EASY UPSIDE-DOWN PIZZA CASSEROLE
I can't recall where I got this recipe from, but it is a very simple casserole that is very good too! Your little ones will love it for sure!

Steps:
- Preheat the oven to 400 degrees F (200 degrees C).
- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Stir in sauce, mushrooms, and olives. Cook and stir until heated through, about 2 minutes more. Transfer mixture to a 2-quart rectangular baking dish. Sprinkle mozzarella cheese on top of the casserole.
- Flatten each biscuit with your hands and arrange on top of the cheese.
- Bake in the preheated oven until biscuits are golden, 15 to 17 minutes.

POPOVER PIZZA CASSEROLE
This easy, in-the-oven-in-ten minutes ground beef casserole is topped with cheese and a popover-like topping.

- Heat oven to 425°.
- Cook beef in 10-inch skillet over medium heat 8 to 10 minutes, stirring occasionally, until brown; drain. Stir in pizza sauce. Heat to boiling; reduce heat to low and keep warm.
- Beat eggs, milk, oil, flour and salt with wire whisk until foamy. Spoon beef mixture into ungreased rectangular baking dish, 13x9x2 inches. Sprinkle with cheese. Pour egg mixture over cheese. Sprinkle with onions.
- Bake uncovered 25 to 30 minutes or until puffy and golden brown. Serve immediately.

- 1. Preheat oven to 350.
- 2. Brown ground beef, while adding any seasonings of your choice.Drain.
- 3. Add sauce of choice to beef and heat.
- 4. Spread beef mixture in an oven-safe casserole dish. Sprinkle with cheese.
- 5. Open can of crescent rolls. Unfurl the rolls and place evenly on top of cheese.
- 6. Cook for 9-12 minutes, or until rolls are lightly browned.
- 7. Let rest for 5 minutes. When serving each portion, flip so "crust" is on the bottom. Enjoy! :-)
UPSIDE-DOWN POPOVER PIZZA
This is a great brunch alternative. The popover batter replaces the pizza crust. If you're craving pizza this is a simpler alternative and the upside-down puffy crust is a nice change of pace.
