This is a recipe from a sweet old German lady I used to attend church with. Allow for plenty of time to prepare and cook this dish. It is definitely worth the time and effort! Serve with hot German potato salad and red cabbage.

2 pounds sauerkraut, rinsed and drained
1 tablespoon caraway seeds
¼ cup brown sugar
1 apple, diced
½ pound bacon, cut into 1-inch pieces
1 large onion, chopped
1 ½ pounds kielbasa sausage, cut into 1-inch thick slices

Steps:

  • Place the sauerkraut, caraway seeds, brown sugar, and apple into a large saucepan over medium-low heat, and bring the mixture to a simmer. Reduce heat to low, and cook for 2 hours, stirring occasionally.
  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking dish.
  • Place the bacon and onion into a skillet over medium heat, and cook until the bacon is almost crisp and the onion is beginning to brown, about 10 minutes. Stir the bacon mixture into the sauerkraut. In the same skillet, brown the kielbasa sausage in the remaining bacon grease until the sausage begins to brown, 10 to 15 minutes; stir into the sauerkraut mixture. Spoon the sauerkraut and sausage mixture into the prepared baking dish.
  • Bake in the preheated oven until bubbling, about 1 hour.

12 oz beer (can or bottle)
1 c brown sugar (light or dark)
3 lb polish kielbasa
1 bag(s) (or jar) sauerkraut (32 ounces), drained

Steps:

  • 1. Combine the beer and brown sugar in a small saucepan over medium heat, until the sugar melts and the mixture is slightly thickened. Set aside. Cut the kielbasa into links and place in a slow cooker. Cover with the drained sauerkraut.
  • 2. Pour the beer and brown sugar mixture over top. Cook on high for 4 to 6 hours, or on low for 8 to 10 hours. (We ended up doing a combination - high for 3 hours and then low for another 3 or so. Definitely the longer it cooks the better it tastes!) Serve on its own or on your favorite sandwich roll.

2 lbs sausage
1/2 cup water
1 cup beer
1/4 cup brown sugar, firmly packed
2 -3 tablespoons cornstarch, liquified in the smallest amount of water possible (depending on how thick you like it)
1/4 cup vinegar
1/4 cup Dijon mustard (I use my RJ's Homemade Spicy Mustard RJ's Homemade Spicy Mustard)
1 tablespoon horseradish

Steps:

  • Place whole sausage in pan with water.
  • Cover and simmer for 10 minutes.
  • Remove from heat and cut sausage into diagonal slices.
  • Return to skillet.
  • Add the cup of beer.
  • Cover and simmer another 10 minutes.
  • Add in brown sugar and liquefied cornstarch.
  • Stir in remaining ingredients.
  • (vinegar, mustard and horseradish).
  • Cook and stir until it is bubbly.
  • Serve with sauerkraut and enjoy.

1 lb kielbasa sausage (or similar smoked sausage)
1 tbsp cooking oil
1 onion, medium (yellow, red or white), thinly sliced
1 apple, medium*, peeled and cut in thin sticks
1/2 cup malty dark beer or hard cider (to deglaze)**
3 cups sauerkraut***
1 tbsp brown sugar
1 bay leaf (optional)
1/2 tsp caraway seeds
2 whole cloves (optional)
1/2 tsp peppercorns (green or black)
1/2 cup stock (vegetable or beef)****
1 tsp kosher salt

Steps:

  • STOVETOP ONLY METHOD1. Slice the kielbasa diagonally to create more surface area to sear. Heat a heavy bottomed skillet such as cast iron over medium-high heat. Add the cooking oil and kielbasa and sear until it begins to brown. Remove and set aside. 2. In the same skillet saute the sliced onion and apple for about 3-5 minutes. Deglaze with a bit of the malty beer or hard cider and let most of the liquid simmer away. Add the sauerkraut, brown sugar, bay leaf, cloves, peppercorns, caraway and salt and mix everything well together. Add the rest of the beer or cider and let simmer for 5 minutes. Remove bay leaf and cloves before they leave a hint of bitterness. 3. Add the browned kielbasa back to the skillet, add the stock and mix well. Let simmer for 5-10 minutes until most of the liquid has evaporated. Serve. STOVETOP AND OVEN METHOD1. Preheat the oven to 400 F. (Make sure the skillet you are using is oven safe). 2. Perform steps from 1 and 2 above. Add the kielbasa and stock to the sauerkraut, mix everything and transfer the skillet to the oven. Bake for 5-10 minutes until most of the liquid has evaporated. Serve.

When my husband's Grandmother died, I was the designated person to bring this to all holiday dinners (even though I'm Irish!) since I learned what to do by watching her. She always used fresh rather than smoked Polish Sausage.

4 lbs Polish sausage, fresh if possible
1/2 lb bacon
1 small yellow onion
2 (27 ounce) jars sauerkraut
1/2 cup brown sugar
3/4 cup water

Steps:

  • Preheat oven to 325 degrees Fahrenheit.
  • Bring sausage to boil and simmer 15 minutes; drain and set aside.
  • Cut bacon into small pieces.
  • Begin browning, then add diced onion.
  • Saute together until bacon is almost crisp.
  • Drain mixture, reserving bacon grease.
  • Drain sauerkraut (do not rinse).
  • Add sauerkraut and brown sugar to bacon mixture.
  • Mix in about 2 Tablespoons reserved bacon grease and water.
  • Place in large casserole dish.
  • Cut Polish sausage into 3" pieces and place on top of sauerkraut.
  • Cover and bake at 325 degrees Fahrenheit for 1 hour 15 minutes, checking sauerkraut mixture halfway through to add more water if sauerkraut appears very dry.
  • Finish baking; remove from oven.
  • Taste sauerkraut and, if desired, adjust flavor by adding salt and pepper, or a little more brown sugar, vinegar or bacon grease to your taste. (Note: In the old days, Busia (Grandma) would soak a cup of yellow peas overnight to soften them and would mix them into the sauerkraut. It was probably to stretch the quantity, but I don't do it anymore!).

9 cups drained sauerkraut (from 5 to 6 pounds packaged, not canned, sauerkraut)
1/4 pound smoked bacon* (preferably slab), cut crosswise into 1/4-inch pieces
2 medium-large onions, sliced thin
4 medium carrots, cut crosswise into 1/4-inch -thick slices
5 1/2 cups Oktoberfest lager (44 ounces) such as Paulaner
1 cup chicken broth
3 bay leaves
1 teaspoon salt
1/2 teaspoon whole black peppercorns
1 tablespoon vegetable oil if desired
1 3/4 pounds assorted smoked and precooked fresh sausages* (we used smoked kielbasa cut into thick slices, frankfurters, and baernwurst, and precooked fresh bratwurst, weisswurst , and chipolata)
a 1-pound piece smoked boneless pork loin (Canadian bacon)*, cut into 4 slices
*available at some specialty butcher shops and some supermarkets and by mail order form Schaller and Weber, tel.(800)847-4115
Accompaniment: coarse-grained mustard

Steps:

  • Preheat oven to 325°F.
  • In a large bowl soak sauerkraut in cold water to cover 20 minutes, changing water once halfway through soaking.
  • While sauerkraut is soaking, in a large heavy skillet cook bacon pieces over moderate heat, stirring, until golden. Pour off all but about 2 tablespoons drippings and add onions to bacon. Cook mixture, stirring, until onions are softened.
  • Drain sauerkraut well in a colander, pressing out excess liquid, and in a large flameproof roasting pan combine with bacon mixture, carrots, beer, broth, bay leaves, salt, and peppercorns. Bring sauerkraut mixture to a boil on top of stove and boil 1 minute. Cover pan tightly with foil and braise in middle of oven 4 hours. Sauerkraut may be prepared up to this point 1 day ahead, cooled, uncovered, and chilled, covered with plastic wrap. Reheat sauerkraut before proceeding.
  • If desired, in a heavy skillet heat oil over moderate heat until hot but not smoking and in batches brown sausages. Add sausages and pork loin to sauerkraut, partially submerging them. Braise sausages and sauerkraut, covered tightly with foil, in middle of oven 30 minutes and transfer with a slotted spoon to a heated platter, discarding bay leaves if desired. (Do not eat bay leaves if leaving as garnish.)
