"BASIC" BEET BORSCHT

5 lbs fresh beets (with the tops on)
cold water (to cover the beets by at least 4-6 inches)
2 -3 large onions
3 tablespoons salt
1/4-1/2 cup lemon juice, depending on taste
white pepper (optional/to taste)
1/4 cup honey (optional)
sour cream (optional)

Steps:

  • Cut off beet greens from the beets but leave about an inch or two of the tops on the beets.
  • **Option:mince removed beet tops to add later.
  • Scrub the beets well.
  • In a large pot, add beets and cover with cold water (about 3/4 full).
  • Bring the water to a boil and boil this for about 15-25 minutes until the beets are cooked.
  • Remove the beets from the water; save the water from the beets ("beetjuice").
  • Remove the skins from the beets.
  • Strain the"beet juice" (through a cheese cloth lined sieve) into a pot.
  • Peel and grate the onion.
  • Grate the beets (can use food processor for grating onion and beets).
  • Put the grated onion and beets into the pot with the strained beet juice.
  • **Option:you can add the finely chopped/minced beet tops, if you want to use them.
  • Bring all to a quick boil.
  • Add the salt, lemon juice, pepper (optional), and honey (optional), simmer until the honey has dissolved and all is well heated.
  • Serve, garnished with a dollop of sour cream (optional).

1/2 cup margarine or 1/2 cup butter, divided
2 medium onions, chopped small
19 fluid ounces canned tomatoes, including liquid (crush tomatoes)
16 cups water
1 tablespoon salt
5 medium potatoes, peeled and quartered
3 large carrots, peeled and chopped small
1 medium red beet, scrubbed and cut in half
1 cup half-and-half cream
4 cups chopped young beets, with tops
4 medium potatoes, peeled and cubed 1/2 inch
3 cups chopped fresh spinach
1 medium green pepper, seeded and diced
1 medium sweet red pepper, seeded and diced
1 1/2 cups diagonally cut green beans (about 1 inch long)
1 stalk celery, chopped small
2 cups cauliflower florets
1/2 cup chopped green onion
1/2 cup finely chopped fresh dill weed or 3 tablespoons dried dill weed
1 tablespoon lemon juice

Steps:

  • In a large frying pan, melt 1/4 cup of margarine or butter.
  • Add chopped onions and saute' for 5 minutes but do not brown.
  • Add mashed tomatoes including liquid and simmer until reduced to about half (about 20 minutes) then set aside.
  • In a large cooking pot, add 16 cups of water and bring to boil.
  • Add salt, potato quarters, chopped carrots and the beet and cook until tender, about 15 minutes.
  • When potatoes are tender, remove into a bowl and mash.
  • Add the remainder 1/4 cup of margarine or butter, half and half cream to the mashed potatoes and mix well, then set aside.
  • Trim tail ends of the young beets, and scrub only, then cut into small pieces and add to soup pot.
  • Chop beet greens into medium size pieces and add to soup pot.
  • Add cubed potatoes, spinach greens, green and red peppers, green beans, chopped celery, cauliflower florets and cook until vegetables are just tender, about 20 minutes.
  • Add mashed potato mixture, tomato/onion mixture, green onions, fresh dill weed and bring to boil.
  • Remove from heat.
  • Add lemon juice and stir well.
  • Adjust spices to taste.
  • Cover and let sit for 15 minutes before serving.
  • Refrigerate any unused portion of soup.

2 pounds red beets with greens, beets peeled and cut into 1/2-inch dice, greens coarsely chopped
1 pound meaty beef shin bones
1 pound green cabbage, shredded
1 14-ounce can chopped tomatoes with their juice
1 large onion, quartered and thinly sliced
1 bay leaf
Salt to taste
1 pound large waxy potatoes, quartered
Freshly ground white pepper to taste
Balsamic vinegar to taste, for drizzling

Steps:

  • In a soup pot, combine beets (not greens), bones, cabbage, tomatoes, onion, 8 cups water, bay leaf and salt; bring to a boil. Reduce heat to medium-low and simmer 1 1/2 hours.
  • Meanwhile, put potatoes in a medium saucepan of water. Bring to a boil and simmer until tender, about 20 minutes. Using a slotted spoon, transfer potatoes to a cutting board. Add chopped greens to boiling water and cook until tender, about 3 minutes. Drain and rinse in cold water. Peel potatoes and cut into 1/2-inch dice.
  • Discard bay leaf. Remove bones, remove meat from bones, chop meat and return meat to soup. Taste and add salt if needed. Ladle soup into bowls and season with white pepper. Top with potatoes and greens, and drizzle with balsamic vinegar.

Though often associated with Russian cuisine, this red beet soup is originally from Ukraine. Recipes vary from region to region and family to family, but in addition to beets, potatoes, cabbage, carrots and onion are standard. A dollop of sour cream and a sprinkle of dill add extra flavor and visual appeal.

4 fresh beets (about 1 1/2 pounds, without stems and greens), un-peeled
1/4 cup plus 3 tablespoons red wine vinegar, plus more for passing at the table
2 tablespoons plus 2 teaspoons kosher salt
3 tablespoons unsalted butter
2 stalks celery, halved lengthwise and thinly sliced crosswise
2 leeks (white part only), halved lengthwise and thinly sliced crosswise
4 cloves garlic, minced
1/4 teaspoon caraway seeds
1/4 head Savoy cabbage (about 8 ounces), cored, cut into 1-inch wedges, and shredded
3 parsley sprigs
3 fresh thyme sprigs
1 bay leaf
One 16-ounce can whole, peeled tomatoes (with liquid), roughly chopped
9 cups beef broth
Freshly ground black pepper
1/4 to 1/3 cup sour cream
2 tablespoons chopped fresh dill

Steps:

  • In a large saucepan, cover the beets with cold water by l inch. Stir in 1/4 cup of the vinegar and 2 tablespoons salt. Bring to a boil, lower the heat, and simmer, covered, until very tender, about 30 minutes. Drain, cool, and peel the beets. Dice the beets and set aside.
  • Heat the butter in a large pot over medium heat. Add the celery, leeks, garlic, and caraway seeds and cook, covered, stirring occasionally, until soft, about 8 minutes. Add the cabbage and cook, stirring, until wilted, about 3 minutes.
  • Tie the parsley sprigs, thyme, and bay leaf together with a piece of kitchen twine and add to the pot with the beets, tomatoes, and broth. Bring to a boil, lower the heat, and simmer, covered, for 10 minutes to bring the flavors together.
  • Stir in the remaining 3 tablespoons vinegar and the remaining 2 teaspoons salt. Season with pepper to taste. To serve divide among warm soup bowls, top with dollops of the sour cream and sprinkle with the dill. Serve with additional vinegar at the table.

BEET AND BEET GREEN BORSCHT

I've had a few rounds of making borscht, but I really like yellow beets, which we often get at the farmer's markets here, and I don't always like cabbage in it. In this version I take advantage of the lovely tasty beet greens that I used to just toss. I like to top with greek yogurt, and this dish is insanely light with fat free yogurt without loosing anything. ... highly recommended.

6 cups water, enough to cover all veggies during cooking
1 bunch red beet, peeled and cubed
1 bunch yellow beet, peeled and cubed
2 bunches beet leaves, chopped in 1/2 inch shreds
2 medium potatoes, peeled and cubed
2 carrots, sliced
3 garlic cloves, smashed and chopped
1/2 onion, small diced
2 tomatoes, diced
1 teaspoon caraway seed
2 teaspoons vegetable bouillon (better than bouillon is great)
1 tablespoon Braggs Aminos
1/4 teaspoon powdered ginger
1/2 lemon, juice of
salt, to taste
1/2 teaspoon pepper (to taste)
1 cup fat free Greek yogurt, garnish
2 tablespoons dill

Steps:

  • Starting with cold water bring beets and potatoes to boil.
  • Reduce heat to simmer and cook until firm, but cooked through, ~20 minutes.
  • Add carrots, onion, garlic and cook 10 minutes.
  • Add remaining ingredients and cook 10 more minutes or until greens have wilted.
  • Taste for salt, and add if needed, add lemon juice, stir.
  • Pour in bowls and garnish with yogurt and dill.

1 tablespoon vegetable oil
1 garlic clove, minced
1/2 teaspoon cuminseed
2 cups chopped cabbage (about 1/2 pound)
a 6-ounce boiling potato, peeled and grated course
2 cups beef broth
a 16-ounce jar whole beets, drained, reserving the liquid, and shredded
1 to 2 tablespoons red-wine vinegar, or to taste
sour cream or plain yogurt for garnish if desired
minced fresh dill for garnish if desired

Steps:

  • In a large saucepan cook the onion in the oil over moderately low heat, stirring, until it is softened, add the garlic, the cuminseed, the cabbage, and the potato, and cook the mixture, stirring, for 1 minute. Add the broth, 1/2 cup water, the beets with the reserved liquid, the vinegar, and salt and pepper to taste, bring the liquid to a boil, and simmer the soup, covered partially, for 25 minutes. Divide the soup between 2 bowls and garnish it with the sour cream and the dill.

GRANDMA'S BORSCHT (POLISH BEET SOUP)

When I made borscht for the first time, I was alone in my dorm room. When I tasted the first bite the first thing I thought was "it tastes like home." And then I thought of that scene from Ratatouille when the critic ate it and was brought back to his childhood. This is the vegetarian version, but it tastes pretty close to the real thing (Grandma made it with pork hock).

1 small onion, chopped
2 small potatoes, cubed
3/4 cup carrot, chopped
500 ml vegetable stock
180 g beets
180 g green beans
1 bay leaf
1 teaspoon dill

Steps:

  • caramelize the onion in some olive oil.
  • Add the potatoes and fry for about 2 minutes, careful not to let the onions and potatoes stick to the bottom of the pan. Use a bit more oil if necessary.
  • Add the vegetable stock and carrots. If you use fresh green beans, add them at this point. Bring to a boil. Cook for 5 to 10 minutes until potatoes and carrots are tender.
  • Add the beets, green beans, bay leaf, and dill. Simmer for a couple of hours. Serve with sour cream if desired.

4 teaspoons beef base (or 4 beef bouillon cubes)
salt (don't add too much, the beef base will be salty)

1 parsnip, peeled and diced

2 stalks celery, chopped
2 medium potatoes, peeled and diced
1/2 lb sorrel, chopped

Steps:

2 lbs sorrel (substitute 1 pound spinach, 1 pound endive and the juice of 3 lemons if you cannot find sorrel)
2 1/4 quarts beef stock
2 onions, peeled and chopped
1 carrot, peeled and chopped
1 1/2 teaspoons salt
2 potatoes, peeled and cubed
1 tablespoon fresh dill, chopped
1 tablespoon scallions, chopped or 1 tablespoon green onion, minced
1/2 cup heavy cream
4 eggs, hardboiled and sliced
1/4 cup sour cream

Steps:

  • Bring the beef stock to a boil in a large pot.
  • Add the onion, salt and sorrel or other greens and lemon juice; add potatoes and cook for ten minutes.
  • Reduce heat; cover and simmer for 1 hour.
  • Remove from heat and place into a large tureen and stir in the cream; add the dill.
  • Serve and garnish with a dollop of sour cream, a sprinkling of minced scallion and slices of egg.

If you would like to make this Vegetarian or Vegan, just omit the meat and/or the sour cream (I do and we aren't vegetarians). My husband rates this as one of his favorite soups I make (5 stars)! I cook this one Vegan style.

1 (16 ounce) package pork sausage (optional)
8 cups low sodium vegetable broth or 8 cups beef broth
3 large beets, peeled and diced small
3 carrots, peeled and shredded
3 medium baking potatoes, peeled and diced
1 tablespoon vegetable oil
1 medium onion, chopped
1 (6 ounce) can tomato paste
3/4 cup water
1/2 cabbage, cored and shredded (medium size)
1 (8 ounce) can diced tomatoes, drained
5 garlic cloves, minced
salt and pepper (to taste)
1 teaspoon granulated sugar (or to taste)
1/2 cup sour cream, for topping (optional)
1 tablespoon parsley, chopped for garnish (optional)

Steps:

  • Crumble the sausage into a skillet over medium-high heat. Cook and stir until no longer pink. Remove from heat and set aside.
  • Fill a large pot halfway with broth and bring to a boil. If using sausage add to broth, and bring back to a boil. Add the beets and cook until they have lost their color. Add the carrots, potatoes and garlic, simmer until tender (about 15 min). Add the cabbage and the can of diced tomatoes.
  • Heat the oil in a skillet over medium heat. Add the onion, and cook until tender. Stir in the tomato paste and water until well blended. Transfer to the pot. Simmer another 5-10 minutes, and adjust seasoning (salt, pepper and sugar) to your liking. Cover, turn off heat and let soup stand for about five minutes.
  • Ladle into serving bowls, and garnish with sour cream and fresh parsley.

Optional: Sour cream and chopped chives or fresh dill sprigs

Steps:
