Vegetable oil, for deep-frying
1/2 cup all-purpose flour
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon smoked paprika
1 teaspoon kosher salt
3/4 cup beer
1 large russet potato (about 3/4 pound)

Steps:

  • Fill a heavy Dutch oven outfitted with a deep-fry thermometer halfway up with oil. Heat the oil to 375 degrees F.
  • Whisk together the flour, chili powder, garlic powder, smoked paprika, salt and beer in a large bowl, until a thin batter forms.
  • Cut the fries into a curly shape using a curly-fry cutter.
  • In batches, dredge the potatoes in the batter, and then fry them until crisp, 6 to 7 minutes; use tongs to separate the potatoes while they're in the oil, so they don't stick together.) Drain the fries on a paper-towel-lined baking sheet and sprinkle with salt before serving.

Watch with amazement as one little zucchini morphs into a giant platter of fries that rivals any fairground food. Change up the batter by using a beer with more pronounced hops (like an IPA), if you like.

1/2 pound zucchini (1 to 2 small to medium zucchini)
1 1/2 cups all-purpose flour
One 12- ounce lager-style beer
1 teaspoon lemon zest
Kosher salt
Vegetable oil, for frying

Steps:

  • Use the widest setting on a vegetable spiral slicer and turn the zucchini into ribbons. Stop every couple of turns to cut the ribbons into 2 to3-inch pieces.
  • Whisk together the flour, beer, lemon zest and 1 teaspoon salt in a medium bowl.
  • Heat about 2 inches of oil in a large Dutch oven over medium heat. Attach the deep fat fry thermometer and bring the oil to 375 degrees F. Line a baking sheet with a double layer of paper towels and keep it nearby.
  • Working one small handful at a time, add the zucchini curls to the beer batter and use tongs to toss and coat (like tossing spaghetti in sauce!). Pick up the battered curls a few at a time with the tongs and let as much excess batter drip off as possible. Being careful of the hot oil, drop the battered zucchini into the hot oil. Use a second pair of tongs or a slotted spoon to turn and help move the zucchini around, separating the pieces as best you can while they fry. Fry until golden brown on both sides, 2 to 3 minutes total. Transfer to the paper-towel lined baking sheet. Continue to fry in small batches. Serve hot (you can reheat in a 325 degrees F oven if needed).

1 1/2 tablespoons vegetable oil
1 cup flour
1/2 teaspoon pepper
1/4 teaspoon garlic salt
2/3 cup beer
2 egg whites
2 cups dry breadcrumbs
1/2 cup fresh parsley, chopped
1 1/2 lbs firm white fish fillets, grouper, catfish or tilapia, cut into 4 x 1 inch strips
cooking spray

Steps:

  • Preheat oven to 450°F.
  • Coat the bottom of a jelly roll or baking pan with vegetable oil.
  • Combine flour, pepper, and garlic salt in a large bowl.
  • Add beer and stir well.
  • Beat egg whites until stiff peaks form.
  • Gently fold egg whites into flour mixture.
  • Combine breadcrumbs and parsley in a shallow dish.
  • Dip one fish strip into the flour mixture and then dredge in the breadcrumb mixture. Place on the prepared baking sheet.
  • Repeat with the remaining fish strips.
  • Lightly coat strips with cooking spray.
  • Bake in preheated oven for 15 minutes or until the fish flakes easily with a fork.
  • Remove from oven.
  • Preheat broiler.
  • Broil the fish strips 1 minute or until tops are lightly browned.

1 cup flour
1/2 teaspoon seasoning salt (such as Lawry's)
1/2 teaspoon paprika
1/2 teaspoon garlic powder
0.5 (8 ounce) bottle light beer or 0.5 (8 ounce) can beer
1/4 cup water
1 1/2 lbs white fish (such as cod, haddock, halibut)
cornstarch, for dusting

Steps:

  • Put flour, seasoning salt, garlic powder and paprika into a large bowl and whisk to combine.
  • Add beer and 1/4 cup water and whisk to make a smooth batter.
  • Pour the oil into a large heavy pot to a depth of 2" and heat over medium high heat until temperature registers 350 F on a deep fry thermometer.
  • Working in batches, dust the fish with cornstarch lightly, dip the fish into the batter, shaking off some of the excess, and fry, turning occasionally, until cooked through and deep golden brown, about 5 minutes. Transfer the fried fish to a rack to drain.

A snazzy way to play with avocados *UPDATE* Some have said it's kinda mild and I agree. I came up with this originally for a cpl. fambly members who like it that way. BUT, I just now (02/24/2012) added the creole seasoning to help perk it up a bit. I hope this helps some of ya'll to enjoy it more and for those that like it mild just kinda ignore the creole addition. Have a good day peeps.

2 garlic cloves, chopped finely
2 california avocados
1 1/2 teaspoons tony chachere's creole seasoning (optional)

Steps:

  • To make beer batter, whisk together beer, Tony's seasoning, flour, paprika, and garlic until well blended.
