Spicy Green Tomato-Avocado Salad image

1 1/2 pounds green (unripe) tomatoes, cut into wedges
Kosher salt
Juice of 1 lime
1 teaspoon dijon mustard
1 tablespoon honey
1 small jalapeno pepper, seeded and minced
1 tablespoon fresh thyme, minced
Freshly ground pepper
1/4 cup extra-virgin olive oil
2 avocados
2 cups mache or Bibb lettuce leaves

Steps:

  • Put the tomatoes in a bowl and sprinkle with 1 teaspoon salt; let sit 30 minutes.
  • Meanwhile, whisk the lime juice, mustard, honey, jalapeno, thyme, 1/2 teaspoon salt, and pepper to taste in a large bowl. Gradually pour in the olive oil, whisking constantly until emulsified.
  • When ready to serve, halve the avocados, remove the pits, peel and thinly slice. Add to the bowl with the dressing, then add the lettuce and tomatoes. Gently toss to coat. Season with salt and pepper.

Hash Browns with Cheesy Eggs and Avocado image

1 small onion
1 pound Yukon gold potatoes, peeled
1 teaspoon salt
Freshly ground black pepper
2 tablespoons chopped fresh herbs, such as parsley and thyme
4 tablespoons extra-virgin olive oil
2 tablespoons whole milk
8 large eggs
1/2 teaspoon salt
Freshly ground black pepper
2 tablespoons salted butter
6 tablespoons garlic-herb cheese, such as Boursin
1 avocado, sliced

Steps:

  • For the hash browns: Preheat the oven to 250 degrees F.
  • Grate the onion on the largest holes of a box grater into a large bowl. Grate the potatoes and put in a strainer lined with cheesecloth or a kitchen towel. Squeeze the liquid from the potatoes, then add the dry potatoes to the bowl with the onions. Season with salt and pepper. Add the herbs and mix until well combined.
  • Heat 2 tablespoons oil in a medium cast-iron skillet over medium heat. Drop 1/4 cup of the potato mixture into the skillet, pressing down lightly with a spatula. Repeat until there are 4 hash browns in the skillet. Cook until golden brown on the bottom, 5 to 7 minutes, reducing the heat to medium low if they start to brown too quickly. Flip and cook until golden brown, 5 to 7 minutes more. Transfer to a baking sheet and keep warm in the oven. Repeat the process with the remaining 2 tablespoons olive oil and remaining potato mixture.
  • For the cheesy eggs: In a medium bowl, whisk together the milk and eggs and season with salt and pepper.
  • Melt the butter in a medium nonstick skillet over medium heat. Lower the heat and add the egg mixture. Using a heatproof rubber spatula, push the eggs toward the center of the skillet and let the liquid run out. Cook, continually moving, until just set, about 2 minutes. Drop 2 tablespoons of the garlic-herb cheese into the middle. Gently fold the cheese into the warm eggs.
  • Divide the hash browns among 4 plates. Top each with some cheesy eggs and sliced avocado. Dollop each portion of eggs with 1 tablespoon of the remaining garlic-herb cheese. Serve immediately.

This recipe is a really nice way to use up leftover mashed potatoes. If you like you could fry the hashbrowns up and then freeze them in airtight bags. You can pop them in the toaster to reheat them! An easy breakfast!

Steps:

  • Beat egg in a medium size mixing bowl. Mix egg and onion with mashed potatoes. Add salt and pepper.
  • Heat olive oil in a medium size frying pan, over a medium heat. Scoop the potato mixutre into the frying pan in 4 inch circles, pat with a spatula to flatten the mounds to approximately 1/2 to 1 inch thick. Cook until bottom is browned. Flip the patty over and brown on the other side.

1 1/2 pounds boiling potatoes, peeled and 1/2-inch diced
1 1/2 cups chopped yellow onions (2 onions)
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons minced fresh flat-leaf parsley
2 tablespoons minced scallions (white and green parts)

Steps:

  • Melt the butter in a large (10 to 12-inch) saute pan. Add the potatoes, onions, salt, and pepper and cook over medium-low heat for 15 to 20 minutes, turning occasionally with a flat spatula, until the potatoes are evenly browned and cooked through. (Allow the potatoes to cook for 5 minutes before turning.) Turn off the heat and add the parsley and scallions. Serve hot.

3 large eggs, lightly beaten
1 lb fresh tomato, seeded, cut into 1/2 inch pieces

Steps:

  • Heat oven to 425 degrees. In a medium bowl mix hash browns and eggs together until combined. Press hash browns into a non stick 9-inch pie dish. 2. Bake hash browns for 20-25 minutes or until well browned on top.
