- Preheat oven to 375°. In a large bowl, mix sugar, cornstarch, cinnamon and cardamom. Add peaches, berries and lemon juice; toss to combine. Transfer to a 10-in. cast-iron or other ovenproof skillet., In a small bowl, whisk the first 6 topping ingredients; cut in butter until mixture resembles coarse crumbs. Add buttermilk; stir just until moistened. Drop mixture by tablespoonfuls over peach mixture., Bake, uncovered, until topping is golden brown, 40-45 minutes. Serve warm. - For the filling: Put the peaches, sugar, cinnamon, salt and lemon juice in a medium saucepan. Place over medium heat and cook, stirring occasionally, until the sugar is dissolved and the peach juices begin to boil. Lower to a simmer and continue to cook for 5 minutes. Remove from the heat.
- For the batter: Put the butter in a 2-quart baking dish and place it in the oven while it preheats. Preheat the oven to 350 degrees F.
- Whisk together the flour, sugar, baking powder and salt in a medium bowl. Stir the vanilla into the milk in a liquid measuring cup. Slowly pour the wet ingredients into the dry ingredients while whisking until well combined.

I found this peach cobbler recipe on the internet from the Salt Lick Restaurant in Austin, TX. Everyone loves this recipe so much I have to make a double batch! Feel free to cut back on the sugar. - Preheat oven to 375 degrees F.
- Butter a 13 by 9 by 2 3/4-inch baking dish then pour peaches into baking dish and toss with lemon juice.
- In a small mixing bowl whisk together 1/2 cup sugar, cornstarch, 1/2 tsp cinnamon, and the nutmeg.
- Sprinkle sugar mixture evenly over peaches then toss to evenly coat, set aside.
- If using cake flour sift into a large mixing bowl, if using all-purpose flour just add to bowl (no sifting is necessary). Add 3/4 cup sugar, baking powder, baking soda, and salt and whisk to combined.
- Cut butter into flour with a fork or pastry cutter until it resembles coarse meal then make a well in center of mixture.

- Dollop and just lightly spread spoonfuls of the mixture evenly over top of peaches (about 12 dollops across the top).
- Whisk together remaining 2 tsp sugar with 1/4 tsp cinnamon and sprinkle evenly over top.
- Bake in preheated oven until topping is golden brown and set and and filling is bubbling, about 40 - 45 minutes.
- Remove from oven and let cool several minutes before scooping into bowls. Serve with vanilla ice cream.

BLUEBERRY PEACH COBBLER

- Preheat oven to 350 degrees F.
- In a large bowl, place peach slices and blueberries (if using frozen,no need to thaw).
- Add sugar, zest, juice and corn starch and toss to coat.
- Pour into a 9×13-inch pan with sides at least 2 ½ inches high.
- Place in oven and bake 25 minutes. Remove from oven and cool 20 minutes.
- Mix flour, baking powder, baking soda, 1 tablespoon of sugar and salt in a large bowl.
- Place buttermilk and 8 tablespoons of melted butter in bowl and whisk.

- Heat oven to 180C/160C fan/gas 4. Grease a baking dish with a little butter, then lay the drained peach slices in the base. Sprinkle with 2 tbsp of the sugar and the ground ginger and set aside.

HOW TO MAKE THE BEST PEACH COBBLER

- Preheat the oven to 375˚. Butter a 9-inch by 13-inch baking dish.
- For the fruit: Slice the peaches and remove the pits. Place them in a large bowl. In a small bowl, whisk together the sugar, cornstarch and kosher salt, until no small lumps of cornstarch can be seen. Set aside.
