle position and heat oven to 350°F.
  • Meanwhile, heat 12 inch heavy bottomed skillet over medium high heat until hot, about 1 1/2 minutes; add oil and swirl to coat.
  • Add onion and cook, stirring occasionally, until softened and beginning to brown, about 5 minutes.
  • Add ground beef and cook, breaking beef into small pieces with spoon, until no longer pink, about 4 minutes.
  • Stir in garlic and cook until fragrant about 30 seconds.
  • Transfer mixture to bowl with rice; stir in tomatoes, 1 cup cheese, parsley and salt and pepper to taste.
  • Stir together ketchup and reserved tomato juice in small bowl.
  • Place peppers cut side up in 9 inch square baking dish.
  • Using soup spoon, divide filling evenly among peppers.
  • Spoon 2 tablespoons ketchup mixture over each filled pepper and sprinkle each with 1 tablespoon of remaining cheese.
  • Bake until cheese is browned and filling is heated through, 25 to 30 minutes.
  • Serve immediately.
