Categories     main-dish

Time 16m

Yield 4 servings

Number Of Ingredients 12

Olive oil
3/4 cup all-purpose flour, divided
2/3 cup beer
1 egg, lightly beaten
1 1/2 teaspoons baking powder
4 tilapia or flounder fillets, about 5 ounces each
Salt
Freshly ground black pepper
2 tablespoons fresh lemon juice
2 teaspoons red chili paste
1 (11-ounce) can mandarin oranges, drained and chopped
1 tablespoon chopped fresh cilantro leaves

Steps:

  • Heat enough olive oil, to shallow fry the fish, in a large skillet over medium-high heat
  • In a shallow dish, whisk together 1/2 cup of the flour, beer, egg, and baking powder. Place remaining 1/4 cup flour in a separate shallow dish.
  • Season both sides of fish fillets with salt and black pepper. Dredge fish in flour, turn to coat both sides and then shake off excess flour. Dunk fish in beer mixture and turn to coat both sides.
  • Add fish to hot oil and cook 2 to 3 minutes per side, until cooked through and opaque. Remove fish from oil. Place on a paper towel lined plate.
  • While the fish is frying, in a medium bowl, whisk together lemon juice and chili paste. Add mandarin oranges and cilantro and toss to combine. Serve sauce over fish.

- beer batter and pickles:
1 cup(s) all-purpose flour, plus more for dusting
1 tablespoon(s) sugar
1/8 teaspoon(s) baking soda
1/4 teaspoon(s) baking powder
1/2 teaspoon(s) kosher salt
- pinch cracked black pepper
- pinch cayenne
1/2 cup(s) buttermilk
1 cup(s) beer
5 - fresh kosher dill spears
- salt and freshly ground black pepper
- -----------------------------------------------------
- horseradish buttermilk dip:
1 - 2 inch piece fresh horseradish
1 - lemon, juiced, plus more if necessary
1/2 cup(s) buttermilk
1 teaspoon(s) dijon mustard
1 - egg yolk
- pinch ground white pepper
1 gallon peanut oil, for frying

Steps:

  • For the dip: Peel and roughly chop your horseradish root. Puree it in your food processor on high with the lemon juice, buttermilk, Dijon, and egg yolk. If the mixture is not a wet puree, add a few drops of water. Turn the machine to low and drizzle the oil until an emulsion is formed. Taste and adjust with salt, white pepper, and lemon juice, if necessary. Chill until ready to serve.
  • For the batter and pickles: Heat the peanut oil in your deep-fryer or Dutch oven to 375 degrees F.
  • Whisk together all the dry ingredients for your beer batter. Whisk together the wet ingredients, and then combine. Pat the pickle spears dry with a paper towel, dust with a little flour, coat with the beer batter, and gently drop into the hot oil. They are ready in about 2 minutes when they are golden brown. Season with salt and pepper. Serve with chilled Horseradish Buttermilk Dip.

FERMENTED KOSHER-STYLE DILL PICKLES

Fermented Kosher-Style Dill Pickles image

These old-fashioned deli-style pickles are created entirely by fermentation, without the use of vinegar. This recipe produces a quantity that fills a half-gallon Mason jar. If you like, add a few non-traditional chile de arbol peppers for their red visual appeal (and spiciness)!

Time P3DT20m

Yield 16

Number Of Ingredients 7

½ gallon water
2 pounds Kirby cucumbers
1 cup tap water
⅓ cup kosher salt
5 cloves fresh garlic, or more to taste
1 bunch fresh dill, stems trimmed
3 dried chile de arbol peppers

Steps:

  • Pour 1/2 gallon of water into a large container or pot. Cover loosely and allow to sit for 24 hour to allow dissolved chlorine to escape.
  • Crisp cucumbers by storing in the refrigerator or soaking in very cold water for 1 hour.
  • Bring 1 cup water to a boil in a saucepan. Add salt and stir to combine. Set aside to cool.
  • Wash cucumbers in cold water and remove any blossoms that may be clinging to them. Quarter large cucumbers lengthwise. Cut medium cucumbers in half lengthwise. Leave gherkin-sized cucumbers whole.
  • Peel and gently crush garlic cloves, but don't splinter them into fragments.
  • Pour cooled salt water into a 1/2-gallon Mason jar. Add cucumbers, garlic, dill, and dried chile peppers, arranged attractively. Pack cucumbers tightly; they will shrink as they pickle. Fill the jar with the dechlorinated water until cucumbers are just covered to avoid overly diluting the brine.
  • Loosely cover the jar and set aside at room temperature. Set the jar on a dish if it is very full, to catch any dribbles. Give the pickles 12 to 24 hours to begin fermenting. Refrigerate them, in brine and loosely covered, as they approach the stage of pickling you prefer: new, half-sour, or sour. Don't overshoot the mark, as refrigeration slows, but does not stop, fermentation.
