1 package corn tortillas (14 tortillas)
2 cooked chicken breasts, chopped
3 (8-ounce) bags shredded Mexican cheese blend
1 large yellow onion, diced
2 tablespoons cleaned and roughly chopped cilantro leaves
3 cans enchilada sauce (hot or mild), divided
1 tablespoon butter
1/4 cup chicken broth
Pinch ground cumin
1 teaspoon minced garlic
1 1/2 cups sour cream
Pinch salt

Steps:

  • Preheat oven to 400 degrees F.
  • Wrap corn tortillas in wet paper towels and microwave for 45 seconds. In a large bowl, combine chicken, 1 1/2 bags of cheese, onion, cilantro, and 2 cans of enchilada sauce. Mix well Add the cilantro and stir to combine.
  • Cover the bottom of a large baking dish with half of the remaining enchilada sauce.
  • Carefully spoon mixture into tortillas, roll up and place seam side down in the baking dish. Cover the top with the other half can of the enchilada sauce and the rest of the cheese (1 1/2 bags). Bake for 35 to 40 minutes. Serve with sour cream sauce.
  • Make sour cream sauce by adding butter to a saucepan over medium heat. While the butter is melting add the chicken broth, cumin, garlic and sour cream. Whisk to combine; season with salt, bring to a boil and remove from the heat.
  • Serve enchiladas topped with sour cream sauce.

1 onion, thinly sliced
1 green bell pepper, chopped
1 red bell pepper, chopped
1 (14.5 ounce) can diced tomatoes with green chile peppers
1 cup whole kernel corn
4 thick cut butterflied pork chops

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt 1 tablespoon of the butter or margarine in a large skillet over medium heat. Add the onion, green bell pepper and red bell pepper and saute for 5 minutes. Add the tomatoes and corn and saute for 5 more minutes. Pour this mixture into a 9x9 inch baking dish.

2 dozen (16/20 count) shrimp, deveined and butterflied
Extra-virgin olive oil, for brushing shrimp
1 pound tomatillos
1 red onion, quartered
1 jalapeno, halved
5 garlic cloves
3 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper
1 avocado, pitted, flesh diced
1 lime, juiced, plus lime zest, for garnish
1/2 bunch cilantro leaves, plus more chopped, for garnish
1 Roma tomato, diced

Steps:

  • To prepare the shrimp: Mix all the ingredients, except for the shrimp and olive oil, into a bowl. Add the shrimp; coat well with the rub and set aside
  • Preheat oven to 350 degrees F.
  • For the sauce: In a baking dish, toss together tomatillos, onion, jalapeno and garlic. Toss with extra-virgin olive oil and season, to taste, with salt and pepper. Roast until tender and caramelized, about 20 minutes. Remove from pan and cool for about 5 minutes then add to a food processor. Add avocado, lime juice and cilantro and blend until smooth. Season, to taste. Pour into a large bowl and chill.
  • Meanwhile, preheat grill to medium-high.
  • Remove the shrimp from the bowl and brush with oil. Place on the grill. Cook until the meat is opaque. Remove from heat to a platter and serve with the tomatillo salsa.
  • Garnish with lime zest, diced tomato, and chopped cilantro.

This marinade can be used on practically any meat or Mexican-style dish. You'll get a great lime and cilantro flavor without overpowering the flavor of the meat. I made this marinade and used is on boneless chicken thighs and thin sliced sirloin steaks. Everyone loved it! I soaked both the chicken and steak all day and we ate it without any other seasoning. And the leftovers were even better the next day and even a few days later!

1/3 cup cider vinegar
1/3 cup white vinegar
1/3 cup olive oil
1/3 cup fresh cilantro, chopped
6 garlic cloves, minced
1 lime, juice of

1 tablespoon black peppercorns
1 tablespoon dried oregano
1 teaspoon salt

Steps:

  • Combine all ingredients and mix well. This marinade works best if it is made a day in advance so the flavors can blend. Marinate beef, lamb and pork for about 6 hours, poultry for 4 hours and fish for 1 hour.
  • My Note: We have steak grilled on the bbq once a week so I decided to experiment with different marinades, to taste the differences and ultimately choose a suitable marinade as a main choice. I wasnt sure about how this marinade was going to turn out, although I did think that the ingredient combinations were interesting enough to give this a go. Now on to the review: What I noticed was the aromatic citrus flavour of the meat, it was not overly strong in flavour but it was not subtle either. It had a definite taste and flavour. Now I like to eat my steaks medium rare with the centre pink and some blood, this worked actually quite well because the blood had a lemon with a subtle garlic kind of flavour to it which was quite refreshing. I would recommend this marinade to anyone who wants a refreshing, citrus, lemon + subtle garlic with hints of herb flavoured steak. I had sauce on the side but honestly the steak tasted better without it, the marinade was that good.
  • I combined the ingredients and only had them combine for 1/2 hour; marinate the pre-cut chicken breasts for 2 hours and the chicken was wonderfully tasty! The meat turned out so tasty thanks to this marinade! I didn't let the marinade sit at all before putting the steaks in, but I let the meat soak for 8-10 hours. I had made it to make beef tacos and almost decided to just eat the meat plain instead!

1 lb steak or 1 lb boneless skinless chicken
1/3 cup tomato sauce
1/3 cup olive oil
1/3 cup apple cider or 1/3 cup white vinegar
1/3 cup lime juice (of two limes)
2 tablespoons chili powder
1 teaspoon cumin
1 -1 1/2 teaspoon ground cayenne pepper
1 teaspoon onion powder
1 teaspoon garlic powder

Steps:

  • Mix together all the ingredients except the meat.
  • Pour the marinade over the meat. Turn the meat so that each piece is covered. Refrigerate for 2-3 hours.
