3 medium pears, peeled and sliced (about 3 cups)
2 medium tart apples, peeled and sliced (about 2 cups)
1/3 cup sugar-free caramel topping
OAT TOPPING:
1/4 cup quick-cooking oats
1/4 cup packed brown sugar
2 tablespoons all-purpose flour
3 tablespoons cold reduced-fat butter
1/4 cup chopped walnuts
Reduced-fat vanilla ice cream, optional

Steps:

  • Preheat oven to 375°. Mix sugar and allspice; toss with fruit. Place in an 8-in. square baking pan coated with cooking spray. Drizzle with caramel topping., Mix oats, brown sugar and flour. Cut in butter until crumbly; stir in walnuts. Sprinkle over filling., Bake until top is golden brown and fruit is tender, 40-45 minutes. Serve warm. If desired, top with ice cream.

1-1/4 cups all-purpose flour
1 cup quick-cooking oats
1 cup packed brown sugar
1 teaspoon ground cinnamon
1/2 cup butter, melted
20 caramels
1 tablespoon milk
3 medium pears, peeled and sliced
Whipped topping and additional cinnamon, optional

Steps:

  • In a small bowl, combine the flour, oats, brown sugar and cinnamon. Stir in butter (mixture will be crumbly); set aside 1 cup. Press the remaining mixture into an ungreased 8-in. square baking dish., In a small saucepan over low heat, cook and stir caramels and milk until caramels are melted and mixture is smooth. Remove from the heat. Arrange pears over crust; spoon caramel mixture over pears. Sprinkle with the reserved crumb mixture., Bake at 350° for 30-35 minutes or until the pears are tender and top is golden brown. Serve warm. Garnish with whipped topping and cinnamon if desired.

1/4 cup old-fashioned or quick-cooking oats
3 Tbsp. brown sugar
2 Tbsp. cold butter, cut up
15 vanilla wafers, coarsely crushed (about 2/3 cup)
4 large pears, peeled, cut into 1/2-inch-thick slices
12 KRAFT Caramels
1 Tbsp. milk
3/4 cup thawed COOL WHIP LITE Whipped Topping

Steps:

  • Heat oven to 375ºF.
  • Combine oats and sugar in medium bowl. Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs. Stir in wafer crumbs.
  • Place pears in 1-1/2-qt. casserole sprayed with cooking spray; top with crumb mixture.
  • Bake 35 to 40 min. or until pears are tender and topping is golden brown. Cool 15 min.
  • Meanwhile, microwave caramels and milk in small microwaveable bowl on HIGH 1 to 1-1/2 min. or until caramels are completely melted, stirring after 1 min.
  • Drizzle caramel sauce over dessert just before serving; top with COOL WHIP.

8 to 10 Bartlett pears, cored and sliced
1 teaspoon ground cinnamon
1 orange, zested and juiced
2 cups all-purpose flour
1 cup rolled oats or quick-cooking oatmeal
1 1/2 cups packed brown sugar
1 cup unsalted butter, room temperature
1/2 teaspoon kosher salt
1/2 cup chopped pecans
2 cups granulated sugar
1/4 cup good quality gold tequila
1 teaspoon ground cinnamon
1 orange, zested and juiced
1 cup half-and-half or heavy whipping cream

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large glass baking dish (preferably 8 by 11-inches), add the sliced pears, the cinnamon and juice of 1 orange. Toss to combine and set aside. In a large bowl, combine the orange zest, flour, oats, sugar, butter, salt, and pecans. Using a pastry cutter, 2 knives or, your hands, mix the ingredients until they resemble crumbly peas. Sprinkle the mixture over the pears and bake for 35 to 45 minutes or until the pears are al dente and the crisp is golden brown.
  • While the crisp is baking, prepare the caramel. In a heavy-bottomed saucepan over medium-high heat, combine the sugar, tequila, cinnamon, orange zest and orange juice. Bring to a boil, stirring constantly until golden brown, about 10 to 15 minutes. Remove the pot from the heat and slowly add the half-and-half or cream. The mixture will boil up as the cool dairy meets the hot sugar, so hold the pot away from you and take care not to add too much cold liquid at once. Keep the caramel warm over low heat until ready to serve.
  • To serve, spoon the warm crisp onto serving plates and top with several tablespoons of the caramel. Remaining caramel can be brought to the table for guests who might enjoy a little extra or stored in the refrigerator for up to 2 weeks.

1 cup heavy whipping cream
1 tablespoon vanilla
4 pounds about 8 medium ripe pears, peeled, cored and diced (see note)
3 tablespoons fresh lemon juice
3 tablespoons all-purpose flour
1/2 teaspoon cinnamon
1 cup packed light brown sugar
1 cup all-purpose flour
1 cup old-fashioned rolled oats
1 1/2 teaspoons cinnamon
1/2 teaspoon salt
3/4 cup salted butter (cut into pieces)
Vanilla Ice Cream

Steps:

  • For the caramel sauce, in a medium heavy-bottomed saucepan, combine the butter, sugar, salt and cream. Melt over low heat. Once all ingredients are melted and combined, increase the heat to medium and bring the mixture to a boil. Boil for 10 minutes. There's no need to stir but watch the heat - if it seems as though the mixture might be burning on the bottom (which can often happen if you are using a pan that isn't heavy-bottomed), reduce the heat. Remove from the heat and stir in the vanilla. Set aside to cool slightly (the caramel sauce can be made up to a week in advance - if using it in the recipe, warm slightly before adding to the pears).
  • Preheat the oven to 350 degrees F. Lightly grease a 8 1/2-inch by 12-inch pan with cooking spray (I know that's a random size that I happen to have - if you don't have that size, use something close like a 9X13-inch pan).
  • Toss the pears in a large bowl with the lemon juice, flour and cinnamon. Pour 1 cup of the caramel sauce over the pears and stir to combine well. Pour the mixture into the prepared pan.
  • For the topping, in a medium bowl, whisk together the brown sugar, flour, oats, cinnamon, and salt. Toss the pieces of butter in with the ingredients and use a pastry blender, two knives, your fingers, or anything else to cut the butter in until the mixture is crumbly. Spread the topping evenly over the pears.
  • Bake the crisp until the edges are bubbling and the top has deepened in color, 45-50 minutes. Remove from the oven and let cool for about 30 minutes. The crisp can be served warm or at room temperature.
  • Serve with vanilla ice cream and remaining caramel sauce.
