6 cups German light ale (about four 12-ounce beers)
1 tablespoon caraway seeds
1 tablespoon coriander seeds
1 tablespoon mustard seeds
3 large onions, unpeeled, roughly chopped
2 whole cloves garlic, smashed
1 3-inch piece fresh ginger, peeled and chopped
3 pounds precooked bratwurst, pricked with a fork (about 15 links)
2 tablespoons canola oil

Steps:

  • Preheat a grill to high. Combine the beer, caraway seeds, coriander seeds, mustard seeds, onions, garlic and ginger in a large stockpot. Add the bratwurst. Place the pot on the grates of the grill and bring to a simmer. Simmer the sausages, about 5 minutes.
  • Remove the pot from the grill and let the bratwurst sit in the liquid for about 30 minutes. Transfer the brats to a platter or cutting board.
  • Brush the bratwurst with the canola oil and grill until the casings are crisp and golden brown and the brats are warmed through, 4 to 6 minutes per side. Keep warm until serving.

2 bottles (each 12 fluid ounces) Belgian-style wheat beer or ale

Steps:

  • Prepare the grill for direct and indirect cooking over high heat (450° to 550°F). In a small saucepan over medium-high heat, melt the butter. Add the flour and cook until the mixture turns a light beige color, about 2 minutes, stirring constantly. Whisk in the milk, mustard, and Worcestershire sauce and cook until the mixture thickens, about 2 minutes, whisking occasionally. Add the three cheeses and stir until they are melted. Set aside and reheat gently just before serving. Brush the cooking grates clean. In a large disposable foil pan combine the beer, onions, mustard, and sugar and then add the brats. If the liquid starts to boil, temporarily move the pan over indirect heat to prevent the bratwurst from splitting open. Lower the grill's temperature to medium heat (350° to 450°F). Transfer the brats to a small disposable foil pan and place the pan over indirect heat. Strain the onions through a colander into the pan with the brats. Put the onions back in their original pan and place the pan over direct medium heat. Close the lid and cook until the onions are very tender, about 8 minutes, stirring occasionally. After the onions have cooked for about 2 minutes, remove the brats from the liquid, discard the liquid, and grill the brats over direct medium heat until browned, about 6 minutes, turning occasionally. During the last minute of grilling time, toast the buns, cut side down, over direct heat. Place each brat inside a bun and then top with onions. Spoon the sauce over the onions or serve the sauce on the side.

36 ounces your favorite beer (approx. 3, I use Budweiser)
1 large onion, thinly sliced
6 bratwursts
1/2 teaspoon cajun seasoning or 1/2 teaspoon Emeril's Original Essence
6 hoagie rolls (I use the Italian style Hoagie rolls and you may substitute hotdog rolls)
prepared mustard (your preference)

Steps:

  • Prepare grill for direct grilling and preheat to medium.
  • Place beer,seasoning,onion and brats in medium pot and bring to gentle boil over medium heat.

2 tablespoons spicy brown mustard, plus more for serving
A few drops hot sauce

Steps:

  • Preheat a grill for direct grilling. If using charcoal, arrange it so that you have areas of medium-high and low to medium-low heat.
  • Combine the cheeses in a large bowl and toss with the cornstarch. Bring the brat cooking liquid to a simmer in a medium saucepan over the higher heat. Add the cheese, a few handfuls at a time, and stir in a figure eight motion with a wooden spoon until smooth. Whisk in the 2 tablespoons spicy brown mustard and hot sauce and season with salt and pepper if needed. Transfer to a fondue pot and keep warm.
  • Place a drip pan under the lower heat side of the grill and put the bacon on the grill. Cook until nicely charred on both sides and cooked through, about 5 minutes per side. Transfer to a platter or cutting board.
  • Toss the mushroom caps with some of the canola oil and season with salt and pepper. Transfer the mushroom caps to a grill basket and cook over the higher heat side, tossing occasionally, until cooked through, about 10 minutes. Transfer to a serving bowl.
  • Brush the rye bread on both sides with canola oil and season with salt and pepper. Grill the bread over the higher heat side until toasted and slightly charred, 3 to 4 minutes per side. Transfer to a platter or cutting board.
  • Cut the bacon, rye bread and Beer-Simmered Bratwurst into chunks. Serve alongside the fondue with the mushrooms and the mustards.
  • Preheat the grill for direct grilling, high heat.
  • Combine the beer, caraway, coriander, mustard seeds, onions, garlic and ginger in a large stockpot. Then, add the bratwurst. Place the pot on the grates of the grill and bring to a simmer. This is our family's way of making beer brats! We love them this way and they are even better re-grilled the next day! Depending on how much you drink while you are prepping you may need more or less beer!

3 (12 ounce) cans beer
5 uncooked bratwursts (we like Johnsonville best)
1/8 cup yellow mustard
1/8 cup stone ground mustard
1 tablespoon Worcestershire sauce
1 tablespoon brown sugar
1 medium onion, cut into rings about 1/3 of an inch thick
sauerkraut (optional)
1 large red bell pepper (cut in rings the same size as the onions)
5 hot dog buns or 5 hoagie rolls

Steps:

  • Get a large grill safe dish (we use the reynolds disposable roasters), place the onions, red bell peppers (if using) and brats in the bottom.
  • Mix the two mustards, Worcestershire sauce and brown sugar together and dump this mixture over the brats and onions etc.
  • Stir until the onions and brats are evenly coated.
  • Pour enough beer into the dish to cover the brats and onion, then give it a slight stir to mix the mustard mixture with the beer.
  • Put in fridge and let sit at least 30 minutes, but an hour or two is much better. When marinating time is up, remove and let come to room temperature.
  • Pre heat your grill to medium high heat.
  • Place the container directly on the grate and cook the brats in the beer mixture for 10-15 minutes, until the beer is steamy and hot. Remove from heat. But do not discard yet.
  • Turn the grill down to medium heat (or however you like your brats grilled).
  • Remove the onions and brats from the beer mixture. Then place the brats on one side of the grill and the onions on the other.
  • Grill brats and onions, turning occasionally until done. Each time you turn, baste with the remaining beer mixture. The onions should be somewhat caramelized and soft.
  • Discard the remaining beer mixture and serve on buns or hoagies with sauerkraut and other condiments as desired.

½ stick unsalted butter, divided
½ medium yellow onion, thinly sliced
6 bratwurst sausages
24 oz pilsner-style beer
¼ cup baking soda
16 oz premade pizza dough
2 tablespoons all purpose flour, plus more for dusting
6 tablespoons sauerkraut, plus more for serving
2 large egg yolks, beaten
1 tablespoon flaky sea salt
1 cup whole milk
2 tablespoons heavy cream
2 tablespoons worcestershire sauce
½ teaspoon McCormick® Garlic Powder
1 pinch McCormick® cayenne pepper
2 tablespoons whole grain mustard
1 teaspoon kosher salt
4 oz sharp cheddar cheese, grated

Steps:

  • Preheat the oven to 450°F (220°C).
  • In a large pot, melt 2 tablespoons of butter over medium-high heat. Add the onion and sauté for 2-3 minutes, until beginning to soften. Add the bratwurst to the pot and pour in the beer. Bring to a boil, then cover and cook for 8-10 minutes, until the bratwurst are white and firm, but not completely cooked through. Transfer the sausages to a paper towel-lined plate and set aside. Reserve ½ cup of the beer and discard the rest.
  • Bring a large pot of water to a boil over high heat. Once boiling, add the baking soda and stir to dissolve.
  • Line a baking sheet with parchment paper.
  • While the water is boiling, roll out the pizza dough on a lightly floured surface to a 10 x 6-inch (25 x 15 cm) rectangle, about ¼ inch (6 mm) thick. Cut the dough in half horizontally, then cut each half into 3 triangles.
  • Set a dough in front of you with the short end at the bottom and roll out to flatten slightly. Place a sausage at the bottom of the triangle and scoop a heaping tablespoon of sauerkraut above the sausage. Pull the bottom edge of the dough over the sausage and sauerkraut, tucking snugly, then roll up and over the tip of the triangle to seal. Repeat with remaining dough, bratwurst, and sauerkraut.
  • Working in batches of 2-3, carefully drop the wrapped bratwurst into the boiling water for 20-30 seconds. Use a slotted spoon to remove the bratwurst and transfer to the prepared baking sheet.
  • Let the dough dry out for about 5 minutes, then brush with the egg yolks and sprinkle generously with flaky sea salt.
  • Bake for 20-25 minutes, turning halfway through, until the dough is deep golden brown and the bratwurst begins to brown.
  • While the bratwurst are baking, make the cheese sauce: In a medium saucepan, melt the remaining 2 tablespoons butter over medium heat. Whisk in the flour and cook for 2-3 minutes, until golden brown. Whisk in the reserved beer, milk, and cream until smooth. Add the Worcestershire sauce, garlic powder, cayenne, mustard, and kosher salt. Cook until the sauce is bubbling and thick, whisking occasionally to prevent burning, 2-4 minutes.
  • Whisk in the cheddar cheese and cook for 2-3 minutes, until completely melted and smooth. Transfer the sauce to a serving bowl.
  • Serve the hot bratwurst in a blanket and cheese sauce immediately, along with additional sauerkraut if desired.
